I made this not long ago, this is from the Dole website. This was fantastic, so easy to make and so so so tasty, if you like pineapple you will love this.

1 (20 ounce) can crushed pineapple, Dole undrained
1/2 cup sugar
2 tablespoons cornstarch
1/4 teaspoon salt (optional)
1 tablespoon butter or 1 tablespoon margarine
1 tablespoon lemon juice
pastry for a double-crust 9-inch pie

Steps:

  • Combine crushed pineapple, sugar, cornstarch and salt in saucepan.
  • Cook, stirring, until thickened and clear.
  • Stir in butter and lemon juice.
  • Cool slightly.
  • Pour filling into unbaked 9-inch pastry shell.
  • Cut remaining pastry into 1-inch wide strips for lattice top.
  • Weave strips crisscross over pie to make lattice top.
  • Pinch edges.
  • Bake at 400°F., 25 to 30 minutes or until lightly golden brown.

Pineapples that have been poached in rum, sugar, and vanilla are baked beneath a rich dough woven into a geometric pattern, yielding a dessert that's a delicious departure from the holiday standards.

All-purpose flour, for surface
Crostata Dough
1 large pineapple (4 1/2 pounds), peeled, quartered, and cored
1/4 cup packed light-brown sugar
1/4 cup granulated sugar
1 vanilla bean, split and scraped, pod reserved
2 tablespoons fresh lemon juice
1/2 cup dark rum, such as Myers's
1 large egg yolk
2 tablespoons heavy cream

Steps:

  • On a lightly floured surface, roll each disk of crostata dough into a 9-by-12-inch rectangle, 1/8 inch thick. Place 1 rectangle on a parchment-lined baking sheet, and freeze until firm, about 30 minutes. Fit the other rectangle into an 8-by-11-inch fluted rectangular tart pan with a removable bottom. Trim dough flush with top edge of pan. Refrigerate until ready to use.
  • Make the lattice: Remove baking sheet from freezer. Using a clean ruler as a guide, cut dough rectangle into eighteen 1/2-inch-wide strips using a sharp knife or a fluted pastry wheel. Lay 9 strips of dough on another baking sheet in pairs of parallel lines that extend slightly past the length of the tart pan. Starting in the center, weave 1 new strip under and over the strips on the baking sheet. Weave a second strip inch away, this time weaving over then under. Repeat, weaving pairs of strips across half of the tart, spacing pairs 1 inch apart. (If dough strips become too soft, return to freezer until firm.) Return to center, and repeat with remaining dough strips to form a lattice pattern. Freeze until ready to use.
  • Cut each pineapple quarter crosswise into 1/3-inch-thick slices. Combine sugars, vanilla seeds and pod, and lemon juice in a large saute pan. Add pineapple, and cook over medium heat, stirring until sugars dissolve and mixture becomes saucy, about 3 minutes. Add rum, and simmer until pineapple has softened and almost all of the liquid has evaporated, about 20 minutes. Remove from heat, and let cool in pan. Discard vanilla pod.
  • Remove tart pan from refrigerator. Spread pineapple mixture evenly on dough. Combine yolk and cream in a small bowl, and brush some along top edges of tart. Carefully slide frozen lattice onto tart, centering it over filling, and press edges to seal. Trim excess dough. Brush top of lattice with egg wash. Refrigerate, uncovered, until firm, about 1 hour.
  • Preheat oven to 400 degrees. Bake tart for 15 minutes. Reduce heat to 375 degrees, and continue baking until crust is golden and filling is bubbling, 40 to 45 minutes. (If crust browns too quickly, tent edges with foil.) Let cool in tart pan on a wire rack. Unmold, and serve immediately.

2 (20 ounce) cans crushed pineapple in syrup
1/4 cup cornstarch
1/3 cup granulated sugar
1 tablespoon butter
1 pastry for a double-crust 9-inch pie

Steps:

  • In a heavy saucepan mix together the pineapple, undrained and the sugar and cornstarch.
  • Bring to a boil over medium heat.
  • Boil for 2 minutes, stirring constantly.
  • Add the butter, stir until melted.
  • Remove from heat, cool to room temperature while oven is preheating to 425°F and prepare the pie crust in a 9-inch pan.
  • Put the cooled filling into the prepared pie crust.
  • Cover with top crust, seal the edges and cut a couple vents in the top crust.
  • Place in oven.
  • Bake at 425°F for 35 minutes.

