2 tablespoons butter or 2 tablespoons margarine
1/2 cup chopped onion
1 1/2 cups diced potatoes
3 cups cubed leftover roast beef
2 teaspoons Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1 cup milk
1/2 cup leftover gravy

Steps:

  • In large skillet, cook onion in butter until tender crisp.
  • Add remaining ingredients except milk and gravy.
  • Whisk milk and gravy together until smooth.
  • Add to skillet.
  • (If there is no leftover gravy, just increase milk to 1 1/2 cups.) Stir all together and bring to a boil.
  • Reduce heat and simmer, uncovered, for approximately 20 minutes or until potatoes are done.
  • The liquid should be absorbed.

2 medium onions, diced fine

2 cups moose or 2 cups venison

Steps:

  • Melt butter in a cast iron or other oven-proof skillet.
  • Brown potatoes and carrots on medium/high heat for 5 minutes.
  • Add onions and brown for 3 minutes more.
  • Place in a 350F oven for 20 minutes.

1 cup pearl onions (frozen)
1 (10-ounce) package peas and carrots (frozen, about 1 1/2 cups)
2 cups diced leftover roast beef (cooked, 1/4-inch to 1/2-inch dice)
1 cup beef gravy (homemade, canned, or made from dry mix)
1/2 cup sharp cheddar cheese (shredded)

Steps:

  • Gather the ingredients.
  • Position a rack in the center of the oven and heat to 350 F. Lightly grease a 1 1/2-quart to 2-quart casserole dish or spray it with nonstick cooking spray.
  • In a medium saucepan, cover the pearl onions and peas and carrots with water. Bring to a boil. Reduce the heat to low and simmer until the vegetables are mostly tender, about 3 minutes.
  • Drain the vegetables thoroughly and transfer them to a large bowl. Add the roast beef and gravy to the bowl of vegetables. Mix well.
  • Transfer the beef-vegetable mixture to the prepared casserole dish, spreading it out evenly. Top with shredded cheddar cheese.
  • Bake until the filling is bubbling and the cheese has melted, about 20 minutes.

This is another favorite way of mine to use up leftover pot roast.

2 c leftover pot roast, shredded
4 c russet potatoes, washed, soaked and shredded
1 green pepper, seeded and chopped
1 onion, sliced
garlic pwd, salt and pepper to taste
SERVE WITH:
**buttered bread, toast, or rolls
**eggs, opt
**also good with gravy, opt.

Steps:

  • 1. Scrub potatoes and cut in half. Place i a bowl of water and soak as long as possible before cooking. This will release a lot of starch. Cook in skillet or on griddle till browned.
  • 2. Chop or shred leftover roast. Slice onion and chop pepper. You can use bell, anaheim, jalapeno or poblano. Cook onion and bell pepper in a couple tablespoons of olive oil till tender, add in beef, stock and spices, stir till warmed. Mix hash browns in with beef mixture.
  • 3. Serve has over bread, toast or rolls with your favorite eggs.

2 cups 1/2-inch cubes roast beef
1 onion, finely chopped
1 green bell pepper, thinly sliced
½ cup sliced fresh mushrooms
1 tablespoon vegetable oil

Steps:

  • Place potatoes on a microwave-safe plate and prick skins with a fork. Cook in the microwave until slightly tender, 7 to 8 minutes. Cut into 1-inch cubes.
  • Combine potatoes, roast beef, onion, green bell pepper, and mushrooms in a bowl.
  • Preheat an electric skillet to 350 degrees F (175 degrees C). Coat with oil.
  • Spread potato mixture evenly in the skillet. Let cook, without stirring, until browned, about 5 minutes. Flip and continue cooking until second side is crisp, about 5 minutes more.
