MEXICAN FIESTA CASSEROLE

I adopted this recipe in February 2005. While I'm not much of a casserole person, this one looks to be pretty good.

Time 50m

Yield 6 serving(s)

Number Of Ingredients 12

1 lb lean ground beef
salt and pepper, to taste
1 teaspoon chili powder
1 cup shredded cheddar cheese
1 cup sour cream
2/3 cup mayonnaise
1/4 medium onion, finely chopped
2 cups Bisquick baking mix
1/2 cup water

1/2 cup chopped green bell pepper

TEX-MEX FIESTA CASSEROLE

Tex-Mex Fiesta Casserole image

So far this is my favorite recipe that I use. It is from Joanna Lund. I make this at least once a month. It has a great taste and the portion size is plentiful. Per serving is 260 calories. The diabetic exchanges per serving are: 2 1/2 protein, 2 vegetable, 1 starch. You won't be sorry for trying it. My 3 year old son eats it too. You won't miss the fat/calories.

FIESTA CASSEROLE

Fiesta Casserole image

We love casserole recipes because dinner can be made in a snap. Whether you eat this with a fork or tortilla chips, you'll be in for a treat. It's easy to prepare and is layered with rice, meat, salsa, and cheesy goodness. We thought it had just the right amount of heat, but you can easily adjust that by adding a hotter (or more...

Time 50m

Number Of Ingredients 6

1 -1 1/2 lb ground meat (your choice)
2 pkg chicken rice (Knorr is what I use. Flavor is spot on.)
1 can(s) Rotel tomatoes (I use green chili though some like it hotter.)
1 jar(s) Ragu cheese sauce (by the spaghetti sauces in the store. It's the orange one.)
1 jar(s) salsa
1 pkg taco seasoning

Steps:

  • 1. Cook rice as directed on packages.
  • 2. Brown meat and add taco spice. (I make my own with coriander, cumin, garlic, onion, chili pepper, pepper, salt. ) Pre-pack is fine. Add Rotel tomatoes. Simmer for 4 minutes.
  • 3. Spread rice in 9 x 13 dish.
  • 4. Top with meat.
  • 5. Top with salsa. Any kind is fine; my kids tend to like it with the peach or the sweeter type salsa as the Rotel tomatoes have a bite.
  • 6. Top with Ragu cheese sauce.
  • 7. Bake for 30 minutes at 350.
  • 8. Pull from oven and allow to rest for at least 15 minutes, Get your chips and DIG IN!
