DAD'S LIMA BEAN SOUP WITH HAM BONE
This was one of my father's favorite dishes, a staple of Depression-era cooking when fresh meat was scarce and soup stretched everything. Simmered until thick, with chunks of ham - even lima-bean-haters enjoy this hearty soup.

Steps:
- Place beans in a large pot; cover with 2 inches water. Bring to a boil. Remove from heat, cover, and let stand for 1 to 2 hours. Drain and rinse. Transfer beans to another container.
- Combine ham bone and 8 cups water in a large saucepan. Simmer over medium-low heat until remaining meat falls off the bone, about 2 hours. Remove and discard bone. Use a slotted spoon to transfer meat to a bowl.
- Heat oil in a skillet over medium heat. Add celery and onion; cook and stir until onion is translucent, 7 to 10 minutes. Add cooked ham bone meat, lima beans, and diced ham. Reduce heat and simmer, adding additional water as needed, until soup is thickened to desired consistency, about 90 minutes.
- Stir carrots, salt, pepper, and parsley into the soup. Let simmer until carrots are soft, about 30 minutes more.

EASY LEFTOVER HAM AND BEAN SOUP

Steps:
- Peel and chop the onion and carrots, and chop the red pepper and celery stalks.
- Add the stock to a pot together with the vegetables, and cover the pot with a lid.
- Leave to cook for about 15 minutes or until the the veggies are tender.
- Add the beans (drained and rinsed) and cooked ham, tomato puree, salt, pepper and thyme, and leave to cook for a further 5 minutes.
- Remove the pot from the heat and garnish with chopped parsley.

- In a large soup pot, heat olive oil. Add onion, celery and carrot and cook for about 5 minutes until onion is tender.
- Add garlic, ham, ham bone, parsnip, bay leaves and the broth. If you don't have a ham bone, just skip it. Bring to a boil and lower heat to medium. Let cook for about 30 minutes.
- Add rinsed beans, cumin, thyme and season with salt and pepper. Continue cooking for another 30 minutes.
- Remove ham bone, bay leaves and parsnip. Garnish with parsley and serve.

- In a large stock pot, add water, ham bone and pre-soaked beans. Bring to a boil, reduce heat and simmer until beans are close to soft. Remove bone and cut off remaining meat. Remove 1/3 of beans and mash with potato masher or food processor. Return ham and beans back to stock pot and add onion, carrots, celery, garlic powder, pepper and paprika. If you are using drippings from a previously cooked ham add those now. Simmer until vegetables are tender and serve.

- Freeze extra beans in a small container. This one is so easy! All I do is measure out an amount of beans equal to a typical can of beans, put them in a small freezer-safe resealable container designed to hold about a pint of food, and pop that container right in the freezer with a little masking tape label reminding me of what it is.

- n a large soup pot place the ham bone, bay leaves, garlic cloves and enough water to cover the bone (at least 20 cups). Bring to a boil and let it cook on a low rolling boil for 2 hours to create a nice broth. Some of the water will evaporate and there will probably be around 15 cups left. Remove the ham bone, garlic cloves and bay leaves from the pot and enough broth so that there is only 10 cups of broth left in the pot. Keep the remaining broth on hand in case it is needed to add to the soup (sometimes the barley and split peas absorb a lot of the broth and adding a bit more may be necessary).
- Add the carrots, onions, ham, white beans, black beans, split peas, and barley to the 10 cups of broth in the pot and bring it to a boil. Lower the heat so it is at a low rolling boil and cook for45-60 minutes. The split peas and barley will soak up a lot of the broth and get larger. During this cooking time, add more broth if it looks like too much is getting absorbed.
