BAKED TUNA CHOW MEIN CASSEROLE

You can make this tasty dish in the microwave or oven. It's made with tuna, celery, onions, bell pepper, soy sauce, chow mein noodles, and cream of mushroom soup

3 tablespoons butter or margarine
1 cup thinly sliced celery
1/4 cup chopped onion
2 tablespoons chopped green bell pepper
1 can (7 ounce size) tuna, drained and gently flaked
1 can (10.25 ounce size) cream of mushroom soup
1 cup chow mein noodles
1/8 teaspoon black pepper
2 teaspoons soy sauce
1/3 cup chow mein noodles, for top of casserole

Steps:

  • Place the butter in a 1 1/2 quart microwave-safe casserole dish. Place in the microwave and cook on high for 30 seconds. Add the celery, onion, and bell pepper. Stir well. Heat on high, uncovered, for 3 minutes, stirring halfway through the cooking time. If the veggies are still too crisp, cook for another 1-2 minutes. Add the tuna, cream of mushroom soup, chow mein noodles, black pepper, and soy sauce. Stir well then top with the remaining chow mein noodles. Cook in the microwave, uncovered, for 10 minutes on high heat or until the casserole is bubbly in the middle. Serve hot. Alternately, the casserole can be baked at 350 degrees F for 25 minutes or until heated through.

3 c uncooked wide egg noodles
2 can(s) (6 1/2 oz) tuna, drained,flaked
1 can(s) (8oz) sliced water chestnuts, drained
1/2 c celery
1/3 c chopped green onions
1/2 c mayonnaise
1/2 c dairy sour cream
1/2 tsp thyme leaves
1/4 tsp salt
1 medium sliced zucchini
1 c monterey jack cheese
IF DESIRED
3-4 slices fresh tomato

Steps:

  • 1. Cook noodles to desired doneness as directed on package. Drain and rinse with hot water. Heat oven to 350. Grease 2 quart casserole. In large bowl, combine noodles, tuna, water chestnuts, celery, onions, mayonnaise, sour cream, thyme, and salt.
  • 2. Spoon half of tuna mixture into prepared casserole; top with 1/2 cup sliced zucchini. Repeat layers. Arrange tomato slices on top of casserole; sprinkle with cheese. Bake for 30-40 minutes or until hot and bubbly.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a 1 1/2 quart glass casserole dish, layer noodles, butter cubes, 2 slices of cheese, 1/2 of the tuna, and 1/2 of the soup. Repeat the layering with the remaining ingredients. Top the casserole with bread crumbs.
  • Bake at 350 degrees F (175 degrees C) for 10 to 15 minutes.

This is my kids' favorite tuna casserole, which is very simple to make and very easy on the budget. NOTE: I also like to add a cup of frozen peas on top of the tuna layer...(That is optional)

16 ounces medium noodles (I use Amish Noodles, that I find in the pasta section of my grocer.)
2 (6 ounce) cans albacore tuna in water
1 (10 3/4 ounce) can cream of celery soup
1 (10 3/4 ounce) can cream of chicken soup
1/4 cup mayonnaise (I use Hellman's)
10 3/4 ounces whole milk (1 soup can full)
8 ounces shredded cheddar cheese
2 cups Ritz crackers, smashed
3 tablespoons butter or 3 tablespoons margarine
salt & pepper

Steps:

  • Cook noodles according to package directions, undercooking just slightly. Drain.
  • In a 13 x 9 inch greased casserole dish, arrange cooked noodles evenly on the bottom.
  • Add both cans of tuna with juice from can, evenly on top of noodles.
  • Salt and pepper to taste.
  • Mix both cans of soup and the mayonnaise with 1 10.7 ounce can full of milk and stir until smooth.
  • Add soup mixture evenly on top of casserole.
  • Add shredded cheddar cheese evenly on top.
  • Add smashed Ritz crackers evenly on top. Dot the top with the butter or margarine.
  • Bake, uncovered, in a 350 degree (preheated) oven for 35 minutes, until top is slightly golden brown.
  • Let sit for 5 minutes.

A layered Polenta casserole dish. You can also use grits instead of polenta in this dish.

1 cup Polenta
1/2 cup Water
1/2 cup Milk
2 Tablespoon Butter
pinch Salt
pinch Black Pepper
10 Olives (whole or sliced)
1 cups Tomato Sauce
pinch Salt
pinch Black Pepper
Basil (optional)
1 Tablespoon Butter
1 Tablespoon White Flour
1 3/4 cups Milk
pinch Salt
pinch Black Pepper
Parmesan

Steps:

  • For the Polenta, cook the Polenta, water, milk, butter, salt, and pepper together. Keep on low heat and stir continuously for about 5 minutes.
  • Keep your attention towards the Polenta, cause it can burn on really quickly and cooks up super fast. Remove it from the heat once it starts to boil up.
  • Spread half amount of the polenta into a baking dish to create the first layer.
  • For the white sauce, heat up a saucepan with the butter.
  • Continue adding in the White flour. Keep on stirring with a whisk on slow heat.
  • Then pour in the milk. Stir well, season and keep on whisking the sauce till it gets thick by itself. Remove from the heat and keep aside.
  • Preheat your oven to 350 Celsius/ 180 Fahrenheit.
  • Mix the Tomato Sauce with the olives, basil, salt, and black pepper
  • Spread the mixed tomato sauce over the polenta layer
  • Then add the remaining polenta to form the layer over the tomato paste.
  • Then spread the white sauce over the polenta to create a creamy layer.
  • At last spread the Parmesan Cheese over the white sauce.
  • Bake the casserole dish for about 15 minutes at 350 Fahrenheit/180 Celsius.

