Categories     Baking

Time 1h

Number Of Ingredients 15

1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1 Tbsp lemon zest
1/2 tsp salt
1/2 cup unsalted butter (room temperature )
1 cup granulated sugar
2 large eggs (room temperature)
1 tsp vanilla extract
2 Tbsp lemon juice (about 1/2 lemon)
1/2 cup buttermilk (see below for substitution)
1/4 cup lemon juice (about 1 lemon)
3 Tbsp powdered sugar
1 cup powdered sugar (sifted )
1.5 Tbsp lemon juice
1 Tbsp milk

Steps:

  • Preheat oven to 350°F (177°C). Grease a 9x5-inch (or 8x4-inch) loaf pan.
  • In a medium bowl combine the flour, baking powder, lemon zest, and salt. Set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment (or using an electric mixer), cream the butter and sugar together at medium-high speed until pale and fluffy, about 4-6 minutes. Scrape the sides of the bowl as needed.
  • With the mixer running on low-speed, add the eggs one at a time, then beat in the vanilla extract and lemon juice. Beat on medium-high speed until combined.
  • With the mixer on low, add about one-third of the flour mixture and mix until almost combined, then add half the buttermilk and mix until just combined. Repeat with another third of flour mixture and then the last half of the buttermilk, ending with the last third of the flour. Beat until just incorporated.
  • Scrape the batter into the prepared loaf pan and bake for 45-55 minutes until the cake is golden brown and a toothpick comes out mostly clean with only a couple moist crumbs. Baking times vary, so keep an eye on yours.
  • Let the cake cool for about 15 minutes in the pan. Stir together the lemon juice and confectioners' sugar for the lemon syrup. Carefully invert the loaf pan, and transfer the cake to a cooling rack, then brush the syrup on the cake while it's still warm. Allow cake to cool completely.
  • When the cake is cooled, combine all the icing ingredients, start with 1 tbsp lemon juice and milk and add the remaining lemon juice as needed. The icing should be thick and not runny. Pour icing over cake and let dry before serving.

LEMON MAGIC CAKE

Lemon Magic Cake image

Lemon Magic Cake - One simple batter that transforms into a 3 layer cake - pure magic. The ever popular magic cake, now in lemon flavor!

Provided by Joanna Cismaru

Categories     Dessert

Time 1h25m

Number Of Ingredients 9

4 eggs (at room temperature, separate yolks from whites)
1 teaspoon vanilla extract
3/4 cup sugar
1/2 cup butter (unsalted, melted)
3/4 cup all-purpose flour
1 3/4 cup milk (lukewarm)
1/4 cup lemon juice (freshly squeezed)
2 tablespoon lemon zest
powdered sugar ( for dusting cake)

Steps:

  • Preheat oven to 325 F degrees. Grease a 8 inch x 8 inch baking dish or line it with parchment paper.
  • Separate eggs and add the egg whites to a mixer and mix until egg whites are stiff. Place egg whites in a bowl and set aside.
  • Beat the egg yolks with the sugar until light. Add butter and vanilla extract and continue beating for another minute or two after which you can add the flour and mix it in until fully incorporated.
  • Add lemon juice and lemon zest then slowly start adding the milk and beat until everything is well mixed together. Add the egg whites, a third at a time and gently fold them in using a spatula or a whisk, repeat until all egg whites are folded in, but there should still be white bits of egg whites floating in the batter.
  • Pour batter into baking dish and bake for 40 to 70 minutes or until the top is lightly golden and the cake is firm to the touch. The baking time could vary greatly depending on the oven, so take a peek at around 40 minutes and see how it looks.
  • Sprinkle some powdered sugar after cake has cooled.

HOMEMADE LEMON MARMALADE

Homemade Lemon Marmalade image

This lemon marmalade calls for just three ingredients. Although the recipe is simple, it takes time to carry out, but the end result is worth it.

Provided by Peggy Trowbridge Filippone

Categories     Brunch     Breakfast     Snack     Jam / Jelly

Time 5h55m

Yield 48

Number Of Ingredients 3

10 large lemons (washed)
4 cups water
4 cups sugar

Steps:

