1/2 cup parmesan cheese, grated
1/2 teaspoon black pepper, to taste
2 tablespoons parsley, chopped
1 medium onion, sliced
4 garlic cloves, minced
1 medium zucchini, shredded
6 ounces mushrooms, sliced thin
1 (14 1/2 ounce) can diced tomatoes
1 (12 ounce) jar roasted peppers, sliced
3 ounces tomato paste
1 tablespoon italian seasoning
1/4 teaspoon crushed red pepper flakes (or curry paste)
1/4 teaspoon salt, to taste
1/4 teaspoon black pepper, to taste
8 tablespoons butter (1 stick)
1/2 cup flour
1 1/2 cups 2% low-fat milk
1/4 cup parmesan cheese, grated
2 eggs, beaten
1 (16 ounce) box lasagna noodles, cooked
10 ounces fresh spinach (optional)

Steps:

  • Preheat oven to 375°F In a medium bowl, mix cheese layer ingredients together well and set aside.
  • VEGETABLES: In a large skillet, heat the onion and garlic over medium heat. Sauté until the onions are translucent. Add the zucchini and mushrooms. Saute until the water has evaporated from the zucchini. Add sliced tomatoes, tomato paste and seasonings. Cook to reduce and thicken. Set aside.
  • BECHAMEL: Melt the butter in a medium saucepan over medium heat. Whisk in the flour slowly until the roux, whisk or stir for about 1-2 minutes.
  • Add the milk slowly while whisking constantly to avoid lumps. Cook over medium heat for about 5 minutes until the béchamel comes to a medium thickness (soft paste texture) Remove from heat and rest 2 minutes, stirring occasionally, to cool slightly. While whisking, slowly add the eggs a little at a time until incorporated well.
  • ASSEMBLY: To a 9x13 pan, Spread a thin layer of Bechamel sauce into the bottom of the lasagna pan. Place a layer of cooked lasagna sheets, cut to fit into the pan if necessary. Add a thin layer of cheese mixture, then some spinach, followed with a vegetable layer. Repeat.
  • Continue layering in this manner until ingredients are used up. Pour the remaining Bechamel sauce over top. Bake for 40-45 minutes or until bubbly. Let stand for 10-15 minutes before slicing.

16 uncooked lasagna noodles
1 lb lean (at least 80%) ground beef
1/2 lb bulk pork sausage
1/2 cup chopped onion
1 1/2 cups tomato pasta sauce
2 containers (15 oz each) ricotta cheese
1 box (9 oz) frozen spinach, thawed, drained and squeezed dry
2 teaspoons dried basil leaves or Italian seasoning
1 egg
3 cups tomato pasta sauce
2 cups shredded mozzarella cheese (8 oz)

Steps:

  • In 5-quart Dutch oven, cook lasagna noodles as directed on package. Drain; rinse with hot water. Drain well.
  • Meanwhile, in 12-inch skillet, cook beef, sausage and onion over medium-high heat, stirring frequently, until meat is no longer pink; drain. Stir in 1 1/2 cups pasta sauce. Reduce heat to low; simmer uncovered 10 minutes, stirring occasionally. Remove from heat.
  • In small bowl, mix ricotta cheese, spinach, basil and egg. Spread about 3 tablespoons ricotta mixture over each cooked lasagna noodle to within 1 inch of one short end. Spoon about 1/4 cup meat mixture over ricotta mixture on each. Roll up firmly toward unfilled end. Line 15x10x1-inch pan with foil. Place roll-ups, seam side down, on pan; cover loosely with foil. Freeze about 30 minutes or until firm.
  • Place frozen rolls in airtight freezer container; label. Freeze up to 3 months.
  • To bake 16 lasagna roll-ups, spray two 13x9-inch (3-quart) glass baking dishes with cooking spray. Remove roll-ups from freezer bag; place 8 in each baking dish. Cover with foil; thaw in refrigerator at least 8 hours but no longer than 24 hours.
  • Heat oven to 350°F. Pour 1 1/2 cups pasta sauce over and around roll-ups in each baking dish. Cover tightly with foil; bake 30 to 40 minutes or until hot and bubbly. Sprinkle each baking dish with 1 cup mozzarella cheese; bake uncovered 3 to 5 minutes longer or until cheese is melted. Let stand 5 minutes before serving.

