SPARKLING MINT & LEMON JULEPS



Sparkling mint & lemon juleps image

A sparkling wine cocktail to start a lovely evening

Number Of Ingredients 4

85g golden caster sugar
4 tbsp fresh lemon juice
1 bottle of chilled, sparkling wine (Cava is a good choice)
20g/1oz pack fresh mint

Steps:

  • Put the sugar and lemon juice in a small pan and heat gently to dissolve the sugar. Simmer for 2 minutes to make a syrup. Remove from the heat and leave to cool. This can be made in advance and kept in the fridge for up to a week.
  • To serve, pour the lemon syrup into 6 champagne flutes or tall glasses, top up each glass with the chilled sparkling wine, then stir quickly to mix before serving with mint sprigs tucked in the top.

5 mint leaves + a sprig of mint for garnish
1 tablespoon + 1 teaspoon bourbon
1 tablespoon + 1 teaspoon lime juice, plus lime slices for garnish
2½ teaspoons maple syrup
handful of ice
¼ cup 14 Hands Brut

Steps:

  • In a jar, combine the mint, bourbon, lime juice, maple syrup and stir. Pour into an 8 ounce julep glass filled with ice and top it off with the sparkling wine. Garnish with more lime slices and mint leaves.

1 cup sugar
12 strips lemon zest (from 2 lemons)
6 fresh mint leaves, plus sprig for garnish
Crushed ice
2 ounces bourbon, such as Bulleit

Steps:

  • Lemon Simple Syrup: Heat sugar, 1 cup water, and lemon zest in a small saucepan over high, stirring occasionally, until sugar dissolves. Remove from heat; let cool 20 minutes. Remove zest; let cool completely. Syrup can be refrigerated up to 1 week. (Makes 1 1/2 cups.)
  • Cocktail: In the bottom of a julep cup, muddle mint leaves with 1 tablespoon syrup for a few seconds until mint starts to break down. Add bourbon and fill cup with ice; stir until well chilled. Top with more ice and garnish with mint sprig.

Strain mixture through a fine-mesh sieve, pressing on berries to release juices. Discard solids. You should have about 1/2 cup blackberry syrup.
  • Place 2 tablespoons blackberry syrup in each julep cup. Add 1 tablespoon lemon juice and 6 mint leaves to each cup. Muddle the mint leaves into the syrup in each cup just until lightly crushed (don't overdo it, or the mint will become bitter).
  • Add 1/3 cup (about 2.5 ounces) bourbon to each cup and fill with crushed ice. Stir until the cup starts to look frosty on the outside. Add additional ice to the cup to fill. Serve, garnished with mint leaves, curled lemon peel, and additional berries, if desired.

  • This recipe makes enough to fill 8 mint julep cups or 1 pitcher. Set aside 1/3 of the mint leaves. Take the remaining 2/3 of the leaves (1.5 ounces) and roughly chop. You should end up with around 2 cups chopped mint. Place in a saucepan along with the sugar and water. Whisk over medium heat and bring to a simmer, dissolving the sugar. Let the mixture simmer for 5 minutes, then remove from heat. Let the mint steep in the liquid until it returns to room temperature. Strain the mint liquid into a pitcher and chill.
  • When ready to serve add the remaining mint sprigs to the pitcher, reserving 8 sprigs for garnishing the cups. Stir in lemon juice and bourbon.
  • Fill 8 chilled mint julep cups with crushed ice. Pour a little over 1/3 cup of the mint lemon bourbon mixture into each cup. Top off the cups with club soda (about 2/3 cup each) and garnish each with a sprig of fresh mint. Topping off the cups individually in this way will help the club soda retain its refreshing sparkle. Alternatively, if you would rather not deal with making each drink separately, fill the pitcher with ice and fresh mint, then top off the pitcher with the club soda just before serving.
