TEXAS COWBOY STEW
Hearty, filling and man-pleasing describes this stew. Link sausage, cumin, chilies, and chili powder is what gives this soup its Southwest flavor. This dish is quick, easy, and tastes best when it simmers in a slow cooker or even on the stove all day. Bake some Mexican cornbread, toss a simple green salad, and you have a great meal.

Steps:
- Crumble the ground beef into a large skillet over medium-high heat. Add the sausage, garlic and onion; cook and stir until the meat is no longer pink. Drain off grease, and transfer the contents of the skillet to a large pot.
- Pour the tomatoes into the pot with the meat, and stir in the potatoes, pinto beans, corn, diced tomatoes with chilies, mixed vegetables and water. Season with cumin, chili powder, salt and pepper. Cover, and simmer over medium-low heat for at least 1 hour. Stir occasionally. The longer this stew cooks, the better it gets.

COWBOY STEW II
I learned this recipe in the Boy Scouts and it is the perfect recipe for guys living on their own. It's quick and easy and very difficult to mess up. If you have a slow cooker, let it stew for a day or so. You'll be ready to go out and herd cattle after eating this! Serve with large pieces of crusty white bread.

- Brown the ground beef in a skillet over medium heat until no longer pink. Drain off any excess grease.
- In a stock pot or Dutch oven, combine the ground beef, tomatoes, corn, green beans, red beans, and onion. Season with oregano, cayenne pepper, and salt and pepper to taste. Cover and simmer for at least 50 minutes over medium to low heat. The longer it cooks, the better it gets!

"COWBOY" STEW

- Brown bacon in a large (8-quart capacity) pot. Add beef and brown in the bacon fat. Add onions, celery and carrots and saute for about 5 minutes. Add red wine and beef broth, and simmer until reduced by half. In a small bowl, mix flour and oil, then stir this mixture into the stew and let simmer for a few minutes to thicken and integrate flavors. Add potatoes, okra and bay leaves to the stew and let cook until potatoes are fork tender. Season, to taste, with salt and pepper.
COWBOY STEW
This is delicious and very easy to make! I like making this because it's tasty and it makes plenty of leftovers for later in the week. And it's even better heated up a day or two later! Serve with homemade cornbread! Found this recipe in the Texas Country Reported Cookbook, which is one of my favorites! I'm not real sure about the cooking time, but I think it takes about an hour!

This recipe was given to me by a friend several years ago. I made some changes to make it my own. It's so quick and so easy and everyone loves it, including kids. This is also a meal your teenager can fix on those nights you have to work late.

Steps:
- 1. Brown ground beef in stew pot.
- 2. While beef is browning, peel and dice potatoes. When beef is browned, add potatoes, tomato sauce and can of water. Turn down heat and cover. Cook for approximately 15 minutes or until potatoes are tender.
- 3. Add cans of corn, peas and beans,undrained. Cook 5 more minutes until hot. There's no need to add salt since the canned vegetables have salt in them.
- 4. You can spice up this recipe by adding a can of Ro-tel tomatoes or a package of taco seasoning mix.
