BEEF VINDALOO ( THE REAL THING)



Beef Vindaloo ( the Real Thing) image

Hot, Hot, and aromatic. This recipe uses white wine vinegar and some sugar, and is unusual in that. This is a low fat version and therefore healthier than some recipes. You will need a grinder/blender or mortar and pestle to make this dish. Its a cracker. Ps. a glass of lager goes well with this.

2 lbs stewing beef, in 11/2-inch cubes
1 tablespoon cumin seed
5 dried red chilies
1 teaspoon peppercorn
1 teaspoon fenugreek seeds
6 green cardamom pods (seeds only)
1 teaspoon black mustard seeds
1/2 teaspoon salt
1 teaspoon demerara sugar
5 tablespoons white wine vinegar
2 tablespoons oil
1 medium onion, sliced
1 inch fresh ginger, chopped
2 garlic cloves, chopped
2 teaspoons ground coriander
1/2 teaspoon turmeric
1/2 pint warm water

Steps:

  • Grind together the cumin seeds, chillies, pepper corns, mustard seeds, fenugreek seeds, and cardamom seeds.
  • Add the salt, vinegar and sugar, to make a paste.
  • In a large pan heat half of the oil and fry the onions till golden, remove from the pan and drain. Add the cooked onions to the spice mix and blend again to make a thick paste.
  • Heat the remaining oil and fry the meat till just brown.Remove the meat with a slotted spoon and put aside.
  • To the pan add the ginger and garlic cook 2 minutes.
  • Add the ground coriander and turmeric, fry for 2 minutes.
  • Add the onions and spice paste and cook over low heat for 5 minutes.
  • Add the water and meat cover the pot and cook till the meat is tender.

1 kg gravy or chuck steak (or braising steak), cut into 2.5 cm cubes
3 tablespoons oil
2 cups chopped onions
3 garlic cloves, chopped
1/2 teaspoon ground turmeric (turmeric powder)
1 teaspoon red chili powder
2 tomatoes (medium), chopped
2 tablespoons tomato paste (purée)
2 tablespoons cider vinegar (see notes)
1 teaspoon white sugar
1 cup water
Salt to taste
Coriander (cilantro) leaves, chopped, to garnish

Steps:

  • Place beef in a large bowl. Add vindaloo paste. Toss to coat. Cover and marinate in the refrigerator for at least an hour or overnight if possible.
  • Meanwhile heat oil in a large frying pan over medium-high heat. Add onions, and sauté, stirring occasionally, for about 2-3 minutes or until the onions are soft and translucent. Add chopped garlic, and sauté, stirring, for 1 minute or until fragrant.
  • Add ground turmeric, red chili powder, tomatoes, tomato paste and vinegar. Sauté, stirring occasionally, for 2-3 minutes or until the tomatoes break down and mushy.
  • Add beef and sugar. Season with salt. Stir to combine. Cook, stirring occasionally, for about 10 minutes.
  • Pour in water. Stir.
  • Bring to the boil. Reduce heat to medium. Cover and simmer for about an hour or until beef is cooked through and the sauce is thick.

A great make-ahead vindaloo recipe which is a guaranteed crowd pleaser and will convert many to Indian food. It can be made with any meat and most pantry items. Serve with mashed potatoes or basmati rice.

¼ cup distilled white vinegar
¼ cup garlic paste
3 tablespoons ginger paste
2 tablespoons plain yogurt
2 tablespoons salt
1 tablespoon ground black pepper
1 tablespoon ground red pepper
2 pounds boneless beef chuck, cut into 1-inch cubes
¼ cup vegetable oil
2 onion, chopped
4 roma (plum) tomatoes, chopped
1 cup water
2 tablespoons chopped fresh cilantro

Steps:

  • Whisk the vinegar, garlic paste, ginger paste, yogurt, salt, black pepper, and red pepper together in a mixing bowl. Mix in the beef cubes until evenly coated. Cover the bowl with plastic wrap, and marinate in the refrigerator overnight (or at least 30 minutes).
  • Heat the vegetable oil in a large pot over medium heat. Cook and stir the onions in the hot oil until they soften, turn translucent, and begin turning golden brown, about 10 minutes. Add the beef cubes, and cook, stirring frequently until the meat is no longer pink on the outside, about 10 minutes more. Stir in the tomatoes and cook for 5 minutes.
  • Pour in the water, and bring to a simmer. Cover and reduce heat to medium-low; cook until the beef is tender, about 40 minutes. Sprinkle with cilantro to serve.

