I love this sauce on gingerbread or fresh fruit, especially strawberries. It is also good on pound cake and ice cream.

Number Of Ingredients 7

1/2 cup sugar
4 teaspoons cornstarch
1 cup boiling water
1/4 cup fresh lemon juice
2 tablespoons butter
1 grated lemon, rind of
1 pinch salt

Steps:

  • Mix sugar and cornstarch in a small saucepan.
  • Stir in boiling water and lemon juice.
  • Bring to a boil, stirring constantly.
  • Boil 3 minutes until clear and thick.
  • Remove from heat and stir in butter, lemon rind and salt.

1-1/2 cups graham cracker crumbs
14 tablespoons butter, melted ,divided
1-1/4 cups sugar, divided
1/2 gallon vanilla ice cream, softened
1 quart lime sherbet, softened
2 large eggs, lightly beaten
1/4 cup lemon juice

Steps:

  • In a large bowl, combine the cracker crumbs, 7 tablespoons butter and 1/4 cup sugar. Press into an ungreased 13x9-in. dish; freeze until firm. In a large bowl, combine ice cream and sherbet; pour over the crust. Freeze until firm., In a heavy saucepan, combine the eggs and remaining sugar. Stir in the lemon juice and remaining butter. Cook and stir until mixture reaches 160° and coats the back of a spoon. Transfer to a bowl; refrigerate until cooled., Spread over ice cream mixture. Cover and freeze for 3 hours or overnight. May be frozen for up to 2 months. , Just before serving, remove from the freezer and cut into squares.

1/4 teaspoon kosher salt
1 cup boiling water
1 tablespoon lemon zest
2 tablespoons fresh lemon juice
1 tablespoon cold butter, cut into small pieces

Steps:

  • Gather the ingredients.
  • In a saucepan, combine sugar, cornstarch, and kosher salt. Add boiling water and whisk to blend.
  • Place pan over medium heat and cook, stirring constantly until mixture is thick and clear.
  • Stir lemon zest and lemon juice into sauce.
  • Whisk butter into sauce, a little at a time.
  • Serve sauce warm over dessert, pound cake, pancakes , or bread pudding . Enjoy.

  • In the bowl of an electric mixer, beat the egg whites until opaque and firm but not stiff or dry. Pour the butter mixture into the egg whites and fold together until thoroughly incorporated and no streaks of egg whites remain.
  • Coat a 1.5 or 2 quart dish with cooking spray and pour the pudding into the dish. Place the dish inside a larger baking pan and transfer to the preheated oven. Fill the baking pan halfway with hot water. Bake the pudding for 40-50 minutes, or until the top is well set.
  • For the glaze, combine the lemon curd, lime juice and milk in a small bowl. Whisk together until consistent. If the mixture is too thick to stir together, heat it in the microwave for 20-30 seconds and stir again. Pour the glaze over the warm baked pudding and smooth it with the back of a spoon. Top with zests, if using, and fresh raspberries.
