SEVEN LAYER SALAD



Seven Layer Salad image

I usually make this bacon, lettuce, onion, pea, cheese and cauliflower layered salad in a large flat bowl. There's never too much because everybody loves it! You can vary the salad by substituting green onions for red, jack cheese for the Cheddar, etc.

1 pound bacon
1 large head iceberg lettuce - rinsed, dried, and chopped
1 red onion, chopped
1 (10 ounce) package frozen green peas, thawed
10 ounces shredded Cheddar cheese
1 cup chopped cauliflower
1 ¼ cups mayonnaise
2 tablespoons white sugar
⅔ cup grated Parmesan cheese

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Crumble and set aside.
  • In a large flat bowl, place the chopped lettuce and top with a layer of onion, peas, shredded cheese, cauliflower and bacon.
  • Prepare the dressing by whisking together the mayonnaise, sugar and Parmesan cheese. Drizzle over salad and refrigerate until chilled.

6 cups romaine and iceberg lettuce mix (from 10-ounce bag)
4 cups broccoli slaw mix (from 8-ounce bag)
1 cup sliced drained roasted red bell peppers (from 12-ounce jar)
1 package (8 ounces) refrigerated imitation crabmeat chunks, large pieces cut up
4 hard-cooked eggs, sliced
1 cup 1x 1/4-inch strips Cheddar cheese
1 cup 1x 1/4-inch strips cucumber
1 cup Thousand Island dressing
2 tablespoons chopped fresh chives

Steps:

  • For each salad, use a 4- to 5-cup container. In each container, layer ingredients in this order: 1 1/2 cups lettuce, 1 cup broccoli slaw, 1/4 cup bell peppers, 1/4 cup crabmeat, 1 egg, 1/4 cup cheese strips and 1/4 cup cucumber strips. Drizzle 1/4 cup dressing over each salad. Sprinkle with chives. Serve immediately or cover and refrigerate up to 24 hours.
  • To serve, toss salads.

1 medium head iceberg lettuce, torn
1 medium green pepper, chopped
1 small sweet red pepper, chopped
1 medium onion, sliced and separated into rings
2 cups frozen peas (about 10 ounces)
1 cup mayonnaise
2 tablespoons sugar
1 cup shredded cheddar cheese
12 bacon strips, cooked and crumbled
3/4 cup dried cranberries

Steps:

  • In a 4-qt. or 13x9-in. glass dish, layer the first 5 ingredients. In a small bowl, mix mayonnaise and sugar; spoon over salad, spreading to cover., Sprinkle top with cheese, bacon and cranberries. Refrigerate, covered, overnight.

4 ounces tender, thin green beans
1 Yukon Gold potato, peeled and cut into 1/2-inch dice
1 tablespoon olive oil
3 ounces oil-packed tuna, drained
½ cup cherry tomato halves
½ cup pitted nicoise olives
1 hard-boiled egg, chopped
1 anchovy fillet
1 tablespoon chopped fresh parsley
1 tablespoon Dijon mustard
3 anchovy fillets
3 tablespoons white wine vinegar
2 tablespoons lemon juice
2 teaspoons minced shallots
1 teaspoon minced fresh tarragon
¼ cup ripe avocado
⅓ cup olive oil, or more to taste
1 teaspoon freshly ground black pepper
1 pinch cayenne pepper

Steps:

  • Bring a pot of salted water to a boil over medium-high heat. Add green beans and cook for just 2 minutes. Transfer to a bowl of ice water using a slotted spoon.
  • Transfer potato cubes to the same pot; simmer over medium heat until tender, but not soft, 5 to 8 minutes. Remove potatoes with a slotted spoon and drain on a paper towel-lined plate. Slide out paper towel and drizzle warm potatoes with about 1 tablespoon olive oil.
  • Drain green beans. Cut into 1/2-inch to 3/4-inch pieces.
  • Place the potatoes in a 1-quart canning jar; even out the layer. Add in this order a layer of chopped green beans, tuna, tomatoes, olives, eggs, and anchovy fillet, evening out layers as you go. Top with chopped parsley. Leave about 1/2 inch space at the top. Close with lid and refrigerate while you make the dressing.
  • Place mustard and anchovies in a mixing bowl. Add vinegar, lemon juice, shallots, tarragon, and avocado, olive oil, black pepper, and cayenne pepper. Blend with an immersion blender until thoroughly emulsified, 1 or 2 minutes. If dressing seems too thick, stir in 1 or 2 teaspoons water or lemon juice.
  • Pour about 1/4 cup dressing into salad jar, or more to taste. Toss with a fork. Or you can shake the jar and transfer dressed salad to a bowl.

12 to 16 ounce bag of small sweet peas (, frozen)
1/2 purple onion (, diced)
6 hard boiled eggs (, chopped)
1 pound of bacon (, cut into lardons, and fried)
1-1.5 cups mayonnaise
1/4 cup to 1/3 cup sugar ((mix with mayo to make salad topping/dressing))
1 cup shredded cheddar cheese

Steps:

  • /2 of the lettuce
  • peas
  • onion
  • egg
  • bacon
  • remaining lettuce
  • ice with mayonnaise dressing
  • top with cheddar cheese
  • Wrap really well with plastic wrap; refrigerate for 24 hours
  • Unwrap and serve

Steps:

  • First, cook the bacon over medium heat in a skillet. Then, dice it into pieces and set it aside. Hard boil an egg, peel it, halve it, and set it aside.
  • Next, wash and prep all of the vegetables including the lettuce, tomato, onions, mushrooms, carrot, and cucumber.
  • Afterward, shred the cheese and dice the ham and set them aside in separate bowls.
  • Last, build your salad starting with lettuce and finishing with the cheese. Toss everything together and then top the dish with your favorite salad dressing.

I cut this recipe out of my local newspaper and altered it slightly to my tastes. This is a great summer supper. Perfect for a hot evening and it looks pretty enough for company when put together in a trifle bowl. Try different lettuces and dressings. It's also a great way to use your garden lettuce, cukes, and tomatoes. Speed up the preparation by using a bag of salad and a bag of shredded carrots. You can make it your own by adding herbs, avocados, artichokes or mushrooms or switching the peas for corn.
