LAURA'S SOUTHWEST TATER TOT HOTDISH

Laura's Southwest Tater Tot Hotdish image

I developed this recipe because the usual tater tot hotdish didn't have enough pizazz. After a couple of tries I think I've found the perfect combination of ingredients that's pleasing for many different people.

Time 1h15m

Number Of Ingredients 7

16 ounces of seasoned tater tots
16 ounces ground turkey
1 (10 3/4 ounce) can cream of chicken soup
1 (10 ounce) can green enchilada sauce (med hot)
1 (15 ounce) can black beans with jalapenos and lime juice

Steps:

  • Line a 8 x 8 pan with frozen tater tots and let them thaw completely for several hours.
  • Cook the ground turkey in a separate pan and drain off fat.
  • Add soup and fajita seasoning to the cooked turkey. Mix well & set aside.
  • Pour the green enchilada sauce over the thawed tots.
  • Pour black beans on top (as well as liquid in the can) and spread evenly.
  • Add half of the shredded cheese on top of beans.
  • Add turkey mixture. Top with the remaining cheese.
  • Cover with tinfoil and bake in preheated oven of 350 degrees for 1 hour.
  • Note: If you like a little crunch in your hotdish I break up some tortilla chips and mix in the finished product.

HOTDISH (TATER TOT CASSEROLE)

Hotdish (Tater Tot Casserole) image

Hotdish is an easy, one-dish dinner often served in Minnesota at such large gatherings as family reunions, potlucks or church suppers. Don't be turned off by its humble appearance; the combination of cream of mushroom soup, corn, green beans, beef and a delightful crispy potato topping (the more taters, the better!) is universally likeable.

Time 1h35m

Yield 8 servings

Number Of Ingredients 8

1/4 cup extra-virgin olive oil
1 medium yellow onion, finely chopped (about 2 cups)
1 pound 80-percent lean ground beef
Kosher salt and freshly ground black pepper
2 cups frozen cut green beans, thawed (8 ounces)
1 3/4 cups frozen corn kernels, thawed (8 ounces)
Two 10-ounce cans condensed cream of mushroom soup
1 pound frozen potato tots

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the oil to a large skillet over medium heat. Add the onions and cook until soft and beginning to brown, about 15 minutes. Add the beef to the onions and cook until the meat is brown, stirring and scraping the bottom of the skillet to release the yummy brown bits, about 10 minutes. Season with salt and pepper.
  • Transfer the beef and onion mixture from the skillet into a 9-by-13-inch baking dish. Scatter the green beans and corn evenly on top. Spread the cream of mushroom soup over top and top with frozen potato tots. Bake uncovered for 1 hour; the potato tots should be golden brown. Serve.

TATER TOT HOTDISH

Tater Tot Hotdish image

I'm originally from Minnesota, and if Minnesota is famous for one thing, it's hotdish. You might know it better as casserole, or something like that, but in Minnesota, it's hotdish. This is my mom's recipe, the same one that she used to make for me when I was little.

Categories     One Dish Meal

Time 1h10m

Yield 4-6 , 4-6 serving(s)

Number Of Ingredients 4

1 lb ground beef
1 (1 lb) package tater tots (you probably won't use the whole package, but this is usually the smallest size I can find)
2 (10 ounce) cans condensed cream of mushroom soup (or 3 cans if you want it extra creamy)
1 (14 ounce) can vegetables (or 2 cans, whatever kind you like, I like sweet corn, my mom uses green beans)

Steps:

  • Preheat oven to 350 degrees.
  • While the oven is preheating, brown the ground beef (seasoning to taste as you cook) and drain off the grease.
  • Spread the beef in the bottom of a 2 to 2 1/2 quart baking dish.
  • Drain the liquid off the vegetables and spread them over the meat.
  • Using a rubber spatula, spread the cans of soup over the top of the vegetables and meat. Use the soup as is, straight from the can. Do NOT mix it with anything.
  • Arrange a layer of tater tots over the top of that.
  • Bake, uncovered, at 350 degrees for 50 minutes.
  • Top with your favorite variety of shredded cheese as you serve.
