BAKED TUNA CHOW MEIN CASSEROLE
You can make this tasty dish in the microwave or oven. It's made with tuna, celery, onions, bell pepper, soy sauce, chow mein noodles, and cream of mushroom soup

Steps:
- Place the butter in a 1 1/2 quart microwave-safe casserole dish. Place in the microwave and cook on high for 30 seconds. Add the celery, onion, and bell pepper. Stir well. Heat on high, uncovered, for 3 minutes, stirring halfway through the cooking time. If the veggies are still too crisp, cook for another 1-2 minutes. Add the tuna, cream of mushroom soup, chow mein noodles, black pepper, and soy sauce. Stir well then top with the remaining chow mein noodles. Cook in the microwave, uncovered, for 10 minutes on high heat or until the casserole is bubbly in the middle. Serve hot. Alternately, the casserole can be baked at 350 degrees F for 25 minutes or until heated through.
LAYERED TUNA CASSEROLE
The fresh zucchini and tomatoes are a taste addition to this casserole. My husband was not a fan of tuna casserole until I found this recipe.

- 1. Cook noodles to desired doneness as directed on package. Drain and rinse with hot water. Heat oven to 350. Grease 2 quart casserole. In large bowl, combine noodles, tuna, water chestnuts, celery, onions, mayonnaise, sour cream, thyme, and salt.
- 2. Spoon half of tuna mixture into prepared casserole; top with 1/2 cup sliced zucchini. Repeat layers. Arrange tomato slices on top of casserole; sprinkle with cheese. Bake for 30-40 minutes or until hot and bubbly.
TUNA NOODLE CASSEROLE III
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- In a 1 1/2 quart glass casserole dish, layer noodles, butter cubes, 2 slices of cheese, 1/2 of the tuna, and 1/2 of the soup. Repeat the layering with the remaining ingredients. Top the casserole with bread crumbs.
- Bake at 350 degrees F (175 degrees C) for 10 to 15 minutes.

This is my kids' favorite tuna casserole, which is very simple to make and very easy on the budget. NOTE: I also like to add a cup of frozen peas on top of the tuna layer...(That is optional)

Steps:
- Cook noodles according to package directions, undercooking just slightly. Drain.
- In a 13 x 9 inch greased casserole dish, arrange cooked noodles evenly on the bottom.
- Add both cans of tuna with juice from can, evenly on top of noodles.
- Salt and pepper to taste.
- Mix both cans of soup and the mayonnaise with 1 10.7 ounce can full of milk and stir until smooth.
- Add soup mixture evenly on top of casserole.
- Add shredded cheddar cheese evenly on top.
- Add smashed Ritz crackers evenly on top. Dot the top with the butter or margarine.
- Bake, uncovered, in a 350 degree (preheated) oven for 35 minutes, until top is slightly golden brown.
- Let sit for 5 minutes.

LAYERED POLENTA CASSEROLE RECIPE
A layered Polenta casserole dish. You can also use grits instead of polenta in this dish.

Steps:
- For the Polenta, cook the Polenta, water, milk, butter, salt, and pepper together. Keep on low heat and stir continuously for about 5 minutes.
- Keep your attention towards the Polenta, cause it can burn on really quickly and cooks up super fast. Remove it from the heat once it starts to boil up.
- Spread half amount of the polenta into a baking dish to create the first layer.
- For the white sauce, heat up a saucepan with the butter.
- Continue adding in the White flour. Keep on stirring with a whisk on slow heat.
- Then pour in the milk. Stir well, season and keep on whisking the sauce till it gets thick by itself. Remove from the heat and keep aside.
- Preheat your oven to 350 Celsius/ 180 Fahrenheit.
- Mix the Tomato Sauce with the olives, basil, salt, and black pepper
- Spread the mixed tomato sauce over the polenta layer
- Then add the remaining polenta to form the layer over the tomato paste.
- Then spread the white sauce over the polenta to create a creamy layer.
- At last spread the Parmesan Cheese over the white sauce.
- Bake the casserole dish for about 15 minutes at 350 Fahrenheit/180 Celsius.

LAYERED CHEESY TUNA AND ZUCCHINI CASSEROLE
A family favorite! --- I would recommend to slice the zucchini fairly thick and you may want to add in some chopped green bell pepper also if desired, I have even substituted cooked chicken breast in place of tuna with great success, I like to combine both mozzarella and cheddar cheeses but of coarse one or the other may be used, I also add in 1 teaspoon garlic powder to the sour cream mixture.

Steps:
- Cook the egg noddles in boiling water according to package directions; drain and rinse under warm water, then set aside.
- Drain the tuna and flake with a fork.
- In a large bowl, combine tuna, cooked egg noodles, celery and onions; mix well to combine.
- In another small bowl, combine sour cream, mustard powder, mayo, Parmesan cheese, milk, thyme, salt and pepper; add into the tuna mixture and toss well to combine.
- Set oven to 350°F.

- Remove from oven and uncover, sprinkle with grated mozzarella cheese, return to oven (uncovered) and bake for another 10 minutes.
- Sprinkle chopped tomato over casserole before serving.

- In a small skillet, saute onion in oil until tender. In a microwave-safe dish, whisk together water and soup mix. Microwave, uncovered, on high for 1-1/2 to 2 minutes, whisking occasionally. Add soup to sauteed onions. Stir in the broccoli, tuna, milk, salt and lemon-pepper; bring to a boil. Reduce heat; simmer for 5 minutes or until broccoli is tender. Stir in rice. - Place ground beef in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
- In a large pot of boiling salted water cook pasta until al dente. Drain well.
- In a greased 13x9 inch casserole dish layer the cooked and drained pasta noodles on the bottom.
- In a medium size bowl combine the sour cream, cream cheese, shredded Cheddar cheese, and chopped green onions. Spread mixture over cooked pasta in baking dish.
- In a small bowl combine the sugar, tomato sauce, and cooked ground beef. Layer this on top of the sour cream mixture in the baking dish. Sprinkle with additional shredded Cheddar cheese, if desired.
- Refrigerate casserole overnight. Remove from refrigerator one hour before baking.
- Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes. Allow to stand 10 to 15 minutes before serving.
- If freezing casserole, allow to come to room temperature for one hour before baking.

- Cook noodles according to package directions. Meanwhile, in a small saucepan over medium heat, melt 5 teaspoons butter. Stir in the flour, salt and pepper until blended; gradually add milk.
