LEFTOVER STUFFING (DRESSING) CROQUETTES RECIPE

Number Of Ingredients 8

Leftover Turkey Dressing (about 3 cups)
Approximately 1 cup chicken stock, turkey stock or water (If needed).
1 onion, diced
2 cups greens (collard, mustard, turnip, kale, whatever you have around.), chopped.
1/2 cup cooked ham, diced
1 to 1-1/2 cups leftover turkey gravy
Olive oil and butter, for cooking.
Salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees.
  • Pour stock over leftover dressing until it is wet enough to form into patties (Depending on your dressing, stock may not be necessary at all, but I needed about 1/2 cup for mine.) Press stuffing into balls approximately the size of your palm, arrange on a cookie sheet. Cover with damp paper towels and set aside.
  • Bring 4 quarts of water to a boil. Add greens and boil for approximately 10 minutes. Drain well.
  • Heat 2 Tbsp olive oil and 2 Tbsp of butter in a skillet over medium heat. Add onions and cook, stirring often, until translucent. Add greens and cook, stirring frequently until greens are wilted and fragrant. Add ham and toss to heat through.
  • Reheat leftover turkey gravy.
  • Remove paper towels from stuffing patties and discard. Bake at 400 degrees until crisp on the outside. (About 10 minutes.)
  • Place dressing on a plate. Top with ham and greens. Pour gravy over the top. Serve with leftover ham or turkey.

2 large eggs, lightly beaten
2 tablespoons finely chopped onion
1/4 teaspoon pepper
2 cups leftover mashed potatoes
2 cups leftover chopped cooked turkey
2 cups leftover stuffing
2 tablespoons butter
2 tablespoons canola oil
Unsweetened applesauce, optional

Steps:

  • In a large bowl, whisk eggs, onion and pepper. Stir in potatoes, turkey and stuffing., In a large skillet, heat butter and oil over medium-high heat. Working in batches, drop potato mixture by 1/2 cupfuls into skillet; press to flatten slightly. Fry on each side until golden brown and heated through, 4-5 minutes. Drain on paper towels. If desired, serve with applesauce.

2 cups leftover mashed potatoes
2 cups leftover stuffing
2 cups leftover turkey, chopped
2 tablespoons butter
2 tablespoons oil, canola or vegetable

Steps:

  • Add eggs to a large bowl and beat, add onions and pepper
  • Stir in potatoes, stuffing and turkey
  • Add butter and oil to a large skillet and heat to medium heat
  • Scoop potato mixture with an ice cream scoop or spoon into heated skillet
  • Press down slightly with the back of a spatula
  • Fry on each side about 3 minutes or until golden brown
  • Drain on paper towel
  • Serve warm

2 c leftover sage dressing (or whatever kind you have)
all purpose flour
2 Tbsp butter or cooking oil

Steps:

  • 1. Shape leftover dressing into patties. If dressing is moist, you won't need to add anything--they should shape right up easily. If they are too dry to hold together, beat in an egg or a little milk.
  • 2. Coat the patties in flour. Heat butter or oil in a large skillet and add the patties, one at a time. Cook on one side over medium heat, about five or ten minutes. Turn patties once and cook on other side.
  • 3. When golden brown, remove to a paper towel to drain. Serve plain or with leftover gravy.
