YUMMY PORK NOODLE CASSEROLE
This is my Mom's pork noodle casserole. The added sour cream gives it a little twist on the usual version. The added red pepper and corn give it color and flavor. You can add and subtract any vegetables in this versatile recipe. This is one of my favorite comfort food recipes.

Steps:
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the noodles have cooked through, but are still firm to the bite, about 5 minutes. Drain well in a colander set in the sink.
- Preheat an oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with cooking spray.
- Melt the butter in a skillet over medium heat. Stir in the onion, celery, carrots, and red bell pepper; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the noodles, cream of chicken soup, sour cream, Cheddar cheese, corn, and cooked pork, then season with salt and black pepper. Transfer mixture into the prepared baking dish. Sprinkle bread crumbs on top.
- Bake in the preheated oven until bubbly, 30 to 35 minutes.

PORK AND MASHED POTATO CASSEROLE
Steps:
- Heat butter in a skillet over medium-low heat; add onion and sauté until tender, about 2 minutes. Stir in flour until well blended and cooked, about 2 minutes. Add salt, poultry seasoning, and pepper.
- Add broth and water, stirring until thickened and bubbly. Add the diced pork and vegetables and heat through.
- Pour the pork mixture into a lightly greased 1 1/2-quart casserole dish.
- Spoon prepared mashed potatoes evenly over the mixture.
- Bake at 350 F for 25 to 35 minutes, topping with cheese for the last 5 minutes, if desired.

PULLED PORK CASSEROLE
Pulled pork is the gift that keeps on giving. This recipe uses up any leftover pulled pork and is baked in under 30 minutes.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Line the bottom of a casserole dish with 6 corn tortillas, so that the bottom and sides are covered.
- Add 1/2 of the pulled pork, 1/2 of the black beans, 1/2 of the cream cheese, 1/2 of the cilantro, 1/2 cup of salsa, 1/3 of the cooked rice, and 3 tablespoons Mexican cheese blend. Cover with 4 corn tortillas. Repeat layering of the ingredients, finishing with the remaining Mexican cheese blend.
- Bake in the preheated oven until cheese is melted and bubbly, about 25 minutes.

- In a large skillet over medium high heat, add the olive oil. Heat until the oil slicks across the bottom of the pan and add the onion, celery and green pepper. Cook for 3-4 minutes until softened and slightly translucent. Add the garlic and continue to cook for another minute until fragrant.
- Add the butter to the pan and once it's melted, sprinkle on the flour. Stir to combine the butter, flour and vegetables until they are well coated and cook for one minute.
- Slowly stir in the chicken broth until completely combined. Add the milk and stir to combine. Continue stirring until mixture comes to a boil and cook for one minute. Remove from heat. Transfer 1 1/2 cups of sauce to a large bowl. Add shredded cheese to the remaining sauce in the saucepan and stir until melted. Set aside.
