MEXICAN QUESADILLA CASSEROLE

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Prepare a 13x9-inch baking dish with cooking spray.
- Heat a large skillet over medium-high heat. Cook and stir beef and onion in the hot skillet until beef is completely browned, 5 to 7 minutes; drain and discard grease.
- Stir tomato sauce, black beans, diced tomatoes with lime juice and cilantro, corn, and chopped green chiles into the ground beef mixture; season with chili powder, cumin, garlic, oregano, and red pepper flakes. Reduce heat to low and cook mixture at a simmer for 5 minutes.
- Spread about 1/2 cup beef mixture into the bottom of the prepared baking dish; top with 3 tortillas, overlapping as needed. Spread another 1/2 cup beef mixture over the tortillas. Sprinkle 1 cup Cheddar cheese over beef. Finish with layers of remaining tortillas, beef mixture, and Cheddar cheese, respectively.
- Bake in preheated oven until heated throughout and the cheese is melted, about 15 minutes. Cool 5 minutes before serving.

- Preheat oven at 375 degrees F. Prepare a 12x7x2" baking dish, with cooking spray. Cook and stir beef and onion in a skillet until meat is brown. Stir in seasoning mix, tomato sauce and beans. In a mixing bowl, combine baking mix, cornmeal, milk, egg white, and oil until moistened. Spread in dish. Spoon meat mixture over dough. Mix remaining ingredients; spoon over meat mixture. Bake uncovered 30 minutes. Let stand 10 minutes before cutting.

- Preheat oven to 400 degrees F. Line a baking sheet with foil and spray tortillas with non-stick cooking spray on both sides. Place the tortillas on the prepared baking sheet and bake for 5 minutes. Flip and bake for another 5 minutes or until the tortillas are golden brown and crispy. Let cool for a few minutes.
- In the mean time, heat canned refried beans over the stove until warmed for a few minutes, or in the microwave. Stir until creamy and combined.
- To assemble the tostadas, evenly spread about 1/4 cup of beans onto each tortilla, then top with lettuce, cheese, corn, onions, salsa, guacamole and jalapeños.

FUNKY ENCHILADA CASSEROLE
My good friend brought this to me in the hospital after I had just had a baby. My husband promptly took it home and ate the entire thing without sharing. I had to remake it myself to find out what he'd been raving about. I've made a few adjustments and so can you according to your tastes! This is a great casserole to make because some of the canned ingredients you may already have. Serve with sour cream, hot sauce, and cold diced tomatoes or salsa if you like. Maybe even serve some chips and guacamole to round it out.

- Preheat the oven to 350 degrees F (175 degrees C).
- Heat the oil in a large skillet over medium heat. Add the chicken and season with cumin, Mexican seasoning and cayenne pepper. Stir in the onion and garlic and cook until chicken is browned, about 5 minutes. Add red, yellow and orange peppers; cook and stir for another 5 minutes, then mix in the black beans, kidney beans and corn. Remove from the heat.
- Line the bottom and sides of a 9x13 inch baking dish with corn tortillas. Pour in the skillet mixture then top with cilantro and pepperjack cheese.

- Grease jelly roll pan. Mix baking mix, cornmeal, milk and oil until moistened, beat 30 seconds. Pat dough in pan. Bake 10 minutes.

Steps:
- Pre-heat oven to 350 degrees
- Slice peppers and onions and sauté in olive oil until tender.
- Combine sour cream and milk until well blended.
- Spray a 9-inch by 9-inch baking dish with non stick cooking spray.
- Arrange 3 tortillas in single layer in baking dish. You'll need to tear the third one in half to fit the pan.
- Layer One: Tortillas, 1/3 of the salsa, 1/3 of the sour cream and milk mixture, black beans, 1/3 of the cheese, 1/3 of the peppers and onions
- Layer Two: Tortillas, 1/3 of the salsa, 1/3 of the sour cream and milk mixture, refried beans, 1/3 of the cheese, 1/3 of peppers and onions

- Combine 1 can of fat free refried beans with 1/2 a can of enchilada sauce in a medium saucepan to warm.
- While the beans/enchilada sauce are warming, warm the desired number of tostada shells in the oven at 350 degrees for about 4-5 minutes.
- Take one shell and spread 1/2 of a pepper jack Laughing Cow Cheese triangle.
- Next, top the shell with 1/2 cup of the warm bean/enchilada sauce mixture.
- Add on desired toppings: Lettuce, tomatoes, greek yogurt (sour cream sub) and salsa.
- Place a second tostada on top and repeat layers.
- Finish with a small amount of shredded cheese.

- CHILI: Brown meat & onions in pan, when browned, add tomatoes and chili water mixture and simmer for 30 minutes. Meantime: Preheat oven to 350 degrees fahrenheit. . Place the refried beans into the bottom of a 9" round casserole pan and mash with the taco seasoning. Cover with half of the cheese. Spread the chili over the cheese layer, cover with the rest of the cheese and sprinkle with the olives. Bake in oven for 30 minutes until heated through and the cheese is melted.
