LEAH'S EASY FOOD PROCESSOR SALSA

If you like salsa that doesn't have that thick texture like Pace- that's more like restaurant salsa- this one is for you. The heat can easily be adjusted by changing the quantity/type of peppers. I would say that following the recipe would give you a "medium" heat salsa.

Number Of Ingredients 10

3 -4 ripe roma tomatoes, quartered and seeded
2 (16 ounce) cans plain diced tomatoes
2 -3 garlic cloves, whole
2 jalapeno peppers, quartered and seeded
1 medium onion, cut into 1-inch chunks
2 limes, juice of
1/4 cup fresh cilantro, stems removed, whole
1/4 teaspoon fresh ground pepper
1/8-1/4 teaspoon red pepper flakes
1/8 teaspoon salt

Steps:

  • Put garlic cloves and jalapeño pieces in food processor (a blender can be used but will put a lot of air into the salsa and will not be able to be served immediately), pulse a few time until coarsely chopped.
  • Place roma tomatoes in a microwaveable dish and microwave for 1 minute or so on high, then remove skins.
  • Add diced tomatoes, lime juice, pepper, salt, and red pepper flakes to food processor, pulse 3 or 4 times until everything looks well mixed.
  • Add onion, roma tomatoes, and cilantro, and pulse just a few times until onion is at desire consistency. Adding onions at the end is VERY important, otherwise they will become pureed and make a gross texture for the salsa.
  • If you want to remove the remaining metallic taste of the fresh tomato, cook over medium low heat in a non-reactive pot for about 15-20 minutes.
  • For best flavor, refrigerate over night to let flavors mingle.

4 garlic cloves
3 large jalapenos, cut into 1-inch pieces
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1 dash cumin
1/8 teaspoon cayenne pepper
3 drops maggi seasoning (optional)
1 lime, juice of
1 (28 ounce) can diced tomatoes, drained
1 (14 ounce) can diced tomatoes, drained
1 (8 ounce) can Mexican tomato sauce (spicy)
4 roma tomatoes
1 medium yellow onion, diced into 3/4 inch chunks
1/2 cup fresh cilantro, stems removed

Steps:

  • Cut stem end off of Roma Tomatoes and make an "X" in the skin on the other end and place in a microwave safe bowl, add a couple tablespoons of water and cover with plastic wrap. Microwave on high about 2 minutes, until tomatoes are softened and skins come off easily. Discard skins and set aside.
  • Put garlic, jalepeno, spices, Maggi Seasoning and lime juice in the work bowl of a 6 cup food processor with the chopping blade, and pulse a couple times until the garlic and jalepeno are minced.
  • Add canned tomatoes and pulse about 3 times.
  • Add Roma tomatoes, onion, and cilantro and pulse until the onion is at desirable size- 1/4 inch or so.

My best friend introduced me to making salsa instead of buying it from the store. This salsa can be made in 5 minutes, but is much better when refrigerated overnight. The ingredients are all healthy and it freezes well.

1/4 teaspoon salt
1 (16 ounce) can crushed tomatoes (or fresh tomatoes if you have them)
1 small white onion
1 jalapeno
1 bunch cilantro
2 limes, juice of

Steps:

  • Take all of the ingredients and put them in the blender for a fast salsa that rocks or you can dice each item to the size you prefer and combine them.

1/2 red onion, coarsely chopped
1 jalapeno, coarsley chopped (or hotter peppers depending on personal taste)
3/4 cup cilantro leaf
1/2 cup lemon juice
3/4 teaspoon chili lime seasoning

Steps:

  • In food processor add onion, jalapeno, and cilantro leaves. Process until chopped evenly.
  • Add can of tomatoes, seasoning, and lemon juice. Process until blended to choice.
  • Allow to sit overnight before serving.

EASY "FRESH" SALSA

I asked for this recipe at a party 20 years ago, and I've been making it ever since! I always feel a little guilty when people ask for the recipe, because it's so easy!!! The addition of the cilantro makes it great, and fresh tasting. Don't use regular stewed tomatoes; it just won't taste nearly as good.

2 (14 ounce) cans Mexican-style stewed tomatoes, mostly drained
1/4 cup fresh cilantro (or more)
1/4 of an onion
5 slices nacho-style jalapenos
5 dashes cumin powder
5 dashes chili powder
salt, to taste

Steps:

  • Put all ingredients in a blender and chop until fairly smooth.
  • Store in a jar in the refrigerator for up to two weeks.
