5 lbs meaty oxtails
kosher salt & freshly ground black pepper
1/4 cup all-purpose flour
2 tablespoons olive oil
1 large onion, chopped
2 carrots, cut into half moons, about 1/4-inch thick
2 stalks celery, cut into 1/4-inch thick pieces
3 tablespoons chopped fresh thyme leaves
4 garlic cloves, peeled and smashed
1/4 cup tomato paste
1 (750 ml) bottle dry red wine
2 cups beef broth
1 (15 ounce) can diced tomatoes, with juice
2 bay leaves
8 ounces button mushrooms
2 tablespoons red wine vinegar

Steps:

  • Wash and dry the oxtails. Add the meat to a large bowl and season with salt and pepper, to taste. Toss the meat in the flour until lightly coated.
  • Add the olive oil to a large Dutch oven over medium heat. Brown the oxtails on all sides, in batches, until well browned. Transfer the meat to a plate and pour off some of the drippings, if necessary.
  • Add the onions, carrots, celery, thyme, and garlic to the pot and saute until the onions are tender and beginning to brown, about 5 minutes. Season with salt and pepper, to taste. Stir in the tomato paste and toast. Deglaze the pot with the bottle of red wine and stir up all the browned bits on the bottom of the pan. Stir in the beef broth, tomatoes with their juices and the bay leaves.
  • Add the browned beef back into the pot along with any accumulated juices that may have collected on the plate. Bring the stew to a boil, then reduce the heat to a low simmer. Cover and cook until the beef is tender and falling off the bone, about 3 1/2 hours.
  • Stir in the mushrooms and cook uncovered, for 30 minutes more. Taste for seasoning. Add salt and pepper, if needed, and stir in the red wine vinegar to brighten the flavor. Remove the meat from the pot and pull the meat off the bones, then add back to the pot. Discard the bones. Transfer the stew to a serving dish and serve hot over Buttered Noodles.

2 tablespoons grated Parmesan
1 tablespoon lemon juice

Steps:

  • Melt 2 tablespoons butter in a large skillet over medium heat. Add the shallot and garlic and saute until tender. Season with salt and pepper, to taste. Add the remaining 2 tablespoons butter and melt. Stir in the chives, Parmesan and lemon.
  • Add the noodles to the skillet and toss to combine. Transfer to a serving bowl and serve.

12 ounces dried lima beans
4 pounds oxtails
2 large Vidalia onions, chopped
3 scallions, chopped
4 garlic cloves, smashed
1 bunch fresh thyme
2 tablespoons red pepper flakes
4 teaspoons hot paprika
2 bay leaves
2 tablespoons hot sauce
4 tablespoons gravy master
6 cups low-sodium beef broth
4 teaspoons tomato paste
2 tablespoons salt
Right rice, recipe follows
2 cups rice

Steps:

  • In a large bowl, cover lima beans with water, cover with a towel and soak overnight.
  • In a large pot, add oxtails, onions, scallions, garlic, thyme, red pepper, paprika, bay leaf, hot sauce, and gravy master and marinate at least 4 hours or overnight in the refrigerator, stirring occasionally.
  • Add enough water to just cover the oxtails and bring the mixture to a boil. Lower to a simmer, cover and cook 2 hours. Every 30 minutes for 2 hours add 2 cups of water or broth, alternating, as necessary, to keep oxtails covered with liquid.
  • At 2 hours, add the beans, tomato paste, and 2 more cups of beef broth and water, if needed. Bring to a boil then simmer uncovered 2 hours, skimming fat off top and stirring occasionally. In the last 1/2 hour of cook time, season with 2 tablespoons salt. Serve with rice.
  • Rinse rice 3 times to remove starch. Put rice in a medium saucepan. Fill saucepan with enough water to cover the rice by 1/2-inch or measure by placing your thumb tip on the rice and filling the pot with water until the water reaches the middle of your thumbnail. Bring rice to a simmer, cover and cook until tender and liquid is evaporated, about 15 minutes. Remove from heat and let rice stand another 5 minutes, covered.
  • Yield: 4 to 6 servings