1/2 cup red wine vinegar
14 cloves garlic, coarsely chopped
4 fresh green chilies, coarsely chopped
1/4 cup sugar
1 tablespoon English powdered mustard
1 1/2 teaspoons turmeric
1 1/2 teaspoons ground ginger
1 1/2 teaspoons ground coriander
1 teaspoon ground cumin
Juice of 1 lemon
Salt and pepper
2 pounds boned beef chuck, cut in 1-inch cubes
2 tablespoons ghee (available in Indian and specialty food stores)
1 large onion, sliced
3 tablespoons poppy seeds
4 bay leaves
2 cloves
4 tablespoons tomato paste

Steps:

  • In a blender process 1 tablespoon of the vinegar, garlic and chilies to a paste. Add remaining vinegar and next 7 ingredients and season with pepper; process until combined. In a large bowl place beef and pour blender contents over; toss to combine. Marinate, covered, 2 hours at room temperature or refrigerate overnight.
  • In a large skillet heat ghee over medium-high heat. Add onion and saute 10 minutes, or until lightly browned. Sprinkle meat with poppy seeds and toss to coat. Turn heat to medium and add meat, marinade, bay leaf and cloves. Cook, turning beef often, 5 minutes. Stir in tomato paste. Reduce heat to low, cover and cook 1 1/2 hours or until beef is very tender. Serve with rice.

I was CRAVING this dish for so long, since I moved to Brooklyn finding a decent Indian Restaurant is not easy. And once I looked the recipe up I couldn't wait for the Marinade Time. Here's a simple 1 POT Recipe...it's not authentic but TASTES JUST AS GOOD AS THE REAL THING!!!!!

2 -3 lbs beef chuck (the same meat for beef stew)
1/4 cup extra virgin olive oil
14 ounces coconut milk
3 ounces tomato paste
6 bay leaves
1 small yellow onion, diced
2 tablespoons sugar
2 tablespoons garlic powder
2 tablespoons onion powder
1 tablespoon of minced garlic
3 beef bouillon cubes
2 tablespoons chili powder
1 tablespoon cayenne pepper
1 tablespoon crushed red pepper flakes
3 tablespoons curry powder
2 tablespoons cumin
2 tablespoons coriander
1 tablespoon cracked black pepper
1 tablespoon powdered ginger
1 tablespoon kosher salt
1 teaspoon dried thyme
1 cinnamon stick (optional)
1/2 teaspoon cinnamon (optional)

Steps:

  • Sprinkle beef with salt & pepper; make sure all sides are well seasoned.
  • In a Dutch oven or big pot, heat extra virgin olive oil to where it starts to sheen.
  • Add beef to pot and brown on all sides.
  • Once meat is browned, DO NOT DRAIN GREASE, lower heat and add coconut milk and HALF a can of tomato paste (3 ounces). Proceed to add the REST of the ingredients, EXCEPT THE ONION.
  • ***If you don't like your food VERY SPICEY -- Add the Cinnamon or the Cinnamon Stick -- it will cut the heat down, also a teaspoon of sugar will make it even milder***.
  • Simmer for 1 hour & 15 minutes stirring occasionally; add diced onion, continue to cook for 15 more minutes.
  • DONE!
  • *SERVE WITH JASMINE RICE TO ENHANCE FLAVORS*.

  • Sprinkle 1 teaspoon each of salt and pepper over the cubes beef. Massage it into the meat and then set it aside to rest for 10 minutes.
  • Heat the oil in either a large skillet or a cooktop-safe slow cooker insert over medium high heat. Place some of the beef cubes into the pot in a single layer--do not crowd the pan, you can brown the beef in batches. Brown the cubes, about 8 minutes, before removing to the bowl and adding the next round. When you are done, place the beef in the bowl and set it aside.
  • Add the mustard seeds to the pan. Ideally, they will pop before you add the onions, but if there is a lot of beef remnants stuck to the pan, do not let those burn. If you have time for the seeds to pop, cover the pan with a lid slightly ajar so the seeds do not pop out of the pan.
  • When the popping has slowed--or when you are concerned the pan may scorch, add the onions with a pinch of salt. Stir, scraping up the bottom of the pan as the liquid from the onions deglazes the pan. If you have anything seriously stuck to the pan, splash a little water into the pan.

  • Trim the lamb, discarding any really hard lumps of fat and sinew. Mix the vinegar and vegetable oil with 2 teaspoons of sea salt in a non-metallic bowl until well combined, then add the lamb and turn it to coat in the marinade.
  • For the sauce, heat 3 tablespoons of the oil in a large heavy-based frying pan. Cook the sliced onions very gently over a medium-low heat for 15 minutes until they’re softened and lightly browned, stirring occasionally.
  • While the onions are cooking, put the remaining chopped onion with the garlic, chillies, ginger, mustard powder, cumin, coriander, paprika, turmeric, cayenne pepper and cinnamon in a food processor and blend to a pure´e.
  • Add 2 tablespoons of oil and cook together for 5 minutes, or until the sauce has thickened and is beginning to colour. Tip the mixture into a flameproof casserole dish.
  • Fry the lamb over a medium high heat, turning occasionally until lightly browned – do this in 4 or 5 batches, adding a little extra oil if necessary. Add each batch of lamb to the casserole as it is browned.
  • Pour the reserved marinade and 500ml water into the casserole dish, then add 2 teaspoons of salt and the bay leaves and bring to a simmer. Cover the surface of the curry with a piece of greaseproof paper, then put a lid on the dish.
  • Remove the casserole from the oven and stir the potato chunks into the curry. Replace the greaseproof paper and the lid and continue to cook for a further hour or until the lamb and potatoes are very tender.
