EASY LAZY LASAGNA

This incorporates all the flavors of lasagna, but it's easier because the ingredients are simply mixed together and baked.

1 cup wide egg noodles
½ pound ground beef
4 ounces bulk Italian sausage
1 ½ cups marinara sauce
½ cup cottage cheese
⅓ cup grated Parmesan cheese, divided
¼ teaspoon onion powder
¼ teaspoon garlic salt
¼ teaspoon Italian seasoning
½ cup grated mozzarella cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef and sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Pour marinara sauce into the meat. Stir in drained egg noodles, 2 tablespoons Parmesan cheese, onion powder, garlic salt, and Italian seasoning; mix until incorporated. Pour mixture into an 8-inch square casserole dish and top with mozzarella cheese and remaining Parmesan.
  • Bake in the preheated oven until cheese is golden brown, about 25 minutes.

LAZY-DAY OVERNIGHT LASAGNA

This is the lasagna recipe that I have used for years. I like the fact that you don't have to cook the noodles first. Found this in one of those cookbooks that you find at the check out stand. My recipe is getting tattered and worn so I thought I would post it here for safe keeping. Cooking time does not include setting overnight. I've posted the recipe to be gluten free, but you could easily use regular noodles in place of the brown rice lasagna.

1 lb lean ground beef (or mild Italian sausage)
1 (32 ounce) jar spaghetti sauce
1 cup water
15 ounces ricotta cheese
2 tablespoons fresh chives, chopped
1/2 teaspoon dried oregano
1 egg
8 ounces lasagna noodles, brown rice, uncooked
1 (16 ounce) package mozzarella cheese, sliced
2 tablespoons parmesan cheese, grated

Steps:

  • Brown ground beef in a large skillet; drain well.
  • Add spaghetti sauce and water and blend well; simmer 5 minutes.
  • In a medium bowl, combine ricotta, chives, oregano and egg and mix well.
  • In bottom of ungreased 13x9 baking dish or lasagna pan, spread 1 1/2 cups of meat sauce.
  • Top with half of the noodles, half of the ricotta cheese mixture and half of the mozzarella.
  • Repeat with remaining noodles, ricotta cheese mixture and mozzarella.
  • Top with remaining meat sauce.
  • Sprinkle with Parmesan cheese.
  • Cover and refrigerate overnight.
  • Heat oven to 350 degrees.
  • Uncover baking dish and bake for 50-60 minutes or until noodles are tender and casserole is bubbly.
  • Cover: let stand for 15 minutes before serving.

Here's a way to make cheesy lasagna without the fuss that's perfect for a dinner.

1 container (15 ounces) ricotta cheese
2 tablespoons grated Parmesan cheese
1 teaspoon Italian seasoning
1 jar (26 ounces) spaghetti sauce (3 cups)
8 uncooked lasagna noodles
1 bag (8 ounces) shredded mozzarella cheese (2 cups)

Steps:

  • Heat the oven to 350°. Put the ricotta cheese, Parmesan cheese and Italian seasoning in the bowl. Stir with the spoon until mixed.
  • Spoon 1 cup of the spaghetti sauce evenly over bottom of the baking dish. Top with 4 of the uncooked lasagna noodles.
  • Spread 1 cup of the ricotta cheese mixture over noodles, using the back of the spoon. Sprinkle with 1 cup of the mozzarella cheese.
  • Spread 1 cup of the spaghetti sauce over mozzarella cheese. Make more layers with 4 lasagna noodles, the rest of the ricotta cheese mixture and 1 cup spaghetti sauce. (Be sure the spaghetti sauce completely covers the noodles.) Sprinkle with the rest of the mozzarella cheese.
  • Bake 40 to 45 minutes or until lasagna is hot in center and cheese is melted. Use the pot holders to take pan out of oven it will be very hot and heavy. Let lasagna cool for 15 minutes. Cut into 4 rows by 2 rows, using the knife.

12 ounces lasagna noodles, uncooked
5 -6 cups spaghetti sauce
2 cups cream-style cottage cheese or 2 cups ricotta cheese
12 ounces mozzarella cheese (sliced or grated)
1/2 cup parmesan cheese, grated

Steps:

  • In two greased 10x6x2-inch baking dishes, make layers in the following order: half each noodles, cottage cheese, Mozzarella slices, spaghetti sauce, and sprinkled Parmesan cheese.
  • Repeat.
  • Make certain the dry noodles are completely covered by sauce.
  • Wrap pans completely with foil; label and freeze.
  • (To make this meal incredibly rich, add one 8-ounce package cream cheese.
  • Pinch off nickel-sized portions of cream cheese and plop evenly over lasagna just before adding the second layer of uncooked pasta.)
  • To Serve: To thaw, take meal from freezer at least 24 hours before serving.
  • Place in refrigerator.
  • Bake tightly covered at 350 degrees for about 45 minutes, or until edges are bubbly and center is hot.
  • Take cover off during final 10 minutes of cooking time.
  • Let stand 10 minutes before serving.