  • Gather the ingredients.
  • Using a vegetable peeler, remove the yellow part of the lemon peel in strips. Cut strips into 1 x 1/8-inch pieces.
  • With a knife, cut off any remaining white membrane, or pith, from peeled lemons.
  • Cut peeled lemons crosswise into 1/4-inch-thick slices.
  • In a heavy, non-aluminum 5-quart kettle or Dutch oven , combine lemon peel, sliced fruit, and water. Cover and refrigerate for 3 to 4 hours.
  • Place lemon mixture over high heat and bring to a boil, stirring frequently.
  • Reduce heat to low; cover and simmer, stirring occasionally, until lemon mixture is soft, about 1 hour.
  • Add sugar to lemon mixture and increase heat to medium-high; stir until sugar dissolves.
  • Heat to boiling and reduce heat just so mixture boils gently. Boil uncovered, stirring frequently, until a candy thermometer registers 220 F, or 45 to 60 minutes have passed, and mixture has thickened.
  • Prepare 3 (1-pint) canning jars with their lids and bands for processing, following manufacturer's directions.
  • Spoon marmalade into hot jars, leaving 1/4-inch space at the top of the jars.
  • Wipe jar rims clean. Seal with lids and bands.
  • Process jars in a boiling water bath for 15 minutes.
  • Cool jars on a wire rack. Label and store in a cool, dry place.

LEMON CAKES

Lemon Cakes image

In the "A Song of Ice and Fire" book series (later known on television as "Game of Thrones"), George R.R. Martin devotes a lot of ink to lemon cakes, a favorite of the Lady of Winterfell Sansa Stark. The cakes have since become a pop culture totem for fans of the series. This recipe is inspired by a version found in "A Feast of Ice and Fire: The Official Game of Thrones Companion Cookbook" by Chelsea Monroe-Cassel and Sariann Lehrer. You don't need to be a fan of "Game of Thrones" to love these cookielike treats, which are dense in texture, bright in flavor and boast a tart-sweet lemon glaze. The cakes are easy to throw together for a potluck or to satisfy a teatime craving.

Time 40m

Yield About 32 cookies

Number Of Ingredients 7

1 2/3 cups/226 grams all-purpose flour
3/4 cup/170 grams granulated sugar
6 tablespoons/85 grams salted butter
2 lemons
1 large egg
2 large egg yolks
1/3 cup/41 grams confectioners' sugar

Steps:

  • Heat oven to 350 degrees. Line 2 baking sheets with parchment paper.
  • In a large bowl, combine the flour and granulated sugar. Cut in the butter with a pastry blender or two knives to form crumbs with some pebbly bits, then zest the lemons directly into the bowl. In another small bowl, combine the egg and egg yolks. Squeeze 1 tablespoon juice from a lemon and mix into the eggs. Pour the egg mixture into the flour mixture, and gently stir until the dough comes together.
  • Roll the dough into 1-inch balls and space 2 inches apart on the prepared sheets. Bake, 1 sheet at a time, until the tops look just set and dry, 12 to 13 minutes. Cool completely on the sheets.
  • Place the confectioners' sugar in a small bowl. Squeeze 1 1/2 teaspoons juice from a lemon, and stir into the confectioners' sugar until smooth and the consistency of icing. Add more lemon juice if needed. Drizzle over the cooled cookies. Let stand until set.

  • Preheat the oven to 325°F (163°C). Line the bottom and sides of a 9×13 baking pan* with parchment paper, leaving an overhang on the sides to lift the finished bars out (makes cutting easier!). Set aside.
  • Mix the melted butter, sugar, vanilla extract, and salt together in a medium bowl. Add the flour and stir to completely combine. The dough will be thick. Press firmly into prepared pan, making sure the layer of crust is nice and even. Bake for 20-22 minutes or until the edges are lightly browned. Remove from the oven. Using a fork, poke holes all over the top of the warm crust (not all the way through the crust). A new step I swear by, this helps the filling stick and holds the crust in place. Set aside until step 4.
  • Sift the sugar and flour together in a large bowl. Whisk in the eggs, then the lemon juice until completely combined.
  • Pour filling over warm crust. Bake the bars for 22-26 minutes or until the center is relatively set and no longer jiggles. (Give the pan a light tap with an oven mitt to test.) Remove bars from the oven and cool completely at room temperature. I usually cool them for about 2 hours at room temperature, then stick in the refrigerator for 1-2 more hours until pretty chilled. I recommend serving chilled.

  • Cover a 9x13-in metal baking pan with heavy-duty aluminum foil (see note below). Push the foil neatly into the corners and up the sides of the pan, using two pieces if necessary to ensure that the foil overlaps all edges (the overhang will help removal from the pan). Spray the foiled pan with nonstick cooking spray.
  • Place the flour, corn starch, salt and Confectioners' sugar in the bowl of a food processor fitted with the blade attachment and mix for a few seconds. Add the butter and mix to blend until the mixture resembles coarse meal, 10 to 15 seconds. Sprinkle the mixture into the prepared pan and press firmly with your fingers into an even layer, building up a thin 3/4-inch edge around the sides (this keeps the filling from spilling beneath the crust). Refrigerate for 30 minutes or freeze for 15 minutes.
