¾ cup brown sugar
⅓ cup water
2 tablespoons all-purpose flour
6 Granny Smith apples - peeled, cored and sliced
½ cup chopped pecans
½ cup chopped dried mixed fruit
1 sheet frozen puff pastry, thawed
1 tablespoon white sugar
¼ teaspoon ground cinnamon

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Stir together brown sugar, water, and flour in a large bowl until smooth. Add the apples, pecans, and dried fruit; toss in the brown sugar mixture until well coated. Pour into a 9x13 inch baking dish. Cut the puff pastry into ten 1-inch strips with a pizza cutter. Lay 5 of the strips over the apples lengthwise, and cut the remaining 5 strips in half. Place the 10 smaller strips over the apples widthwise to create the lattice. Stir together the white sugar and cinnamon, and sprinkle over the lattice.
  • Bake in preheated oven until the apple mixture is bubbling, and the lattice is golden brown, 40 to 45 minutes.

5 peeled Cortland apples, cut in half and cored
1/2 cup Heaven & Earth Lemon Juice
1/2 cup sugar
1 teaspoon Gefen Cinnamon
1/4 teaspoon kosher salt
10 ounces Peppermill Bavarian Cream
1 package 5-inch puff pastry squares
Gefen Confectioners' Sugar

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Line a sheet pan with foil.
  • Brush apple halves with lemon juice. Stir together sugar, cinnamon and salt. Toss apple halves with sugar mixture until well-coated. Set aside.
  • Cut puff pastry squares using a lattice roller, flouring if necessary to keep it from sticking.
  • Place one apple half, round side down, on each pastry square. Put one heaping tablespoon Bavarian Cream in the hollow center of each apple. Gently stretch the puff pastry lattice over the apple to completely enclose the cream. Dab with water if needed to keep pastry sealed.
  • Flip over the puff and place, edge-side down, on the lined sheet pan.
  • Bake 35 to 40 minutes or until apple is bubbling and pastry is golden.
  • Remove from oven and dust with confectioners' sugar. Serve warm or room temperature.

1 sheet puff pastry, thawed
2 apples, peeled,cored and halved
2 tablespoons butter, melted
1 teaspoon cinnamon
1 teaspoon sugar
1 egg wash

Steps:

  • Cut the puff pastry into 9 equal squares.
  • Taking one of the squares, make 5 equal 1-inch (2 cm) cuts on 2 sides of the square.
  • Make 3 vertical 1-inch (2 cm) cuts in between the edge of the uncut side and the 2 slits on the cut sides.
  • Make 2 vertical 1-inch (2 cm) cuts under the top slit and above the bottom slit.
  • Repeat this pattern until you have 6 rows with 3 cuts and 5 rows with slits and 2 cuts. Set aside
  • Preheat oven to 400˚F (200˚C).
  • Take another square place one of the apple halves in the center, peeled side facing up. Brush egg wash on each side of the square around the apple.
  • Combine the butter, cinnamon and sugar in a bowl. Brush over the apple until it is completely coated.
  • Take the other cut square of dough and stretch it over the apple, your cut should look like holes in the dough.
  • Pinch the bottom of the dough together until it is sealed.
  • Brush with egg wash and sprinkle with coarse sugar.
  • Bake for 15-20 minutes until pastry is golden brown and puffed.
  • Enjoy!

APPLE TURNOVERS

Treat family and friends to these moreish apple turnovers. With an apple and cinnamon filling encased in puff pastry, they're delicious served with ice cream

Number Of Ingredients 8

2 medium-large Bramley apples, peeled, cored and roughly chopped
50g golden caster sugar
½ tsp ground cinnamon
1 tbsp butter
1 Gala or sweet dessert apple, peeled, cored and cut into 1cm dice
320g pack puff pastry
2 tbsp milk to glaze
2 tsp demerara sugar

Steps:

