LAVENDER-CHAMOMILE SPRITZER

Number Of Ingredients 7

Ingredients

1 ounce Tea Simple Syrup, recipe follows
1 1/2 ounces gin, such as Beefeater 24
1/2 ounce lemon juice
Vanilla bean club soda, such as Dry
Lavender sprig, if desired
1/4 cup chamomile-lavender loose-leaf tea
1/2 cup sugar

Steps:

Fill a tall glass with ice. Add the tea syrup, gin and lemon juice. Stir with a cocktail spoon. Top off with the vanilla bean soda. Serve garnished with a lavender sprig if desired.
Combine the tea, sugar and 1 cup water in a small saucepan. Place over medium heat and cook, stirring often, until the mixture comes to a boil and the sugar is dissolved. Reduce the heat to low and simmer for 5 minutes. Turn off the heat and allow the tea to steep for 5 minutes. Strain through a fine-mesh strainer. Let cool completely before using.

Ingredients

4 cups water
1/2 cup sugar
3 tablespoons dried lavender blossoms
4 1/2 cups sparkling water, chilled

Steps:

Bring water and sugar to a boil in a large saucepan, stirring until sugar dissolves. Add lavender; remove from heat. Let stand for 30 minutes. Strain. Return to pan, and boil until reduced by half, about 5 minutes. Let cool completely. Fill each of 6 glasses with 3/4 cup sparkling water. Stir 1/4 cup syrup into each.
