POTATO LEEK SOUP WITH ITALIAN SAUSAGE



Potato Leek Soup with Italian Sausage image

A hearty and satisfying soup to keep you warm all winter long.

1 lb Italian sausage (, spicy or mild)
1 tablespoon olive oil
1 lb leeks (, white and light green parts only, chopped)
2 medium carrots (, chopped)
2 garlic cloves (, minced)
1 cup dry white wine (, see Notes)
4-5 cups chicken or vegetable broth
1 lb yukon or gold potatoes (, chopped)
1 bay leaf
2-3 sprigs fresh thyme (, stems removed)
Salt and pepper (, to taste)
1/2 cup milk or cream

Steps:

  • In a large pot brown sausage over medium high heat until cooked all the way through, about 8-10 minutes. Transfer sausage to a paper towel lined plate and set aside.
  • Add olive oil, leeks, and carrots and season with salt and pepper. Cook over medium heat until softened, about 5-7 minutes. Add garlic and cook for 1 minute more.
  • Add wine and bring to a boil. Simmer for 5 minutes until liquid is reduced by half.
  • Add the broth, potatoes, bay leaf, thyme, and more salt and pepper. Bring to boil and cook until potatoes are fork tender, about 20 minutes. Return the sausage to the pot and stir in the milk or cream. Serve with crusty bread, or as desired.
  • Store leftovers in the fridge for up to 5 days. The soup is even better the next day!

3 tablespoons butter
3 large leeks (white and pale green parts only), thinly sliced
2 1/4 cups (or more) water
2 cups canned chicken broth
1 bay leaf
1 cup polenta*
1/3 cup freshly grated Parmesan cheese
*Sold at Italian markets, natural foods stores and some supermarkets. If unavailable, substitute 1 cup regular yellow cornmeal, and cook leek-cornmeal mixture for about 15 minutes rather than 35 minutes.

Steps:

  • Melt 2 tablespoons butter in heavy large saucepan over medium heat. Add leeks; stir to coat. Cover and cook until leeks soften, stirring occasionally, about 10 minutes. Add 2 1/4 cups water, broth and bay leaf. Bring to boil. Gradually whisk in polenta. Reduce heat to medium-low and cook until mixture is thick and creamy, stirring often and thinning with more water if necessary, about 35 minutes.
  • Remove pan from heat. Discard bay leaf. Stir in remaining 1 tablespoon butter and Parmesan cheese. Season polenta to taste with salt and pepper. Divide polenta among plates.

Potato Leek Soup With Spicy Sausage & Cheese image

This is my favorite variation of potato leek soup. It's a bit elaborate, especially with the garnishes, but can easily be toned down. The steps to make the potato croutons to garnish are at the end. Also note that if you let potato-leek soup stand, it will thicken considerably. When you reheat it, just thin it out with milk.

1 1/4 lbs leeks
4 medium potatoes
3 stalks celery
2 -3 large garlic cloves
2 -3 spicy sausage links
5 tablespoons butter
5 1/2 cups light vegetable stock or 5 1/2 cups chicken stock
salt and pepper
ground coriander
1/4 cup cream
mild shredded cheese
fresh finely chopped parsley, and
scallion
sharp cheddar cheese or gouda cheese
1 -2 potato
paprika
cayenne pepper
salt
vegetable oil

Steps:

  • Cube the potatoes, and finely chop the leeks and celery. Mince the garlic. Cut the sausage into small pieces.
  • Melt 2 TBSP of the butter in your soup pot on low heat. First, add the garlic, cooking until fragrant.
  • Add the meat, cooking, but not browning. Then add the rest of the butter.
  • Add the vegetables and cook on low for about 10 minutes while stirring frequently. The butter should be absorbed, but the vegetables should not brown.
  • Add about three quarters of the stock (until the stock level just covers the vegetables), and simmer until everything is tender, about 15-20 minutes.
  • In a blender in a few batches, flash-puree the soup (you may need to use a second pot to pour the pureed soup into), and return it all to the pot. Add more stock to adjust the consistency if you need to.
  • Add the cream and small handful of mild cheese, and salt and pepper to taste. Then gradually add a few dashes of coriander until it tastes right.
  • To make the potato croutons for garnishing, use 1 or 2 potatoes, cut to small cubes, seasoned with lots of paprika and some cayenne pepper and salt, and fry in a generous amount of vegetable oil until crisp.
  • Serve in shallow soup bowls. Put the shredded or chunks of sharp cheese on top, along with a large spoonful of the parsley-scallion mix and the potato croutons. Stir up and enjoy!