10 oxtail pieces
1/2 bottle cabernet
1 pkg fresh portabello mushrooms stems removed
1 can(s) small tomato paste
1 large yellow onions, sliced thin
2 stalk(s) celery, chopped
3 large carrots, peeled and chopped
16 oz braising sauce of choice
10 clove garlic, peeled
1 c peeled pearl onions
4-5 bay leaves
salt & pepper taste
1 small red pepper, chopped

Steps:

  • 1. This one actually cooked with coals in a Dutch oven, but can easily be done on the home oven. So gather your supplies and prep the dutch oven, by lightly oiling. Preheat oven to 350
  • 2. In one pot, a 12 dutch oven. Onion, carrots, celery and peppers in the bottom. Place in Oxtail, next to each other, filling up the pot. Spread out the placement of the garlic cloves, tucking them in between oxtails. Season to taste. I use Sazon, a spice in the ethic part of the supermarket. Throw in a few bay leaves. Pour in 1/2 bottle of Cabernet, and braising liquid. I love a mild BBQ sauce, it's complete and complex, a big bang for the buck. Top with a few of the veggies, cover and put in oven or top with your prepared coals.
  • 3. After 45 minutes, take a peek at your masterpiece. Add the Tomato paste and the mushrooms. Rotate your pot in the oven, and let cook undisturbed for another 45-60 minutes. Till your desired tenderness has been reached
  • 4. Remove from heat, serve out of the Dutch oven or transfer to large serving platter. Serve with crusty bread. ENJOY!!!

AFRICAN-STYLE OXTAIL STEW

Oxtail is my favorite meal and I serve this recipe to all my friends and use it for my frozen food business. Everyone loves it. I call it God's food as it is so delicious! This meal is very rich, but oh so good! Oxtail is easily available here in Africa but I have heard it can be obtained in the US.

1 cup chopped celery
1 teaspoon minced garlic
1 (6 ounce) can tomato paste
2 cubes beef bouillon
10 cups water
6 whole black peppercorns
2 bay leaves
¼ cup canola oil
3 pounds beef oxtail, cut into pieces
1 large onion, chopped
salt and pepper to taste
1 (12 ounce) can kidney beans, drained
¼ cup cornstarch dissolved in
½ cup water

Steps:

  • Place celery, garlic, tomato paste, bouillon cubes, and water into a large Dutch oven; stir until the tomato paste has dissolved. Add peppercorns and bay leaves, place over medium heat and bring to a simmer.
  • Meanwhile, heat oil in a large skillet over medium-high heat. Add oxtail and cook until browned on all sides, about 10 minutes. Remove oxtail from hot oil and place into Dutch oven. Pour out all but 1 tablespoon of oil from the skillet, reduce heat to medium, and cook the onion until softened and translucent, about 5 minutes; add to oxtail.
  • Reduce heat to medium-low, cover, and simmer for 2 1/2 hours. Season with salt and pepper, recover, and continue to cook until the oxtail is tender, but not falling off of the bone, about 30 minutes.
  • Remove oxtail pieces and place into a serving dish. Add kidney beans to Dutch oven and return to a simmer. Thicken with cornstarch dissolved in water, simmer for 1 minute until thickened and clear. Pour sauce over the oxtail.

2 pounds oxtail cut up medium pieces
1 onion chopped
1 teaspoon minced garlic
1 thyme sprig
½ teaspoon smoked paprika
2 tablespoon tomato paste

1 scotch bonnet pepper
2 green onions chopped
1 teaspoon chicken bouillon powder
1 pound potatoes
2 cups baby carrots
Salt to taste

Steps:

  • Season oxtail with, salt and pepper. Set aside
  • In a large pot, heat oil over medium heat, until hot, and then add the oxtail sauté stirring, frequently, any browned bits off the bottom of the pot, until oxtail is brown. Drain any remaining oil.
  • Add onions, green onions, garlic, thyme, smoked paprika, stir for about a minute. Throw in scotch bonnet pepper, tomato paste, bay leaf, stir for another minute.
  • Then add about 6 cups of water, chicken bouillon and bring to a boil and let it simmer until tender (depending on the oxtail size and preference) about 2- 3 hours, occasionally stirring the saucepan.
  • About 15-20 minutes before you remove from the stove add carrots, and potatoes. Adjust thickness of soup with water or stock
  • Season with salt according to preference. Remove bay leaf
  • Serve warm