  • Put the Bramley apple, sugar and cinnamon in a small pan with 1 tbsp water. Cover with a lid and simmer over a low heat for 10-15 mins until the apple breaks down and turns into a compote.
  • Stir in the butter and the Gala apple and cook for a further 5 mins, uncovered, until the Gala apple is just soft but retaining its shape, and any excess water has evaporated to make a thick compote around the Gala chunks. Remove from the heat and leave to cool.
  • Heat the oven to 220C/200C fan/gas 7. Unravel the puff pastry sheet out on a work surface, and cut into 4 even rectangles. Divide the apple filling to one side of each of the puff pastry rectangles, leaving a 1cm border. Brush the border with milk and fold over the empty side of pastry over the filling and crimp together. Brush with more milk and sprinkle over the sugar. Make a small steam hole in the middle of the turnovers.
  • Transfer to a parchment-lined baking sheet and bake for 20-25 mins until golden and puffed up. Leave to cool for 10 mins on a wire rack (the filling will be molten when it first comes out the oven) before serving warm with a scoop of vanilla ice cream, or serve at room temperature. Keep for 2 days in an airtight container.

flour , for dusting
500g puff pastry
2 Granny Smiths apples, peeled, cored and diced
140g fresh cranberries (or frozen and defrosted)
½ tsp cinnamon
½ tsp mixed spice
1 tbsp golden caster sugar , plus extra for sprinkling
zest 0.5 lemon
411g jar mincemeat
1 egg , beaten
whipped cream or brandy cream, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6 and put a baking sheet in to heat up. Lightly flour a work surface, roll out the puff pastry to a 30 x 45cm rectangle, then put on a sheet of baking parchment. Mix together the apples and cranberries, then add the cinnamon, mixed spice, sugar, lemon zest and mincemeat, and mix again.
  • Arrange the pastry in front of you with a short edge nearest to you. Spread the mincemeat mixture in a line down the centre, about 12cm wide, leaving 2cm of pastry at the top and bottom.
  • To create the lattice pattern, start at the top of the pastry and cut a 1.5-2cm-wide horizontal strip of pastry on both sides of the mincemeat filling (so it is still attached next to the filling). About 1.5cm in from the filling, cut out a 0.5cm strip of pastry and remove this, then cut another 1.5-2cm strip (you're creating a pattern like the teeth of a comb). Repeat this method until you get to the bottom of the pastry. You'll need to cut out the final strip and remove this. Fold the top and bottom flaps of pastry up and over the filling. Fold the strips of pastry diagonally over the filling, starting from the top until you reach the bottom, creating a lattice pattern. You can now chill the tart for up to 2 days, or freeze for up to 2 months.
  • Brush the tart with the egg and sprinkle with the extra sugar. Using the baking parchment, transfer the tart to the hot baking tray. Bake for 20-25 mins or until golden brown on top (add an extra 10-15 mins if baking from frozen). Leave to cool for 5 mins before serving with whipped cream or brandy cream.

2 sheets of ready rolled puff pastry
500 g sausage meat
1 slice day-old white bread, as breadcrumbs
1 apple, grated
1 onion, grated
1 teaspoon salt
1 teaspoon pepper
1 teaspoon dried sage
1/2 teaspoon nutmeg
1/2 teaspoon mustard powder (could use prepared mustard)
1/2 cup milk, for brushing

Steps:

  • Preheat the oven to 180C.
  • In a large bowl mix everything together thoroughly apart from the puff pastry.
  • Lay out 1 of the puff pastry sheets and imagine it is split into 3 equal sections.
  • Arrange half of the sausage mixture straight down the middle of the imaginary middle section and with a knife score all the way through the pastry, lines going down in a diagonal. This will make more sense as you do it.
  • Overlap strips from each side over the middle of the sausage mixture and repeat with the other sheet of pastry and other half of mixture.
  • Brush with milk
  • Bake for 15-25 minutes on a greased baking sheet until golden brown.
  • Allow to cool for 10 minutes before serving.
  • Absolutely gorgeous!

3 cups all-purpose flour
1/2 cup sugar
1-1/2 teaspoons baking powder
2 teaspoons ground cinnamon
1 egg
1-1/2 cups milk
4 medium tart apples, peeled and chopped
Confectioners' sugar
Oil for deep-fat frying

Steps:

  • In a large bowl, combine the flour, sugar, baking powder and cinnamon. In another bowl, beat the egg and milk; stir into dry ingredients just until moistened. Fold in apples. , In an electric skillet or deep-fat fryer, heat oil to 375°. Drop teaspoonfuls of batter, a few at a time, into hot oil. Fry until golden brown on both sides. Drain on paper towels; roll in confectioners' sugar while warm. Serve warm.

Steps:

  • Combine biscuit mix, ¼ cup sugar and ½ teaspoon cinnamon.
