LAYERED RAINBOW JELL-O SALAD



Layered Rainbow Jell-O Salad image

6 (3-ounce) boxes of Jell-O gelatin (any flavors you'd like)
6 3/4 cups water, divided
3 cups nonfat vanilla Greek yogurt

Steps:

  • Decide on your color pattern (the order for the colors of Jell-O you've selected), and begin by working with the color that will go on the bottom.
  • Boil 1 cup of water in the microwave.
  • Add 1 packet of Jell-O to the boiling water and stir until completely dissolved.
  • Pour 1/2 cup of this liquid into a 9x13 pan to create a "clear" layer, tilting pan for even coverage if necessary (see note).
  • Refrigerate until set (see note).
  • While the first layer sets, add 1/2 cup Greek yogurt and 2 tablespoons cold water to the remaining liquid Jell-O for the "cloudy" layer.
  • Pour the liquid for your "cloudy" layer on top of the completely set clear layer.
  • Refrigerate again until set.
  • Repeat this process with each color of Jell-O to create alternating "clear" and "cloudy" layers in each color you've chosen.
  • Refrigerate until serving.

1 (3 ounce) package black cherry flavored Jell-O® mix
1 (3 ounce) package cherry flavored Jell-O®
1 (3 ounce) package lime flavored Jell-O® mix
1 (3 ounce) package lemon flavored Jell-O®
1 (3 ounce) package orange flavored Jell-O® mix
1 (3 ounce) package orange-pineapple flavored Jell-O®
1 (3 ounce) package strawberry flavored Jell-O®
9 cups boiling water
1 ½ cups evaporated milk

Steps:

  • In separate bowls mix the black cherry, lime, orange and strawberry flavored gelatins with 1-1/2 cups boiling water and let each cool to room temperature.
  • In separate bowls, prepare the cherry, lemon and orange-pineapple flavored gelatins with 1 cup boiling water and add 1/2 cup evaporated milk when each cools to room temperature.
  • Add the room temperature black cherry flavored gelatin to a 13x9 inch pan and refrigerate until chilled. Follow with a layer of the cherry flavor, lime flavor, lemon flavor, orange flavor, orange-pineapple flavor and strawberry flavor, allowing each layer to cool before adding the next.

350g pasta shapes (De Cecco is a good brand that stays nice and firm)
200g green beans , trimmed and chopped into short lengths
160g can tuna in olive oil, drained
4 tbsp mayonnaise
4 tbsp natural yogurt
½ small pack chives , snipped (optional)
200g cherry tomatoes , quartered
1 orange pepper , cut into little cubes 195g can sweetcorn, drained

Steps:

  • Cook the pasta until it is still a little al dente (2 mins less than the pack instructions) and drain well. Cook the green beans in simmering water for 2 mins, then rinse in cold water and drain well. Mix the tuna with the mayonnaise and yogurt. Add the chives, if using.
  • Tip the pasta into a large glass bowl or four small ones, or four wide-necked jars (useful for taking on picnics). Spoon the tuna dressing over the top of the pasta. Add a layer of green beans, followed by a layer of cherry tomatoes, then the pepper and sweetcorn. Cover and chill until you're ready to eat.
