Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- In a large bowl, stir together, flour, sugar and salt. Add water, 1 egg white and melted butter; mix well to make a stiff dough. Knead until dough is smooth, about 5 minutes.
- Divide dough into 10 balls. Roll each ball on lightly floured surface until paper thin. Place on ungreased baking sheet. Brush with egg white and sprinkle with sesame seeds.
- Bake in preheated oven for 10 to 12 minutes, until browned.

- Place the flour, salt and sugar into a medium bowl and whisk to combine. In a small bowl whisk together the water, egg, and 2 tablespoons of the butter. Add the egg mixture to the dry ingredients and stir until the dough comes together, adding additional water if the dough is dry. Knead the dough in the bowl 5 to 6 times. Turn the dough out onto the counter, divide into thirds, cover with a tea towel and allow to rest for 30 minutes.
- Preheat the oven to 375 degrees F.
- Lightly butter the back of a half sheet pan using some of the remaining butter. Place the sheet pan, upside down on a surface that will prevent sliding. Working with one ball at a time, place the dough ball onto the back of the sheet pan and roll the dough out to an even 1/8-inch thickness. Gently stretch the edges of the dough so they fall slightly below the edge of the pan and hold the dough in place. Lightly brush the dough with butter, place on the middle rack of the oven and bake for 10 to 15 minutes or until golden brown. Remove the lavash to a cooling rack. Repeat with the remaining dough, on a cooled pan. Break each sheet into shapes and sizes as desired. Once completely cooled, store in an airtight container for up to 5 days.

- Peel and thinly slice the cucumber.
- Lay a piece of lavash bread on your workspace and spread some cream cheese evenly (as shown in the picture) leaving one of the short ends with some empty space.
- Next, layer the cucumber slices over the cream cheese.
- Begin rolling the bread by the short end, but not the end with the space. Roll it tightly, not allowing any air gaps to form.
- Cut the cucumber and cream cheese sandwich roll with a sharp serrated knife (wipe with a damp paper towel between cuts) into four equal pieces. Secure with a long sandwich pick.
- Serve the cucumber pinwheels immediately for best results, or refrigerate, for just a few hours.

- In a large bowl mix water, milk, oil, sugar, salt and instant yeast.
- Slowly add in the flour and mix using your hands or stand mixer until the dough comes together. This would take between 8 to 10 minutes. The dough will be a bit sticky.
- Rub a bit of oil all over the dough and place it in a large bowl. Cover and let it rise for 40 minutes. (I usually let mine rise in an "off" oven)
- After 40 minutes, gently deflate the dough and divide it into 20 pieces. shape each piece into a ball. Cover them all with a kitchen towel so they don't dry as you cook them.
- Heat a nonstick pan over medium heat. Flour your surface and your rolling dough very well. Place a dough ball on the surface and roll it out to be very thin.
- Place it on the hot pan and cook for 45 seconds to one minute. There will be bubbles. Flip and cook on the other side for about 30-45 seconds. Place the bread on a plate and cover with a kitchen towel.
- Repeat with the remaining dough.

- Spread cream cheese evenly over the lavash bread.
- Sprinkle with desired amount of garlic and onion powders.
- Layer the cucumber slices over the cream cheese.

HUMMUS AND VEGETABLE LAHVASH SANDWICHES

- To make the sandwiches:
- Spread hummus evenly on lahvash and top with cucumber, carrot, onion, radish, 1/2 cup sprouts, and 1 tablespoon sesame seeds. Roll lahvash up tightly jelly-roll fashion and trim ends. Cut roll crosswise with a serrated knife into 8 pieces. Garnish sandwiches with additional sprouts and remaining 1/2 tablespoon sesame seeds.
- To make the hummus:
- In a food processor blend together garlic paste, chick-peas, tahini, lemon juice, oil, and cumin, scraping down side, until smooth. Add water, parsley, and salt and pepper to taste and pulse until just combined. Hummus may be made 2 days ahead and chilled. Makes about 2 cups.

- Preheat oven to 425 F. Cut bottom and top off eggplant. cut in half, and then cut into thin strips. Trim top and bottom of zucchini. Cut in half lengthwise, and the cut into quarters. Thinly slice red pepper. Place the vegetables in a single layer on two sheet pans lined with aluminum foil.
- Drizzle 1 tsp of olive oil over top each sheet pan covered with vegetables. Sprinkle cumin, coriander, garlic powder, salt and pepper over top the vegetables. Roast in the oven for 20 minutes at 425 F.
- Spread hummus over top the lavash bread. Cover in lettuce. I used spring mix, but you can use spinach or any lettuce of your choosing. Thinly slice tomato and place two slices on each sandwich.
- When roasted vegetables are ready place about 3 strips of eggplant. zucchini, and red pepper on each sandwich. Stuff with more or less vegetables depending on how much you like.

- Chicken Shawarma: mix all the ingredients except the oil in a bowl. Place the chicken in the bowl and coat it well, cover it, and place it in the refrigerator for at least 4 hours up to 24 hours.