This recipe comes from the Monday to Friday Cookbook by Michele Urvater. We really love the flavor of it, but find it is not substantial enough for dinner by itself. It is, however, excellent with ham (or grilled cheese) sandwiches. This could easily be turned into a vegetarian dish, as well, by substituting water or vegetable stock for the chicken stock.

1 medium onion
2 garlic cloves
1 (14 1/2 ounce) can Italian plum tomatoes
1 -2 tablespoon corn oil or 1 -2 tablespoon vegetable oil
6 cups chicken stock
10 ounces frozen corn kernels
4 ounces canned diced green chiles
1/4 cup fresh cilantro or 1/4 cup parsley
1/3 cup yellow cornmeal
salt and pepper
1 tablespoon lemon juice or 1 tablespoon lime juice
1/2 cup shredded cheddar cheese (optional)

Steps:

  • Chop the onion and mince the garlic. Core and finely chop the tomatoes, reserving the juices.
  • Heat oil in a large saucepan over medium heat. Add onion and saute 2 to 3 minutes.
  • Add the garlic, tomatoes, reserved juices, stock, corn and chiles. Bring liquid to a simmer, then cover the pot and cook gently over low heat for 15 minutes.
  • Meanwhile rinse and mince the cilantro (or parsley).
  • While whisking constantly, slowly drizzle the cornmeal into the simmering soup. Simmer gently, uncovered, until thickened, about 10 minutes. Make sure you occasionally stir the bottom of the pot to prevent the cornmeal from sticking.
  • Season soup to taste.
  • Right before serving, add lemon or lime juice, cilantro, and cheese (if you are using it.

I watched an episode of "Lydia's Italy" on PBS the other day and she made this deliciously comforting and simple soup using polenta. I made it and it will surely please your family (and your pocketbook). Enjoy!

3/4 cup yellow polenta
2 tablespoons all-purpose flour
3 cups hot chicken broth
2 garlic cloves, smashed
3 tablespoons butter
kosher salt, to taste
fresh ground black pepper, to taste
2 cups packed spinach leaves
parmesan cheese, grated (optional)
extra virgin olive oil (optional)

Steps:

  • 1. Tip: For a smooth and velvety soup like Lydia's, I pulsed my cornmeal in my food processor for about 20 seconds before starting the recipe. First, whisk the polenta and flour in a saucepan.
  • 2. Starting with 1 cup of broth, whisk the broth and polenta-flour mixture and remove any lumps. Add the butter and salt and stir.
  • 3. Continue adding broth while whisking and place on medium-high heat to bring to a boil. Lower to medium heat and simmer soup for 25 minutes. Stir gently.
  • 4. Add spinach to soup and stir. Continue cooking on medium-low heat for 10 minutes. If using, serve with grated parmesan cheese and a drizzle of olive oil. Enjoy.

Steps:

  • Heat the oil in a large saucepan over medium heat. Add the onion, carrot, leeks, garlic, salt, black pepper, and Aleppo pepper and cook, stirring, until the onion becomes translucent, 8 to 10 minutes. Add the sausage and cook, breaking it up into small pieces with a wooden spoon, until no longer pink, about 5 minutes.
  • Drain off the excess fat, leaving about 2 tablespoons in the pan. Stir in the cornmeal. Add the stock, stirring, and bring to a boil, then reduce the heat and simmer, covered, for 30 minutes, stirring occasionally.
  • Stir in the greens and cook for 15 minutes more, or until tender.
  • Ladle into bowls and garnish with grated Parmigiano.
