LEFTOVER TURKEY NOODLE CASSEROLE

This Turkey Noodle Casserole is an easy and delicious way to use up leftover Thanksgiving turkey. Turkey and pasta mixed in a cream sauce with carrots, celery and onions.

Number Of Ingredients 15

1 pound pasta, cooked according to package instructions for al dente
4 tbsp unsalted butter
2 tbsp white all-purpose flour
1/2 cup heavy cream
1 cup yellow onions, chopped small
1 cup carrots, peeled and sliced thin
1 cup celery, chopped small
1/2 tsp salt
1 tsp poultry seasoning
2 cups turkey stalk
1 10.5oz can condensed cream of mushroom soup
1 14.75oz can cream style corn
3 cups leftover turkey, cut into bite sized pieces
1/2 cup peas
1/3 cup italian style bread crumbs

Steps:

  • Set cooked pasta aside in a large bowl
  • Heat the butter in a large skillet over medium heat
  • When butter is melted, add flour
  • Working with a wooden spoon, dissolve the flour into the butter
  • Slowly add the heavy cream, whisking until it forms a roux
  • Add in the onions, carrots and celery
  • Sauté until the vegetables start to soften
  • Pour in the turkey stalk as needed while you are sautéing to keep the roux creamy
  • Season with salt and poultry seasoning
  • Add any remaining turkey stalk, the cream of mushroom soup and cream style corn, mix to combine
  • Bring to a boil, boil for 3-5 minutes
  • Pour the sauce over the pasta
  • Add the turkey and peas, mix
  • Pour the pasta into a large greased baking dish or casserole pan
  • Sprinkle the bread crumbs on top
  • Put in the oven under the broiler for 1-2 minutes to brown the bread crumbs

1 (12 ounce) package egg noodles
1 (10 ounce) package frozen peas, thawed
2 cups diced cooked turkey
2 tablespoons salted butter
1 (8 ounce) package sliced mushrooms
½ medium onion, chopped
2 cloves garlic, chopped
1 (10.5 ounce) can condensed cream of mushroom soup
1 ¼ cups leftover turkey gravy
½ cup milk
½ teaspoon curry powder
½ teaspoon poultry seasoning
salt to taste
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 2 1/2-quart baking dish.
  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.
  • At the same time, melt butter in a saucepan over medium heat. Add mushrooms, onion, and garlic; saute until tender, 5 to 7 minutes. Add condensed soup, leftover gravy, milk, curry powder, poultry seasoning, and salt; cook and stir until well blended and hot, about 5 minutes.
  • Combine cooked egg noodles, turkey, and peas in the prepared baking dish. Pour hot soup mixture over top and sprinkle with Cheddar cheese.
  • Bake in the preheated oven until hot and bubbly, 25 to 30 minutes.

2 cups cubed cooked turkey
1 can (15 ounces) whole baby corn, drained and cut into 1/2-inch pieces
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup shredded cheddar cheese
1 cup chopped celery
1 cup chow mein noodles, divided
1/2 cup sliced fresh mushrooms
1/2 cup slivered almonds, divided
1/4 cup chopped green pepper

Steps:

  • In a large bowl, combine the turkey, corn and soup. Stir in the cheese, celery, 1/4 cup noodles, mushrooms, 1/4 cup almonds and green pepper. Pour into a greased 2-qt. baking dish., Cover and bake at 350° for 30 minutes. Uncover; sprinkle with remaining noodles and almonds. Bake 10-15 minutes longer or until heated through.

A 1950 newspaper clipping I found in my great great aunt Jessie's collection. Very basic and easy method of using up that leftover turkey. Prep time includes cooking the noodles but not the turkey!

4 ounces medium egg noodles, cooked
1 1/2 cups turkey, sliced
3 tablespoons butter
1 tablespoon onion, minced
3 tablespoons flour
1/2 teaspoon salt
1 pinch pepper
1/8 teaspoon prepared mustard
1 cup milk
3 ounces sliced mushrooms (canned)
1 can pimiento
2 tablespoons sherry wine
1/2 teaspoon Kitchen Bouquet

Steps:

  • Cook noodles until barely tender in boiling salted water.
  • Drain well and place in shallow greased baking dish.
  • Arrange turkey over noodles.
  • Melt butter and add onion, cooking for a minute.
  • Add in the rest of the ingredients and mix lightly then pour over the turkey and noodles.
  • Bake in a moderate oven at 350 degrees until lightly browned (about 20 minutes).

This has been a tradition with our family for many years to make with leftover turkey for Thanksgiving or you can use anytime and use chicken instead. When I originally got this recipe I felt that the sauce ingredients were not enough and always double the sauce. So if you find that the sauce is too much then just cut the ingredients in half, which is the original recipe! Also, I have never used the minced pimiento. Enjoy!

Number Of Ingredients 12

1/2 cup butter
1/2 cup sifted flour
2 cups chicken broth
2 cups milk
2 chicken bouillon cubes
1 1/2 teaspoons salt
1/2 teaspoon pepper
1/4 cup minced pimiento (optional)
2 -3 cups bite-sized cooked turkey or 2 -3 cups chicken meat
1 (12 ounce) package egg noodles, cooked by pkg. directions and drained
1 (10 ounce) package frozen mixed vegetables, cooked by pkg. directions and drained
1 cup soft white bread crumbs mixed with 3 tablespoons melted butter

Steps:

  • Preheat oven to 350°F
  • For sauce melt butter in a large saucepan over moderate heat and blend in flour using a whisk; slowly whisk in broth and milk, add bouillon cubes, salt and pepper, and heat, stirring until mixture thickens, using your whisk.
  • Remove from heat, mix in all remaining ingredients except topping, in an extra large bowl.
  • Spoon into a buttered 13x9 dish or a buttered 2-quart casserole dish.
  • Sprinkle top with topping mix and bake uncovered for 30 minutes.
  • If desired top with chow mein noodles instead of topping. Scatter over casserole for last 5 minutes of baking.
