BUSY-DAY PORK CHOPS
It was time to use or lose some pork chops I had in the fridge, so I dressed them in bread crumbs and Parmesan and baked them up. Necessity sure is the mother of invention, and in this case I invented an amazing healthy pork chop recipe. -Dee Maltby, Wayne, Ohio

- Preheat oven to 375°. Place milk in a shallow bowl. In another shallow bowl, toss bread crumbs with cheese and seasonings., Dip pork chops in milk, then coat with crumb mixture. Place on a baking sheet coated with cooking spray; lightly spritz chops with cooking spray., Bake 8-10 minutes on each side or until a thermometer reads 145°. Let stand 5 minutes before serving.

LAZY VEGETABLE PORK CHOP BAKE
When I am tired and want something DH likes and the clean up later is fast, I make this. Line your baking pan with foil. Serve with baked potato and salad. Simple but good. The apple butter does color the chops a very nice brown.

Steps:
- Preheat oven to 350 degrees.
- In cup, mix together apple butter and corn starch; set aside so cornstarch has a chance to dissolve.
- Put carrots, onion, raisins, dried apples, and garlic (if using) in a single layer in baking pan.
- Sprinkle on sage, lemon pepper and garlic powder (omit garlic powder if using fresh garlic).
- Put pork chops on top of vegetable mixture.
- Spread apple butter mixture onto pork chops.
- Cover and bake at 350* for 1 hour and 20 minutes.
- Uncover and bake 15 minutes longer, or until carrots are done and meat juices are clear.

LAZY COOK'S PORK CHOPS
Fast prep. and into the oven! Do take note that Sweet Thai Chilli Sauces do differ from one brand to the next: I have 3 brands at the moment and they are definitely not similar, and one is markedly hotter than the others. The Maille mustard should be available anywhere. This is a delicious, tangy sauce for pork, and thickens while baking. I find pork loin chops which are simply done in a pan are often hard -- but not when baked with this sauce. I cut most of the fat rind off and leave on only a strip of fat for juiciness.

- Heat oven to 325 deg F/160 deg Celsius.
- In a bowl, mix the chicken broth, honey, mustard, Thai sweet chilli sauce, ground ginger and black pepper. Whisk to mix well well. (You can eyeball the amounts, and when the sauce is mixed, taste it).
- Heat a film of oil in a pan.
- Brown the pork chops lightly on both sides, and remove to an oven dish.
- Sprinkle salt very sparingly over the chops.
- Ladle the sauce over the chops with a spoon.
- Bake open for about 45 minutes, turning chops over halfway through baking time.
- Nice with rice or mashed potatoes, and a fresh green vegetable.

Steps:
- 1. Season chops with above spices then brown in oil.
- 2. Transfer chops to a 9X13in. baking dish.Making sure chops are laying flat in pan.
- 3. Arrange potatoes and tomatoes over and around chops.
- 4. Add 2 cups of water to pan used for browning chops.Heat and stir to get all the goodies off bottom of pan.
- 5. Use this liquid to make the stuffing,omit butter. Take the extra liquid and pour over meat and veggies.
- 6. Spread stuffing over all meat and veggies. Cover and bake at 350* for 45 minutes.
LAZY DAY PORK CHOPS
Very simple and tasty, yet very lazy way to make pork chops or pork steaks. I make this about once a month or so. As often as my husband will let me get away with before he starts to complain. For pork steaks or more chops you might have to use an extra can of soup. I might be weird but I just love pork chops fixed this way! (Tastes better if the pork chop has some fat on it.)
