THE SUPREME SHEPHERD'S PIE
This is a great way to breathe new life into your leftovers! Just add onions to your leftover roast beef, gravy, and mashed potatoes.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place roast beef in an even layer in bottom of a 2 quart casserole dish. Cover with sliced onions, then gravy. Spread mashed potatoes over top.
- Bake in preheated oven for 1 hour, until potatoes are browned.

LEFTOVER ESSENTIALS: CHEESY CHILI SHEPPERD'S PIE
During the Autumn/Winter seasons I make a lot of stews, chilies, casseroles, the lot. I freeze what is left and take it out when the fit takes me. As to chili, there are more things to do than just put it in a bowl and heat it up. This is an excellent way to use some leftover chili. We are talking about chili, cheese, and taters. What is not to like. So, you ready... Let's get into the kitchen.

- PREP/PREPARE
- I am using a ramekin that is 4.25 by 2 inches (10.8 by 5cm). You could, of course use any vessel you have handy.
- This recipe is designed to feed one hungry person; however, you could double or triple the ingredients, put it into a baking dish and feed several.
- Can I freeze this? This recipe can be assembled and frozen. When needed just defrost for an hour on the countertop and follow the baking directions as written.
- Gather your ingredients (mise en place).
- Set a rack in the middle position and preheat the oven to 400f (205c).
- Add the chili to the ovenproof vessel.
- Add the cheese.
- Add the taters on top.
- Place into the preheated oven, and cook until heated through, and the taters begin to brown, about 28 - 32 minutes. Then allow to rest for 6 - 10 minutes before serving.
- PLATE/PRESENT
- Serve while nice and hot. Enjoy.
- Keep the faith, and keep cooking.
CHILI CHEESE SHEPHERDS PIE
Easy to prepare, yet fancy enough to serve company!

- 1. Brown ground beef or turkey with the onion over medium-high heat until no longer pink. Add all but 1 teaspoon of the chili seasoning and mix well. Set remaining seasoning mix aside. Stir in the tomatoes, beans and corn. Cook and stir for 2 minutes, until heated through. Reduce heat to low and simmer while making potatoes. For potatoes: Bring water, salt and butter to a boil in a medium saucepan. Remove from heat and stir in milk and potato flakes. Stir in 1/2 cup of the shredded cheese. Place chili mixture into greased 2 quart casserole. Carefully spread mashed potatoes on top of chili. Top with remaining 1/2 cup cheese and reserved chili seasoning. Bake in 350 degree oven for 30 minutes.
- 2. *This is the 4 serving size amount of potatoes, which is how I wrote the recipe for the contest. I actually prefer it with more potatoes(the 6 serving amount). Just adjust the other potato ingredients according to the instructions on the box of potato flakes. Also, instant potatoes is something I rarely actually have on hand, so when I make this for us, I usually use real mashed potatoes.
SKILLET SHEPHERD'S PIE

- In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the corn, peas, ketchup, Worcestershire sauce and garlic. Reduce heat to medium-low; cover and cook for 5 minutes., Combine the cornstarch, bouillon and water until well blended; stir into beef mixture. Bring to a boil over medium heat; cook and stir until thickened, 2 minutes. Stir in sour cream and heat through (do not boil)., Spread mashed potatoes over the top; sprinkle with cheese. Cover and cook until potatoes are heated through and cheese is melted. Freeze option: Prepare beef mixture as directed but do not add sour cream. Freeze cooled meat mixture in a freezer container. To use, partially thaw in refrigerator overnight. Heat through in a large skillet, stirring occasionally and adding a little water if necessary. Stir in sour cream and proceed as directed.

CHILI SHEPHERD'S PIE RECIPE BY TASTY
Here's what you need: olive oil, small yellow onion, garlic, lean ground beef, McCormick® Original Chili Seasoning, tomato, tomato sauce, red kidney bean, kosher salt, shredded cheddar cheese, idaho potatoes, sour cream, unsalted butter, half & half, McCormick® Garlic Powder, ground white pepper, kosher salt

- Make the chili: In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until fragrant and softened, about 6 minutes. Add the ground beef and McCormick® Original Chili Seasoning, and stir with a wooden spoon to break up the ground beef into small pieces. Add the diced tomatoes and cook for 5 minutes, or until the beef is fully cooked through. Stir in the tomato sauce and salt, and cook for another 2 minutes, until thickened slightly. Add the canned kidney beans and mix until combined.
- Pour the ground beef mixture into a 9x13-inch baking dish, spreading evenly. Sprinkle the cheddar cheese on top.
- Make the mashed potatoes: Peel and quarter the potatoes. Place in a pot and cover with cold water by 1 inch. Bring to a boil over medium-high heat and cook until the potatoes are fork-tender, 20-30 minutes. Drain the potatoes and transfer to a large bowl.
- Add sour cream and melted butter to the bowl with the potatoes. Using an electric hand mixer on medium-low speed, whip the potatoes until smooth. Add the half-and-half, McCormick® Garlic Powder, white pepper, and salt, and mix on low speed until combined.
- Spread the mashed potatoes evenly over the chili.
- Turn the broiler on high. Broil the shepherd's pie for 10 minutes, or until the top is light golden brown. Serve warm.
