1 cup white sugar
1 tablespoon fresh lavender blossoms

Steps:

  • Combine water, sugar, and lavender blossoms in a small saucepan. Bring to a boil, stirring until sugar dissolves. Simmer for 1 minute. Remove from heat and let syrup steep, about 30 minutes.
  • Pour syrup into a sterilized glass jar through a mesh strainer to remove blossoms; let cool.

My Mom clipped this recipe out of the local newspaper. A multi-purpose herb/spice rub for meats-chicken, lamb, even fish; vegetables such as corn on the cob, baked potato, etc. Use your imagination but use sparingly! Update: This is wonderful on simple roasted whole chicken!

2 tablespoons black peppercorns (or 1 tablespoon white and 1 tablespoon black)
3 tablespoons salt-free garlic powder
2 tablespoons salt
1 1/2 tablespoons dried lavender

Steps:

  • Place all ingredients in mini-chopper or clean, dry coffee mill and blend to powder form.
  • Keep covered and stored in cool, dry location.
  • Yield: approximately 1/2 cup.

I noticed very few recipes here on Zaar which use edible lavender so I decided to find some really good ones and post them! I didn't even know you could EAT lavender until I read Rita L's page long ago. Now I notice that one of my FAVE restaurants uses it! brazosbelle.com This recipe is from GreenEmporium.com

3 lbs salmon fillets
4 tablespoons honey
6 tablespoons virgin olive oil
1/2 teaspoon lavender, crushed
1/4 cup white wine
1 tablespoon Worcestershire sauce or 1 tablespoon tamarind paste
1 teaspoon lemon juice

Steps:

  • Place all ingredients except salmon, in saucepan over moderate heat, stirring with a wire whisk at all times until ingredients are reduced by one-third, to create a sauce.
  • When sauce has cooled slightly, brush on salmon filet.
  • Grill salmon, basting with sauce occasionally, setting some aside to top when served. Salmon is cooked when fish flakes.
  • To bake salmon, preheat oven to 350. Cover salmon with sauce, setting some aside to pour on salmon before serving.
  • Bake for 10 minutes or until salmon is flaky, basting occasionally.
  • Wonderful with rice or potatoes.

2 cups granulated sugar

Steps:

  • Gather the ingredients.
  • Bring the water and lavender to a boil in a saucepan.
  • Reduce the heat and stir in the sugar until fully dissolved.
  • Simmer for about 15 minutes.
  • Remove from the heat and allow to cool and steep for at least 1 hour or longer, until the flavor is to your liking. Strain out the lavender. Pour the lavender syrup into a bottle and keep in the refrigerator. Mix the syrup into your favorite drinks and enjoy.

  • Take the steaks out of the fridge 30 minutes before you intend to cook them because otherwise the center of the steaks will be ice cold . Then pour a good splash of olive oil in a large non-stick pan. Add the black peppercorns and a generous sprinkle of coarse salt. Place the pan over high heat until hot. Then add the steaks to the pan.
  • Quickly sear the steaks on all sides for a couple of minutes. Cook them the way you like your steak best. Mine are rare to medium-rare.