1 (38 ounce) bag italian-style meatballs, you will use 1/2 of bag (1/2 oz. size)
1 (26 ounce) bag cheese ravioli
2 (26 ounce) jars spaghetti sauce (your favorite)
1 (16 ounce) bag mozzarella cheese, shredded (can substitute Italian cheese blend)
salt and pepper

Steps:

  • Preheat oven to 375 degrees F. Have ready a 9- x 13-inch baking dish.
  • Thaw cheese ravioli in hot water for 1 minute. Thaw 36 meatballs. Crumble meatballs in small pieces using a fork or food processor.
  • Pour a thin layer of spaghetti sauce to over bottom of baking dish. Arrange 12 ravioli in a single layer over top of sauce. Sprinkle half of the crumbled meatballs over the ravioli. Sprinkle half the cheese over the meat.
  • Repeat process with a second layer of sauce, ravioli and meat. Add a thin layer of sauce over the top.
  • Bake for 45 minutes, covered. Uncover and sprinkle with rest of cheese. Bake uncovered for an additional 10-15 minutes. Let stand 5-10 minutes before serving.
  • Note: For a different flavor, substitute Sausage Meatballs.

1 (12 ounce) package wide egg noodles
1 (32 ounce) jar spaghetti sauce
1 (12 ounce) container cottage cheese
1/2 lb ground beef
1/2 lb Italian sausage
cheddar cheese

Steps:

  • Cook ground beef and sausage until browned.
  • Add spaghetti sauce and simmer a few minutes.
  • Meanwhile cook noodles according to package directions.
  • When noodles are done, drain and add to sauce mixture and mix well.
  • Pour half of the sauce and noodle mixture into a 12x9 glass baking dish.
  • Add cottage cheese and spread across mixture.
  • Add the remaining sauce mixture and top with cheddar cheese. Bake in a 350 degree over @ 20 to 25 minutes or until cheese is melted.

1 lb ground beef or 1 lb ground pork
1 (28 ounce) can of your favorite spaghetti sauce
8 -10 dry lasagna noodles
1 (8 ounce) container cottage cheese
2 cups mozzarella cheese, shredded
1/2 cup water
parmesan cheese

Steps:

  • Brown meat in skillet, add spaghetti sauce and heat through.
  • In 3 quart oblong pan spread 1/3 of meat mixture to cover bottom, top with 4-5 uncooked noodles, half the cottage cheese and one cup of the mozzarella.
  • Spread on 1/3 of meat mixture, remaining noodles, remaining cottage cheese, remaining cup of mozzarella, then top with the final 1/3 of the meat mixture.
  • Right before baking pour 1/2 cup of water around inside edges of the pan, cover and bake 45 minutes at 375 degrees.
  • Remove cover, sprinkle with desired amount of Parmesan, and bake 10 more minutes.
  • Let stand 10 minutes before cutting and serving.

3-1/2 cups spaghetti sauce
9 uncooked lasagna noodles

Steps:

  • In a large bowl, combine the first seven ingredients; set aside. In another bowl, combine the spaghetti sauce and beef; mix well. , Spoon a fourth of the meat sauce into a greased 13x9-in. baking dish. Top with three noodles and half of the cheese mixture; repeat layers once. Top with a fourth of the meat sauce, remaining noodles and remaining meat sauce. Pour water around edges. Sprinkle with Parmesan cheese. , Cover and bake at 375° for 45 minutes. Uncover and bake 15 minutes longer or until noodles are tender. Let stand 10 minutes before cutting.

1 lb hamburger, browned
3 (14 -15 ounce) cans crushed tomatoes
1 tablespoon italian seasoning
1 tablespoon garlic salt
4 cups mozzarella cheese
1/4 cup parmesan cheese (optional)

Steps:

  • In large skillet cook hamburger & drain. Stir in all cans of tomatoes & seasonings.In a 6 quart crock pot, cover the bottom with some of the sauce. Then place a layer of ravioli across the bottom, then a layer of mozzarella cheese. Continue these layers until all is used, ending with the meat sauce on top. Finish off with some mozzarella cheese and parmesan on top. Cook on low for 4 hours. Turn off & let sit about 15 minutes before you serve.
