WORCESTERSHIRE AND ORANGE-GLAZED BABY BACK RIBS



Worcestershire and Orange-Glazed Baby Back Ribs image

Number Of Ingredients 7

2/3 cup honey
1/2 cup fresh orange juice
6 tablespoons Worcestershire sauce
2 tablespoons minced orange peel (orange part only)
1 tablespoon minced garlic
1 tablespoon soy sauce
3 3/4 pounds baby back pork ribs

Steps:

  • Whisk first 6 ingredients in medium bowl to blend. Place ribs in single layer in 13x9x2-inch glass dish. Pour marinade over ribs, turning to coat both sides. Cover and refrigerate overnight.
  • Preheat oven to 350°F. Pour marinade from ribs into small saucepan. Boil marinade until reduced to 1 1/4 cups, about 7 minutes. Line large roasting pan with foil. Arrange ribs, rounded side up, in single layer in prepared pan. Season ribs with salt and pepper. Bake 10 minutes. Brush both sides of ribs generously with marinade. Bake ribs until glazed and tender, basting top of ribs frequently, about 40 minutes. Cut ribs between bones into individual ribs.
  • Meanwhile, prepare barbecue (medium-high heat) or maintain oven temperature. Grill or bake ribs until deep brown, turning frequently, about 10 minutes. Serve hot.

4 pounds pork baby back ribs
1 teaspoon garlic powder
1 teaspoon seasoned salt
1 teaspoon pepper
1 medium onion, sliced
1 cup ketchup
1 cup chili sauce
1/4 cup packed brown sugar
1 tablespoon dried minced onion
1 tablespoon liquid smoke, optional
1 tablespoon molasses

Steps:

  • Place ribs bone side down in a large roasting pan. Combine garlic powder, seasoned salt and pepper; sprinkle over ribs. Top with sliced onion. Cover tightly and bake at 350° for 1 hour., In a large bowl, combine the remaining ingredients. Drain fat from pan; discard sliced onion. Brush ribs with half of barbecue sauce. , Cover and bake 30-60 minutes longer or until ribs are tender. Serve with remaining sauce.

1 cup orange juice
4 garlic cloves, pressed
2 teaspoons grated orange peel
1/2 teaspoon ground allspice
1/2 teaspoon dried thyme, crumbled
2 pounds baby back pork ribs (about 2 slabs)
1/4 cup maple syrup

Steps:

  • Combine first 5 ingredients in large baking dish. Add ribs and turn to coat. Cover and chill 6 hours or overnight.
  • Prepare barbecue (medium-high heat). Remove ribs from marinade and season with salt and pepper. Grill until cooked through, turning occasionally, approximately 25 minutes.
  • Meanwhile, place marinade in heavy small saucepan. Add maple syrup and boil until reduced to 1/4 cup, about 18 minutes. Brush ribs with glaze. Grill ribs 1 minute longer and serve.

CITRUS GLAZED RIBS

This recipe is such a wonderful change from ribs with thick BBQ sauce. This is perfect for a hot summer day with a side of pineapple coleslaw and homemade baked beans.

4 lbs pork ribs
1 -2 tablespoon celery salt
1 teaspoon pepper
2 tablespoons cornstarch
2 tablespoons brown sugar
1/2 teaspoon salt
2 cups orange juice
2 tablespoons lime juice
1 teaspoon lime peel, finely shredded
1 teaspoon lemon peel, finely shredded
1 tablespoon of fresh mint, snipped

Steps:

  • Place ribs in a large roasting pan (DO NOT cut into smaller pieces; I use a large jelly roll pan with a large metal cooling rack on top).
  • Sprinkle with celery salt and freshly ground pepper.
  • Cover tightly with aluminum foil and bake for approximately 3 hours at 275 degrees until tender. Try against all temptation not to peek!
  • Meanwhile, for the sauce, combine the cornstarch, brown sugar and salt. Stir in the lime juice and orange juice, cook and stir over medium heat until thick.
  • Remove from heat and stir in the mint and lemon and lime peel.
  • Remove ribs from oven and brush with some of the sauce.
  • Finally move ribs to the grill to finish cooking and give them that wonderful "I've been grilled all day long" color. Cook for about 10 minutes on each side over an open grill at medium heat.
  • Baste several times with the citrus sauce while grilling.

4 pounds country-style pork ribs
1/2 teaspoon salt
1 1/2 cups fresh orange juice
1/2 cup soy sauce
2 tablespoons sugar
2 tablespoons finely chopped peeled fresh ginger
1 tablespoon minced garlic (3 cloves)
1/2 teaspoon coarsely ground black pepper
Special Equipment
an 11- by 17-inch flameproof roasting pan

Steps:

  • Put oven rack in middle position and preheat oven to 325°F.
  • Sprinkle ribs evenly with salt.
  • Bring orange juice, soy sauce, sugar, ginger, garlic, and pepper to a boil in roasting pan over moderately high heat, stirring until sugar is dissolved. Add ribs in 1 layer using tongs, turning to coat, and cover pan tightly with foil.
  • Braise ribs in oven until very tender, about 2 hours. (If making ahead, see cooks' note, below.)
  • Before serving:
  • Reduce oven temperature to 200°F.
  • Transfer ribs to a baking dish, arranging them in 1 layer, and keep warm in oven.
  • Skim fat from cooking liquid if desired, then make glaze by boiling liquid, uncovered, stirring occasionally, until syrupy and reduced to about 3/4 cup, about 15 minutes. Brush glaze generously on ribs.

2 lbs country-style boneless pork ribs
2 slices onions, separated into rings
1 garlic clove, minced
1/2 cup chopped green pepper
1/2 cup orange marmalade
2 tablespoons cider vinegar
3 tablespoons brown sugar
2 tablespoons cornstarch
1 tablespoon grated ginger

Steps:

  • Spray a 3 or 4 quart slow cooker with cooking spray; place ribs, onions and garlic in cooker.
  • Cover; cook on low setting for 8 to 9 hours.
  • About 10 minutes before serving, remove ribs from slow cooker; place on serving platter and cover to keep warm.
  • In 2 cup microwave safe measuring cup, combine all sauce ingredients; mix well.
  • Stir in 3/4 cup juices from slow cooker; discard remaining juices.
  • Microwave sauce on high for 2 to 2 1/2 minutes or until mixture boils and thickens, stirring once halfway through cooking.
  • Pour sauce over ribs. To make them a bit sticky, I do it one of two ways depending on time. You can either drain all the grease from the crock pot and add the ribs and the sauce back to it, then cook on high uncovered for about another hour or if pressed for time, you can transfer the sauce covered ribs to a shallow baking pan and caramelize under the broiler, basting frequently.
  • (I can personally think of all sorts of things I might try adding to this, but until I have tried them out, I will wait to post them lol. Let me know how it turns out!).

2 (3-pound) sides pork spare ribs
1 tablespoon Irvine Spices Roasted Garlic Pepper Seasoning
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon lemon pepper
2 teaspoons salt
1/2 cup honey
1/2 cup brown sugar

Steps:

  • Rinse spare ribs and dry with paper towels. Prepare a rub by combining Roasted Garlic Pepper Seasoning, garlic powder, onion powder, lemon pepper, and salt in a small bowl and rubbing over entire surface of spare ribs. Follow manufacturer's instructions for the smoker. General rule of thumb is to maintain a temperature range of 255 to 300 degrees F (indirect heat), and smoke for 1 to 1 1/2 hours per pound of meat (probably about 4 1/2 hours or so for sides of pork spare ribs). Towards the end of the smoking time, combine the honey and brown sugar in a small bowl and spread on the spare ribs.
  • Serve family style.