3 -4 lbs oxtails, cut about 1-1/2 inches thick
1 tablespoon reduced sodium soy sauce
2 tablespoons oyster sauce
2 tablespoons vodka or 2 tablespoons dry sherry
3 medium onions, divided
3 garlic cloves, minced
2 whole bay leaves
1 teaspoon oregano leaves
2 cups beef broth, divided
1 1/2 cups celery, sliced
1 lb carrot, sliced 1/2 inch thick

Steps:

  • Place oxtails in a heavy soup kettle or dutch oven. Add soy sauce, oyster sauce, and liquor. Cover and marinate for one hour.
  • Cook covered over medium heat for 30 minutes to draw out juices.
  • Uncover. Bring to a boil and turn often till meat is browned and liquid is evaporated. Add garlic, bay leaves, oregano, and one onion, coarsely chopped, along with 1/4 cup beef broth. Cook and stir to deglaze pan.
  • Add remaining beef broth. Cover and simmer gently until meat is tender when piereced (about 3 hours).
  • Remove pan from heat. Strain broth into a large saucepan or bowl. Discard onion and herbs; set meat aside. When meat is cool, remove it from bones, cut in bite-sized pieces, and return to broth. Refrigerate several hours or overnight.
  • Skim off and discard fat. Bring broth to a boil. Add celery, carrot, and 2 medium onions, coarsely chopped. Reduce heat, cover, and simmer until veggies are tender (about 20 minutes).

BEEF OXTAIL STEW

Rich, flavorful and hearty stew with beef oxtails simmered a long time on the stove.

5-6 pounds beef oxtails
1/2 cup flour
3 tablespoons oil (divided between batches of browning the oxtails)
1 cup red wine
1/3rd cup soy sauce
4 cloves minced garlic
1 15oz can stewed tomatoes (I find stewed tomatoes add more flavor than diced because there are extra spices added. )
1 15oz can tomato sauce or marinara sauce ((marinara sauce adds more flavor))
2 tablespoons tomato paste
1 tablespoon grated or finely minced ginger
1 1/2 tablespoon brown sugar
2 bay leaves
2 1/2 cups rough chopped carrots (about 4 large carrots, or 14oz)
2-3 medium russet potatoes, peeled and chunked potatoes (any type of potato should do)

Steps:

  • Wash and dry the oxtails with a paper towel. Salt and pepper them all over.
  • Dredge the oxtails with flour, and be sure to tap all the excess flour off.
  • Add 1 tablespoon of oil to the pot, and wait until the oil is hot. Then carefully place the first batch of oxtails in, one side up, with enough room for each one. Let them sit undisturbed for 1-3 minutes, until the side down is lightly browned. Then flip each of the oxtails to a different side and continue browning. Repeat until each side is browned. You may have to do 2 or 3 batches of oxtails. Use a tablespoon of oil for each new batch.
  • Set aside the oxtails in a bowl or plate.
  • Rough chop the onion and mince the garlic. Finely mince or grate the ginger.
  • Add the chopped onion, garlic, ginger, brown sugar, soy sauce, bay leaves, stewed tomatoes, tomato sauce, and wine to the same pot. Then add the oxtails back in. Fill the pot with water until the oxtails are mostly submerged, and give the pot a stir or two.
  • Bring the pot to a boil, then lower the heat to low and cover the pot. Simmer for 2 hours, until the oxtail is tender. Once in awhile, give the pot a stir and make sure the meat isn't sticking to the bottom of the pot. Simmer another 30 minutes if you want fall-off-the-bone texture.
  • Remove the bay leaves. Take the fat off the stew. It is best to wait until the stew cools so that the fat is easier to skim. You can also cool it in the fridge for 30 min to an hour and skim the fat.
  • Chop the carrots and potatoes into bite sized pieces.
  • Add the carrots and potatoes to the pot and give the pot a stir. Heat the pot up to boiling, then low-medium heat and simmer another 30-45 minutes, until the carrots/potatoes are cooked but not mushy. Careful again that the meat doesn't stick to the bottom of the pot. Once the veggies are just right, turn off the heat.
  • Serve with a big pot of rice!