2 Tbsp cornstarch
1 Tbsp butter or margarine
1 Tbsp lemon juice
1 pkg pie crust for 9 in. pie

Steps:

  • 1. Mix together pineapple, sugar, cornstarch & salt in pan. Cook & stir until thickened and turns clear. Stir in butter & lemon juice. Cool about 10 min.
  • 2. Pour into unbaked 9" shell. Cut remaining crust into 1 " strips for lattice top. Weave strips crisscross over pie. Pinch edges. Egg wash the crust. Sprinkle top with a little sugar & cinnamon.
  • 3. Bake at 400 degrees for 25-30 min. until light golden brown.

1 16-ounce can unpeeled apricot halves in heavy syrup, well drained, syrup reserved
1 cup diced dried apricots (about 5 ounces)
3/4 cup sugar
1/4 cup cornstarch
2 tablespoons frozen pineapple juice concentrate, thawed
1 tablespoon fresh lemon juice
4 cups 1/2-inch pieces fresh peeled cored pineapple
1/2 cup cranberries
2 tablespoons (1/4 stick) unsalted butter
For crust
2Easy Pastry Dough disks
1 egg, beaten to blend (for glaze)

Steps:

  • Make filling:
  • Bring reserved apricot syrup and dried apricots to boil in heavy small saucepan. Remove from heat. Let stand until apricots soften, about 10 minutes. Drain apricots; discard syrup.
  • Stir sugar, cornstarch, pineapple juice and lemon juice in heavy medium saucepan until blended and smooth. Mix in pineapple. Let stand until juices form, about 15 minutes. Cook over medium heat until mixture boils and is very thick, stirring often, about 8 minutes. Remove from heat. Mix in cranberries, butter and dried apricots. Cool completely. (Can be made 8 hours ahead; let stand at room temperature.) Gently mix in canned apricots.
  • Make crust:
  • Position rack in lowest third of oven and preheat to 400°F. Roll out 1 dough disk on floured surface to 13-inch round. Transfer to 9-inch-diameter glass pie dish. Fold overhang under.
  • Roll out second dough disk on floured surface to 13-inch round. Cut into 1/2-inch-wide strips. Brush inside and top edge of crust with glaze. Spoon filling into crust. Arrange 7 pastry strips across top of pie, spacing 1/2 inch apart; brush with glaze. Arrange 7 more strips atop pie in opposite direction. Tuck ends of pastry strips under crust at edge; press to seal. Crimp edge. Brush lattice and edge with glaze.
  • Bake until lattice is golden and filling starts to bubble, about 45 minutes. Transfer to rack; cool completely. (Can be made 1 day ahead. Let stand at room temperature.)

¾ cup white sugar
3 tablespoons cornstarch
1 (20 ounce) can crushed pineapple with juice
1 tablespoon lemon juice
2 tablespoons milk

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a medium saucepan combine sugar, cornstarch, pineapple with juice, and lemon juice. Cook over medium heat, stirring constantly until thickened, then allow to boil 1 minute.
  • Cool slightly and pour mixture into pastry-lined pie pan. Cover with top crust and seal. Make a few steam vents in crust, then brush with milk and sprinkle with sugar. Place in preheated oven and bake for 35 minutes. Serve chilled or at room temperature.

This is another Italian Easter favorite. Nice, but not too sweet. I buy two frozen Pie crusts and use one for the pie and the other I remove and flatten out, to cut into strips and make lattice pattern on top. Delicious! Enjoy!

2 tablespoons cornstarch
1/2 cup sugar
1 cup ricotta cheese
3 ounces cream cheese
1 egg
1 tablespoon rum (optional)
1/4 cup sugar
2 pie crusts, unbaked
1 egg
1 tablespoon milk

Steps:

  • Preheat oven to 425°F.
  • In saucepan combine pineapple, cornstarch and 1/2 cup sugar. Mix and bring to low boil. Continue to cook until slightly thickened. Remove and set aside.
  • In mixing bowl combine Ricotta, cream cheese, 1/4 cup sugar and 1 egg and rum if you want. mix until smooth.
  • Pour into pie shell.
  • Spread pineapple mixture evenly on top. Slowly add over the Ricotta mixture and try to cover evenly.
  • Cut 2nd pie crust into 1" strips and arrange over the top in a lattice fashion.
  • Mix remaining egg and milk in small bowl.
  • Brush egg/milk mixture over top of pie.
  • Bake in 425°F oven for 15 minutes.
  • After 15 minutes, turn heat down to 375°F and cook for 20-25 minutes more. You want the top to be a nice golden brown and the mixture will be slightly "jiggly".
  • Remove from oven and allow to cool for 1 hour before putting in fridge. It's best to let it sit in fridge for at least another hour before serving.
  • Enjoy!