A family favorite! --- I would recommend to slice the zucchini fairly thick and you may want to add in some chopped green bell pepper also if desired, I have even substituted cooked chicken breast in place of tuna with great success, I like to combine both mozzarella and cheddar cheeses but of coarse one or the other may be used, I also add in 1 teaspoon garlic powder to the sour cream mixture.

2 (6 1/2 ounce) cans chunk tuna (I use all white tuna, but light may be used also, or use both)
4 cups wide egg noodles (uncooked)
1 celery rib, diced
3 green onions, finely chopped
1 cup sour cream
1 cup mayonnaise
1/4 cup milk
1 teaspoon mustard powder
1/4 cup grated parmesan cheese
1/2 teaspoon dried thyme (rubbed between fingers to release flavor)
salt and pepper (I use about 1/2 teaspoon seasoned salt)
1 medium zucchini, sliced
2 cups grated mozzarella cheese
2 cups grated cheddar cheese
1 large firm roma tomato, chopped

Steps:

  • Cook the egg noddles in boiling water according to package directions; drain and rinse under warm water, then set aside.
  • Drain the tuna and flake with a fork.
  • In a large bowl, combine tuna, cooked egg noodles, celery and onions; mix well to combine.
  • In another small bowl, combine sour cream, mustard powder, mayo, Parmesan cheese, milk, thyme, salt and pepper; add into the tuna mixture and toss well to combine.
  • Set oven to 350°F.
  • Grease a 2-quart casserole dish.
  • Spoon HALF of the mixture into prepared dish.
  • Top with HALF of the sliced zucchini.
  • Then sprinkle with cheddar cheese.
  • Top with noodle mixture then remaining zucchini.
  • Sprinkle with more grated Parmesan cheese if desired.
  • Bake covered with foil for 30 minutes.
  • Remove from oven and uncover, sprinkle with grated mozzarella cheese, return to oven (uncovered) and bake for another 10 minutes.
  • Sprinkle chopped tomato over casserole before serving.

1 small onion, chopped
1-1/2 teaspoons vegetable oil
2/3 cup water
3 tablespoons Homemade Cream-Style Soup Mix
3/4 cup frozen chopped broccoli, thawed
1 can (6 ounces) tuna, drained and flaked
1/2 cup milk
1/4 teaspoon salt
1/8 teaspoon lemon-pepper seasoning
1-1/2 cups cooked rice
2 tablespoons slivered almonds, toasted

Steps:

  • In a small skillet, saute onion in oil until tender. In a microwave-safe dish, whisk together water and soup mix. Microwave, uncovered, on high for 1-1/2 to 2 minutes, whisking occasionally. Add soup to sauteed onions. Stir in the broccoli, tuna, milk, salt and lemon-pepper; bring to a boil. Reduce heat; simmer for 5 minutes or until broccoli is tender. Stir in rice. Cook and stir 2-3 minutes longer or until heated through. Sprinkle with almonds.

8 ounces fresh pasta
1 (8 ounce) container sour cream
1 (8 ounce) package cream cheese, softened
½ cup shredded Cheddar cheese
6 green onions, thinly sliced

1 tablespoon white sugar
2 tablespoons shredded Cheddar cheese

Steps:

  • Place ground beef in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
  • In a large pot of boiling salted water cook pasta until al dente. Drain well.
  • In a greased 13x9 inch casserole dish layer the cooked and drained pasta noodles on the bottom.
  • In a medium size bowl combine the sour cream, cream cheese, shredded Cheddar cheese, and chopped green onions. Spread mixture over cooked pasta in baking dish.
  • In a small bowl combine the sugar, tomato sauce, and cooked ground beef. Layer this on top of the sour cream mixture in the baking dish. Sprinkle with additional shredded Cheddar cheese, if desired.
  • Refrigerate casserole overnight. Remove from refrigerator one hour before baking.
  • Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes. Allow to stand 10 to 15 minutes before serving.
  • If freezing casserole, allow to come to room temperature for one hour before baking.

1-3/4 cups uncooked wide egg noodles
6 teaspoons reduced-fat butter, divided
4 teaspoons all-purpose flour

3/4 cup 2% milk
3 ounces reduced-fat cream cheese
1 pouch (2-1/2 ounces) albacore white tuna in water
2 tablespoons diced pimientos
2 teaspoons minced chives
2 slices Muenster cheese (3/4 ounce each)
2 tablespoons soft bread crumbs

Steps:

  • Cook noodles according to package directions. Meanwhile, in a small saucepan over medium heat, melt 5 teaspoons butter. Stir in the flour, salt and pepper until blended; gradually add milk. Bring to a boil over medium , heat; cook and stir for 1-2 minutes or until thickened. Reduce heat to medium-low; add the cream cheese, tuna, pimientos and chives. Cook and stir until cheese is melted., Drain noodles. Spread 1/4 cup tuna mixture into a 3-cup baking dish coated with cooking spray. Layer with half of the noodles, 1/2 cup tuna mixture and one slice of cheese. Repeat layers., Microwave remaining butter on high, stirring every 30 seconds; stir in bread crumbs. Sprinkle over top of casserole. Bake, uncovered, at 350° for 20-25 minutes or until bubbly.
