Another recipe for using the old white wine worcestershire sauce (now called chicken marinade) this recipe actually came with others from the bottle when the white wine worcestershire first came out and it is still my favorite

1/3 cup lea & perrins chicken marinade
1 lb boneless skinless chicken breast, pounded thin
2 -3 tablespoons butter

Steps:

  • in bowl put chicken and white wine sauce turning to coat well.
  • heat butter in a skillet.
  • lift chicken out of bowl and place in skillet saute until lightly browned and cooked though about 3 minutes per side.
  • remove chicken to a plater.
  • pour sauce from the bowl into the skillet and cook over medium heat about 2 minutes stirring constantly.
  • pour over chicken and serve.

CHICKEN WITH WHITE WINE & FRESH HERB SAUCE

This a wonderful classical French dish, with a simple delicious butter sauce flavoured with fresh herbs and made from the reduced wine cooking liquid. Tips: Use any of the following chopped fresh herbs and herb mixtures; 3 Tbsp. basil or parsley, 3 Tbsp. parsley and 2 tsp. tarragon, oregano, rosemary, thyme, or marjoram; 1 Tbsp. each parsley, chives & chervil and 2 tsp. tarragon. If fresh hers are unavailable, use one-third of the amount dried herbs instead.

1 1/2 lbs chicken pieces (with skin)
1/4 teaspoon pepper
1/8 teaspoon salt
2 tablespoons olive oil
1 cup white wine
1 garlic clove, minced
1/4 cup butter, cut into pieces

Steps:

  • Season chicken with pepper and salt. In skillet, heat oil over medium-high heat; brown chicken all over; about 8 minutes. Drain fat from pan.
  • Add wine; cover; and simmer over medium heat for about 8 minutes or until juices run clear when chicken is pierced. Transfer chicken to serving plate; cover and keep warm.
  • Add minced garlic to pan; bring to boil and boil until liquid is reduced to 1/4 cup. Reduce heat to medium-low. Whisk in butter, piece by piece. Stir in herbs of choice. Pour over chicken.

CLASSIC FRENCH CHICKEN IN WHITE WINE SAUCE

2 tablespoons butter
1 (4 lb) roasting chickens, cut into 6 pieces (or 3-1/2 to 4 lb. chicken pieces)
salt & freshly ground black pepper
1 medium onion, finely chopped
1 medium carrot, finely chopped
1/2 celery rib, finely chopped
2 ounces prosciutto or 2 ounces country ham, finely chopped
3/4 cup dry white wine
3/4 cup chicken stock
3 tablespoons heavy cream (at room temperature)
chopped fresh flat-leaf parsley

Steps:

  • Melt the butter in a large skillet over medium heat.
  • Season the chicken with salt and pepper and cook it in the skillet on the skin side to brown it and to render the fat from the skin, about 15 minutes. Turn the chicken over and cook on the bone side for about 5 minutes. Remove and reserve the chicken.
  • Pour off all but 2 Tbs of the fat from the skillet.
  • Add the onion, carrot, celery, and prosciutto or ham and sauté until the onion is browned and the vegetables are softened, 8 to 10 minutes.
  • Add the wine and chicken stock to the skillet and stir to combine with vegetables.
  • Put the chicken back into the skillet. Bring the liquid to a boil, reduce to a simmer, cover the skillet with a lid, and simmer the chicken in the sauce until cooked through, 20 to 25 minutes.
  • Remove the chicken from the skillet, turn the heat to high and bring the liquid to a boil. Reduce the volume of liquid by half, about 5 minutes (or 6 to 7 minutes if you want a thicker sauce). Add the cream, stir to combine, and remove the skillet from the heat.
  • Transfer the chicken to wide soup plates; taste and season the sauce with salt and pepper if necessary and spoon it over the chicken. Sprinkle with the chopped parsley.

When I make these, I use Lea & Perrins White Wine Worcestershire Sauce For Chicken instead of regular Worcestershire sauce.

3 dozen chicken wings (1st and 2nd wing pieces)
12 fluid ounces louisiana hot sauce
6 tablespoons unsalted butter
3 tablespoons white vinegar
1 tablespoon Worcestershire sauce
1 1/4 teaspoons cayenne pepper
1/4 teaspoon garlic powder
1 1/2 tablespoons flour

Steps:

  • Bake or deep-fry the wings until they are done.
  • Mix all the sauce ingredients except flour in a saucepan.
  • Cook over medium-low heat.
  • When warm, add flour to thicken sauce; stir frequently.
  • When sauce is thick, cover bottom of 9 x 13-inch baking dish with sauce.
  • Mix the rest of the sauce with wings and place in baking dish.
  • Bake at 300°F for about 20 minutes or until warm.
  • Serve with celery sticks and blue cheese dressing.
  • These are great reheated, but be warned that they get hotter each time!
