CHICKEN AND BACON PIE



Chicken and bacon pie image

This chicken and bacon pie would make a wonderful centrepiece for a family meal. My granddaughters Abby and Grace helped me to make it for the TV programme. For this recipe you will need a 1.75 litre/3 pint shallow, wide-based ovenproof dish, about 25cm/10in in diameter.

6 skinless chicken legs (thigh and drumstick)
4 celery sticks, diced
4 bay leaves, roughly sliced
200ml/7fl oz dry white wine
300ml/10fl oz chicken stock
250g/9oz smoked back bacon (about 7 rashers), cut into small pieces
1 large onion, roughly chopped
50g/1¾oz butter
60g/2¼oz plain flour, plus extra for dusting
2 tbsp full-fat crème fraîche
1 tbsp grainy mustard
2 x 375g packets ready-rolled, all-butter puff pastry
1 egg, beaten
salt and freshly ground black pepper

Steps:

  • Preheat the oven to 160C/140C Fan/Gas 3.
  • Put the chicken legs, celery and bay leaves into a large ovenproof saucepan, pour over the wine and stock and season with salt and freshly ground black pepper. Bring to the boil on a medium-high heat, cover with a lid and transfer to the oven for 30-40 minutes, or until the chicken legs are cooked and tender. Set aside to cool.
  • Once cool, remove the meat from the chicken bones. The bones can be reserved and used for a stock. Break the meat into bite-sized pieces before transferring to a bowl. Strain the stock, reserving the celery and discarding the bay leaves, and measure out the liquid. You should have about 750ml/1 pint 6fl oz; if not, make up to this amount with a little extra stock or white wine.
  • Heat a large frying pan and fry the bacon pieces on a medium-high heat for 3 minutes. Add the onion, cover with a lid and fry for a further 10 minutes until the onion is softened. Add the butter, stir until melted, and then sprinkle in the flour to make a roux. Pour the reserved liquid into the roux a little at a time, whisking as you add, and stir over a high heat until thickened to a smooth sauce consistency.
  • Add a little salt and pepper, the reserved celery, crème fraiche and mustard and mix to combine before adding the chicken pieces. Spoon the filling into the ovenproof dish and level the top. Leave until cool and then chill, covered, in the fridge for 30 minutes.
  • Meanwhile, prepare the pastry for the pie. On a lightly floured work surface, roll out each of the pastry sheets to about 3mm/⅛in thick. Cut each piece into long, thick ribbons, about 3cm/1¼in wide. You will need to make enough to cover the top of the dish, about 16 in total. Weave the ribbons together on a piece of baking paper, until you have a pastry top that is large enough to cover your pie. Chill in the fridge for 15 minutes to firm up or, if time allows, freeze until solid.
  • Take the filling out of the fridge and brush the edges of the dish with a little beaten egg. Carefully slide the pastry lattice from the baking paper and lay on top of the chilled filling. Trim the excess pastry around the rim and lightly press to seal.
  • Increase the oven temperature to 200C/180C Fan/Gas 6. Brush the pastry with the remaining beaten egg and bake for 30 minutes until the pastry is golden and cooked through, and the chicken is bubbling. Serve hot.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Stir chicken, cream of chicken soup, roasted red peppers, salsa, sour cream, green onions, and chili powder together in a 12x8-inch baking dish.
  • Bake in the preheated oven until bubbling, about 15 minutes. Remove dish from oven and stir.
  • Separate the breadsticks into 16 strips. Arrange the strips, lattice-style, over the chicken mixture, overlapping strips as necessary to fit the dish.
  • Bake in the preheated oven until breadsticks are golden, about 15 minutes more.

2 cups cooked chicken cubed
1 can condensed cream of potato soup 10.75 oz
1 medium onion chopped
1 cup milk
1 cup Cheddar cheese shredded
1/2 teaspoon seasoned salt
Salt & pepper
Red pepper flakes
1 package crescent rolls 8 oz

Steps:

  • 1. In a large bowl, combine veggies, chicken, soup, milk, cheese, onions and seasonings. Transfer to a greased 13x9 in baking dish. 2. Unroll the crescent roll dough and separate into two rectangles. Seal the perforations; cut each rectangle lengthwise into 1/2 inch strips. Form a lattice crust over the chicken mixture. 3. Bake, uncovered at 375 degrees for 35-40 minutes or until golden brown.

A cheesy baked dish that is easy to make. A great way to dress up chicken, with the crescent roll dough.

Number Of Ingredients 11

3 (8 ounce) tubes refrigerated crescent dinner rolls
4 cups cubed chicken
6 ounces shredded cheddar cheese
3 cups frozen chopped broccoli, thawed, and drained
1 (10 3/4 ounce) can condensed cream of chicken soup, undiluted
1 1/3 cups milk
2 tablespoons Dijon mustard
1 tablesapoon dried onion flakes
1/2 teaspoon salt
1 dash pepper
1 egg, lightly beaten

Steps:

  • Unroll two tubes of thre crescent roll dough, and seperate into rectangles.
  • Place rectangles in an ungreased 15x10x1 baking pan.
  • Press onto bottom and 1/4 inch up the sides of pan to form a crust, sealing the seams and perferations.
  • Bake 375 degrees for 5-7 minutes or until light golden brown.
  • In a large bowl, combine chicken, cheese, broccoli, soup, milk, mustard, onion, salt, and pepper, and spoon over crust.
  • Unroll remaining dough, divide into rectangles, and seal perferations.
  • Cut each rectangle into 4 (1 inch strips).
  • Unroll strips, making a lattice design, on to of chicken mixture.
  • Brush with egg.
  • Bake 17-22 minutes longer or until crust is golden brown, and filling is bubbly.

  • To make the pastry, put the flour, salt and butter in the bowl of a food processor and pulse until the mixture resembles fine crumbs. Add the beaten eggs and 2 tbsp iced water and pulse until the mixture starts to come together into a ball, adding a little more water if needed. (Alternatively, put the flour and salt in a large mixing bowl and rub in the butter until the mixture resembles fine crumbs before adding the egg and 2 tbsp iced water, adding more if needed.) Turn out onto a lightly floured work surface and knead until smooth. Wrap and chill in the fridge for 30 minutes to rest.
  • Meanwhile, heat the oven to 200°C/180°C fan/gas 6 and put a baking sheet in the oven. Heat the oil in a large frying pan over a medium heat. Working in batches, fry the chicken for 2-3 minutes on each side until browned and cooked through. Remove from the pan and set aside.
  • Wipe the pan clean, then return to a medium heat. Add the butter, garlic and leeks and cook for 8-10 minutes until starting to soften. Stir in the flour, then gradually add the stock, whisking continuously to stop lumps forming. When you have added all the stock and the mixture has thickened (about 4-5 minutes), stir in the cream and both mustards, followed by the chicken and ham. Season lightly with salt and pepper, then set aside to cool (see tips).
  • While the mixture is cooling, roll out two thirds of the pastry on a lightly floured surface to 3mm thick and large enough to line the base and sides of your pie dish. Line the pie dish with the pastry, then trim off any excess and reserve to decorate the pie. Pour in the cooled chicken mixture.
