This Crustless Quiche is made with just SIX ingredients and loaded with flavor! Perfect for an easy weeknight dinner or breakfast, make ahead and freezer friendly.

8 large eggs
3/4 cup low fat milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup chopped fresh spinach
1 cup shredded cheddar cheese
2 slices bacon (cooked and crumbled)
1 green onion (sliced)

Steps:

  • Preheat oven to 350 degrees and grease a 9" pie plate.
  • In a large liquid measuring cup or mixing bowl, whisk together eggs, milk, salt and pepper.
  • Stir in spinach, cheese, bacon and green onion.
  • Pour into prepared pie plate and bake for 35-45 minutes, until set through the centre.
  • Slice and serve.

This is a very simple, but delicious brunch casserole - almost like a crustless quiche. We had this for our Lazy Day New Years brunch (our guests come in pajamas and stay that way all day - hence the name). It's very colourful and quick to throw together, especially if the cheese is grated and broccoli is chopped the day before. Don't chop the tomatoes ahead of time though as they tend to get soggy and lose flavour if refrigerated.

2 cups broccoli, chopped
3 medium tomatoes, chopped
1 1/3 cups monterey jack cheese, grated
1/2 cup cheddar cheese, grated
1 1/2 cups milk
1/3 cup flour
4 eggs
1/2 teaspoon salt

Steps:

  • Preheat oven to 350°F.
  • Mix milk, flour and eggs well.
  • Add the remaining ingredients and pour into 8 X 8 greased baking dish.
  • Bake for 40-45 minutes.
  • Let sit 10 minutes before serving.

When I first served this wonderful brunch casserole at a family reunion a few years ago, I think I wrote out at least a dozen copies of the recipe! My husband and I enjoy country living in the beautiful Blue Ridge Mountains.

8 ounces day-old Italian bread or French bread, sliced
1 pound bulk pork sausage, cooked and crumbled
8 large eggs
2 cups milk
1/2 teaspoon pepper
8 ounces sliced Swiss cheese
1/4 cup minced fresh parsley

Steps:

  • Line a greased 13x9-in. baking dish with bread. Sprinkle with sausage. Beat the eggs, milk and pepper; pour over sausage. Press bread down with a spatula to absorb egg mixture. Top with cheese and parsley. , Bake, uncovered, at 350° for 30-35 minutes or until a knife inserted in the center comes out clean. Let stand for 5 minutes before cutting.

8 slices whole wheat bread
3/4 cup melted butter
2 cups chopped cooked ham
2 cups chopped cooked broccoli
2 cups cheddar cheese
4 eggs, beaten
2 cups milk
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Cube bread and toss with melted butter.
  • In a greased 9 X 13 casserole dish add half the bread cubes, half of the cheese, half of the broccoli, all of the ham.
  • Next add the rest of the broccoli, cheese, and bread cubes.
  • Beat eggs and milk together with salt and pepper then pour over casserole.
  • Refrigerate for 2 hours or over night.
  • Bake at 350°F for 1 hour.

1/4 c milk
1/2 small onion, diced
1/2 small pepper, any color, diced
1 small tomato, diced
1 bunch kale, chopped
1/2 c mushrooms, sliced
3 slice ham, cut into bite size
1/4 c cheese, (any) shredded
salt/pepper
1 tsp butter

Steps:

  • 1. pre heat oven to 350 degrees, combine all ingredients, minus the butter in a large bowl.
  • 2. butter a glass pie dish, pour mixture and bake for about 30 mins, or until eggs are set and top is golden brown.
  • 3. let rest 10 mins before slicing.
