LAZY MAN'S BREAD
This recipe is a quick bread that takes less than 45 minutes to make from start to finish. . .including the twenty minutes it takes to preheat the oven! I have tweaked the recipe by adding a little something extra depending on what I was going to be serving with the bread. I have added a bit a garlic to serve with chili or a bit...

Steps:
- Combine starter into water, stirring until starter is fully dispersed.
- Combine salt with flour in the bowl of a stand mixer with a dough hook attachment, turn on low speed, and slowly add water / starter mixture (see video "Lazy Mixing and Kneading").
- After fully combined, set mixer to medium speed and allow it to knead dough for 3 - 5 minutes until dough is forming a relatively smooth ball around the hook.
- Transfer dough into a mixing bowl or rising bucket and let sit until dough just starts to visibly rise (~ 6 - 8 hours). At this point you may optionally want to perform one or two rounds of stretching and folding (separated by half an hour) to build some strength / tension in the dough. I usually do this, but it's not a hard requirement.
- Keep an eye on the rising dough, checking in with it at least once an hour.
- When it has risen to twice its initial volume (or whenever you feel the bulk proofing has come to a good ending point), prepare a lined proofing basket by flouring the inside and set it aside.
- Moisten a work surface with a small amount of water, moisten your hands, and turn the dough out onto the moist work surface.
- Build tension and shape the dough into your preferred shape (boule, batard, oblong) and then transfer into the proofing basket, cover and place in the refrigerator for 12 - 16 hours. The length of this cold second proof can be stretched to suit your schedule. Shoot for a minimum of 12 hours, but the maximum can be pretty long; 24, 36, maybe even 48 hours would probably be fine.
- When ready to bake, pre-heat oven and baking vessel to 450f.
- Transfer cold dough into pre-heated baking vessel* and score as you like.
- Cover and bake for 30 minutes at 450f.
- Reduce oven temperature to 375f, uncover and bake for an additional 25 minutes.

- Cook the rice according to the package directions. Preheat the oven to 350F and grease a 9x13 baking dish.
- Heat a large pan over medium-low heat. When the pan is hot add the bacon and let cook until it starts to become slightly crispy and most of the fat is rendered, around 7-9 minutes. Add the onions to the hot pan and cook 3-5 minutes until soft and translucent.
- Once the onions are cooked add in the beet greens and cook 3-4 minutes until wilted. Add the dill and the cooked rice. Mix to combine, season with salt and pepper, and transfer to the mixture to the prepared baking dish. Once the rice is evenly distributed in the pan drizzle the cream over top. Bake 20-30 minutes until the top is golden brown and the cream bubbles.

Steps:
- Preheat oven to 350°. Put 6 ovenproof dishes on a sheet pan and set them aside.
- Add Ritz and oyster crackers to a food processor. Pulse until it becomes crumbs. I like some texture, so I don't pulse it completely. Pour into a bowl and add melted butter and parsley. Mix until completely combined, set aside.
- Heat butter in a large saute pan over medium heat. When the butter has melted, add garlic and cook for 30 seconds. Add sherry and lemon. Season with salt and pepper.
- If using raw lobster meat, add meat and the juices to the pan cook until just until the lobster begins to firm up, about two to three minutes. Remove from heat.
- Divide the lobster and butter mixture evenly between the dishes and top with a generous amount of cracker topping.
- (If using cooked lobster, add lobster to dishes and prepare butter mixture as directed, and pour over cooked lobster.)
- Put the baking sheet in the oven for 10 to 15 minutes or until the lobster is hot and the topping is golden brown. Serve with lemon wedges and more parsley.

- If your kitchen is not warm, turn your oven to low. This is simply to warm your kitchen up a little bit (since it’s cool where we live).
- In your mixer bowl add warm water, honey and yeast. Stir a few times until honey dissolves. Once yeast starts foaming (5 minutes or so), add flour, melted coconut oil, and salt. Using dough hook, knead for 10 minutes on low/medium low. Leave your dough ball in the bowl and cover with a towel. Let rise for 30 minutes.
- After the first rise, lightly flour a surface and scoop your dough ball on it. Knead your lump of dough by hand a few times, until it forms a firm ball. Cover this ball of dough with a towel.
- Preheat oven to 400 degrees. If you have a pizza stone, make sure this is in the oven to warm up. Alternatively, you can use a cast iron skillet while the oven is preheating – as one reader had great luck with! (Note: We have only tested this recipe with a pizza stone.)
