GUACAMOLE APPETIZER SQUARES

For ages, my brother's family and I have gotten together on Christmas Eve, and always eat snacks while we open our presents. This Tex-Mex spin on classic appetizer pizza is one we have again and again. -Laurie Pester, Colstrip, Montana

2 tubes (8 ounces each) refrigerated crescent rolls
1-1/2 teaspoons taco seasoning
1 package (1 pound) sliced bacon, diced
1 package (8 ounces) cream cheese, softened
1-1/2 cups guacamole
3 plum tomatoes, chopped
1 can (2-1/4 ounces) sliced ripe olives, drained

Steps:

  • Unroll both tubes of crescent dough and pat into an ungreased 15x10x1-in. baking pan; seal seams and perforations. Build up edges. Prick dough with a fork; sprinkle with taco seasoning. Bake at 375° for 10-12 minutes or until golden brown. Cool completely on a wire rack., In a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels. In a small bowl, beat cream cheese and guacamole until smooth., Spread cream cheese mixture over crust. Sprinkle with bacon, tomatoes and olives. Refrigerate until serving. Cut into squares.

A creamy pasta dish with many different delicious flavors. Serve with garlic bread and a green salad, if desired.

12 ounces spaghetti
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed tomato soup
2 cups shredded Cheddar cheese
1 pound kielbasa sausage, cut into 1 inch pieces

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and reserve.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, combine cream of mushroom soup, tomato soup, cheese, kielbasa and pasta; mix well. Pour mixture into a 9x13 inch baking dish.
  • Bake in preheated oven for 30 minutes or until bubbly; serve.

After lots of tweaking trying to replicate my favorite Mexican restaurant's recipe, I came up with this masterpiece! It's quite addictive - just warning! And I think it turned out even better than my favorite restaurant's version. I'm confident this will become your go-to queso recipe. Enjoy!

cooking spray
1 pound processed cheese (such as Velveeta®), cubed
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10 ounce) can diced tomatoes with green chiles (such as Rotel®)
1 (5 ounce) can evaporated milk
½ cup sour cream
⅓ cup 2% milk
⅓ (8 ounce) package cold cream cheese, cubed
1 tablespoon vegetable oil
1 poblano pepper, seeded and chopped
½ yellow onion, chopped
2 small jalapeno peppers, seeded and chopped
⅓ cup canned chopped green chiles
2 teaspoons garlic, minced
2 tablespoons chopped fresh cilantro
½ cup Mexican-style shredded four-cheese blend

Steps:

  • Turn a slow cooker (such as Crock Pot®) on High; coat lightly with cooking spray. Fill with processed cheese, mushroom soup, diced tomatoes with green chiles, evaporated milk, sour cream, milk, and cream cheese. Cover with the lid. Cook until mostly melted, about 1 hour.
  • Heat oil in a skillet over medium-high heat. Saute poblano peppers, yellow onion, and jalapeno peppers until softened, about 5 minutes. Transfer vegetables to the slow cooker; add green chiles, garlic, and cilantro. Cover and continue cooking until cheese is completely melted, about 20 minutes. Add the Mexican cheese blend; stir until heated through, about 10 minutes more.

1/4 cup sour cream
1/4 teaspoon ground cumin
3 dashes Tabasco sauce
Salt and freshly ground pepper, to taste
3 ripe plum tomatoes, seeded and cut into 1/4-inch dice
1/4 cup diced (1/4 inch) red onion
1/4 cup chopped fresh cilantro leaves or flat-leaf parsley

Steps:

  • Coarsely mash the avocados in a bowl with the lime juice. Stir in all the remaining ingredients.Makes 3 cups. Per 2 tablespoons: 50 calories, 3g carbohydrate, 1g protein, 4g fat, no cholesterol.

1 roma (plum) tomato, diced

1 serrano chile pepper, seeded and minced
½ teaspoon kosher salt

1 teaspoon Worcestershire sauce
3 drops hot sauce
6 cilantro leaves, minced
1 tablespoon fresh lime juice

Steps:

  • Combine the avocado, tomato, onion, serrano chile, salt, pepper, garlic powder, Worcestershire sauce, hot sauce, and cilantro leaves in a bowl and mix. Pour lime juice over the top of the guacamole. Serve immediately. To store for later use, place avocado pit in the bowl with the guacamole and then cover with plastic wrap, pressing the wrap down to the surface of the guacamole and store in refrigerator.
