LOW FAT NACHOS!

Had MAJOR craving for a bit of OLE! THIS recipe MADE MY DAY! LOW that is low fat, TRUE! Full of flavour without the extra added calorie or two :)

2 6 inch fat-free whole wheat pita bread
cooking spray
1 (425 g) can Mexican chili beans
1 tablespoon hot salsa
1 tablespoon low-fat sour cream
1/2 cup low-fat cheese

Steps:

  • Preheat oven 200°C.
  • On lightly sprayed tray, cut pita bread in triangles, spray top of pita and bake for about 10 minutes until crunchy.
  • On plate, arrange Mexibeans, Nacho Toppings Sauce***, cheese.
  • Heat in microwave for about 2 minutes until cheese melts.
  • Top with salsa, sour cream and jalapenos.
  • NOTE: Can heat Mexibeans in pan and Nacho Topping*** in another pan and place under broiler until cheese melts.
  • Serve with pita baked triangles.
  • Note: Can omit jalapenos.
  • Note: Guacamole, HEAPS more of sour cream only adds to the calories not necessarily to more enjoyment!
  • ENJOY!
  • NOTE: Above recipe would not let me include "Fat-free Nachos
  • Topping".

2 cups tortilla chips, baked
1 cup refried beans no fat added
1 cup salsa chunky
1/4 cup Cheddar cheese sharp, grated
1/4 cup olives sliced
1/4 cup avocado diced
1/3 cup green onion diced
1/2 cup green chili pepper or yellow pepper, diced
1/2 cup tomato fresh, diced

Steps:

  • In microwave or two separate saucepans warm refried beans and salsa separately. Place chips on a dinner plate or a heavy paper plate. Top with beans, salsa, cheese, and all other ingredients. Serve with fruit and water for a kid-pleasing Water, Veggie, Grain, Protein, and Fruit complete meal! *These 32 percent-fat "B" Choice nachos are a much healthier choice than your average "D" Choice--50 to 80 percent-fat nachos. They fit nicely into a day that has an overall fat percentage of less than 20 percent. **Ask your grocer if he already stocks, or can order in baked tortilla chips. Guiltless Gourmet and Tostitos are excellent brands. My family prefers the Cool Ranch-flavored Baked Tostitos.

  • Preheat oven to 424 degrees F. Lightly spray a rimmed baking sheet with nonstick cooking spray or line with aluminum foil.
  • Heat olive oil in a large nonstick skillet over medium high heat until shimmering. Add ground beef. Cook, breaking up beef with a wooden spoon as it cooks, until beef browns and no pink spots remain, about 3-5 minutes. Add onions, cook until soft, about two minutes. Add garlic. Cook for one minute. (Drain excess fat if needed.) Stir in chili powder.
