4 boneless skinless chicken breasts
1/3 cup onion, chopped
1 clove garlic, minced
1 tablespoon butter or 1 tablespoon margarine
2 teaspoons orange zest
1/2 cup orange juice
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/8 teaspoon allspice
2 tablespoons honey
1 cup couscous

Steps:

  • Rinse chicken and pat dry with paper towels.
  • Cook chicken, onion and garlic in the butter in a large skillet for about 6 minutes or until chicken is browned, turning once.
  • Add orange zest, orange juice and salt to skillet.
  • Bring to boil; reduce heat and simmer, covered, for 5 minutes.
  • Sprinkle cinnamon and all spice onto chicken.
  • Drizzle with honey.
  • Simmer uncovered for 5 to 7 minutes more or until chicken is tender and no longer pink.
  • Meanwhile, cook couscous according to package directions.
  • Top couscous with chicken and sauce before serving.

1 cup boiling water
1 teaspoon acacia honey
2 orange blossoms

Steps:

  • Divide orange blossom water between 2 tea cups. Add 1/2 cup boiling water to each cup and stir. Stir 1/2 teaspoon honey into each cup. Float a piece of orange blossom in each cup. Serve hot.

Lebanese Tea image

A light and refreshing version of iced tea that is served at all the local Greek and Lebanese restaurants. I was quite surprised to discover that this recipe actually originated in the New Orleans / Baton Rouge area. The pine nuts don't add anything to the flavor of the drink, so I usually leave them off. I buy my rose water from a local middle eastern grocery store - you can also find it at world market and whole foods, or online. You can adjust the amounts of sugar, rose water, and lemon juice to suit your tastes.

1 gallon water, divided
2 family sized tea bags
1/3 cup lemon juice
3/4 cup sugar
2 teaspoons rose water
1 tablespoon pine nuts (optional)

Steps:

  • Bring 2 quarts of water to a boil. Place tea bags in a gallon sized pitcher, and pour the boiling water over. Steep for 5-7 minutes.
  • Remove tea bags, and stir in the sugar, lemon juice, and rose water. Stir until sugar is thoroughly dissolved.
  • Top with water until you have 1 gallon of tea. Chill, and serve over ice, with a few pine nuts sprinkled in each glass if desired. I usually leave off the nuts since they don't add to the flavor.

  • Prepare the mint yogurt sauce. Place the yogurt, garlic, mint, and salt in a small bowl. Mix with a fork until well-combined. Cover and refrigerate for now.
  • If you like, prepare Lebanese rice according to this recipe and set aside. Prepare Mediterranean salad according to this recipe; cover and refrigerate for now.
  • Arrange the chicken breasts in a single layer in the bottom of a heavy cooking pot or Dutch oven. Sprinkle with salt. Add apple cider vinegar, bay leaves, cinnamon sticks, cardamom, and cloves. Pour in enough cold water to cover the chicken by 1 inch or so.
  • Place the pot of chicken on the stove-top over medium-high heat. Bring to a boil. Skim off the white foam that collects on the surface of the water. Turn heat to low, cover and cook another 15-20 minutes or until the chicken is cooked through registering an internal temperature of 165 degrees F.

  • Baklava. Everyone in my family knows baklava is my favorite. My aunt always made it for family events, saying it was special for me. Baklava is basically layers of filo dough, nuts, and syrup.
  • Lebanese Rice Pudding. Lebanese rice pudding is hit or miss for most people. My uncle loves it, but my mom thinks it tastes like perfume. I say you should try it at least once to form your own opinion.
  • Kanafeh/Knefe. This is a dessert that I actually tried for the first time while I was at work because there was some left over from an event (I work on my campus at a place called the Center for Global Engagement).
  • Maamoul. This is a Middle Eastern cookie with a nut filling that's typically made on religious holidays. Nuts are a popular ingredient in Lebanese desserts, in case you hadn't noticed.
  • Nammoura. This is a cake-like dessert that's made with yogurt and semolina flour, then soaked in a syrup. It's topped with almonds and is incredibly easy to make.
  • Atayef. Atayef are Middle Eastern-style pancakes that are stuffed with a cream filling and topped with nuts. If cooking intimidates you, you can start with this simple atayef recipe, although it may not be quite as authentic as the real thing.
  • Jazarieh. Jazarieh is a dessert that either has carrot slices or pumpkin preserves in it. This dessert also includes (unsurprisingly) nuts and a syrup.
  • Znoud El Sett. These are cream-filled pastries that are also soaked in a syrup. The name translates to "upper arms of the lady," which was referencing a specific woman that they were named after.
  • Mafrokeh. This pastry includes cream, nuts, and rosewater, among other ingredients. Although mafrokeh isn't difficult to make, it does take about two hours to prepare, so plan accordingly if you make it yourself.
  • Ayesh el Saraya. Ayesh el Saray tastes kind of like chilled French toast that's been topped with custard. It features syrup and rosewater and is fairly easy to make.