4 teaspoons all-purpose flour
1 1/4 cups whole milk
1/4 teaspoon salt
1/8 teaspoon ground black pepper
Pinch ground nutmeg
1 (15-ounce) container whole milk ricotta cheese
1 (10-ounce) package frozen chopped spinach, thawed, squeezed dry
1 cup plus 2 tablespoons grated Parmesan
3 ounces thinly sliced prosciutto, chopped
1 large egg, beaten to blend
3/4 teaspoon salt, plus more for salting water
1/2 teaspoon freshly ground black pepper
1 to 2 tablespoons olive oil
12 uncooked lasagna noodles
2 cups marinara sauce
1 cup shredded mozzarella (about 4 ounces)

Steps:

  • To make the sauce: Melt the butter in a heavy medium saucepan over medium-low heat. Add the flour and whisk for 3 minutes. Whisk in the milk. Increase the heat to medium-high. Whisk the sauce until it comes to a simmer and is thick and smooth, about 3 minutes. Whisk the salt, pepper, and nutmeg into the bechamel sauce.
  • Preheat the oven to 450 degrees F.
  • Whisk the ricotta, spinach, 1 cup Parmesan, prosciutto, egg, salt, and pepper in a medium bowl to blend.
  • Add a tablespoon or 2 of oil to a large pot of boiling salted water. Boil the noodles until just tender but still firm to bite. Drain. Arrange the noodles in a single layer on a baking sheet to prevent them from sticking.
  • Butter a 13-by-9-by-2-inch glass baking dish. Pour the bechamel sauce over the bottom of the prepared dish. Lay out 4 lasagna noodles on a work surface, then spread a large spoonful (about 3 tablespoons worth) of ricotta mixture evenly over each noodle. Starting at 1 end, roll each noodle like a jelly roll. Lay the lasagna rolls seam side down, without touching, atop the bechamel sauce in the dish. Repeat with the remaining noodles and ricotta mixture. Spoon 1 cup of marinara sauce over the lasagna rolls. Sprinkle the mozzarella and remaining 2 tablespoons of Parmesan over the lasagna rolls. Cover tightly with foil. Bake until heated through and the sauce bubbles, about 20 minutes. Uncover and bake until the cheese on top becomes golden, about 15 minutes longer. Let stand for 10 minutes. Meanwhile, heat the remaining marinara sauce in a heavy small saucepan over medium heat until hot, and serve alongside.

1 tablespoon olive oil
3 cloves garlic. minced
1 medium onion, diced
900 grams minced beef
400 grams tomato puree
400 grams chopped tomatoes
3 tablespoons tomato paste
1 medium carrot, shredded
2 pieces beef cubes
1 teaspoon dried oregano
1 teaspoon dried basil
¼ teaspoon salt
¼ teaspoon ground black pepper
½ teaspoon sugar -- optional
4 tablespoons (56g) butter, room temperature
¼ cup all-purpose flour
3 and ½ cups milk
1 cup parmesan cheese, shredded
salt and ground black pepper to taste
lasagna sheets
300 grams mozzarella cheese, shredded
2 tablespoons freshly chopped parsley

Steps:

  • Heat oil in a large pot over medium heat. Saute garlic and onion and cook until fragrant.
  • Add beef and cook while breaking it up in a spoon until it turns brown or no longer pink.
  • Pour the tomato puree, chopped tomatoes and tomato paste. Mix well to combine and bring to a simmer.
  • Add the shredded carrots, beef cubes, dried oregano and basil. Season with salt and pepper, and add sugar, if using.
  • Cover and cook for about 20-30 minutes, stirring occasionally, until the sauce thickens and meat is tender.
  • Remove from heat and set aside.
  • Melt butter in a medium pan over medium heat. Reduce heat to low and add the flour and whisk for about 30 seconds or until combined.
  • Slowly whisk in 1 cup of milk until well blended. Once blended, add the remaining milk in 1 cup increments, mixing well until well after each addition. Season with salt and pepper. Note: If the sauce is too thick, add a little more milk until it comes to a creamy consistency.
  • Increase heat to medium and continue cooking the sauce until it thickens and coats the back of your spoon.
  • Add the parmesan cheese and mix until the cheese is melted. Set aside.
  • Preheat oven to 350°F / 180 °C.
  • In a 9"x9" baking pan, spoon about 1 cup of meat sauce on the base, spreading evenly. Cover with lasagna sheets (trim sheets if needed to cover the meat). Layer around to 2 cups (enough to cover the pasta) of meat sauce, followed by the white sauce and some mozzarella cheese. Repeat the same process until it comes to the top layer.
  • Pour remaining meat sauce and white sauce over the last layer of lasagna sheets. Top with mozzarella cheese and chopped parsley.
  • Bake in the preheated oven for 25 minutes or until golden brown.
  • Let it sit for at least 10 minutes before slicing. Garnish with parmesan cheese and parsley if desired.
  • Serve and enjoy!

I cut this recipe out of something (looks like maybe a newspaper a year or so ago), and it is terrific. My family doesn't eat the old fashioned lasagna anymore!

12 -15 lasagna noodles
1 1/2-2 lbs beef, ground (or use 1/2 beef and 1/2 pork)
1 package Betty Crocker's hamburger helper (or any mix of meat loaf seasonings and bread crumbs)
1 jar medium spaghetti sauce (I use garlic and onion)
1 cup parmesan cheese, shredded (not the kind in the can)
1 bay leaf
3 cups light cream or to taste milk (or a combination)
1/3 cup butter (5 1/2 Tbsp)
2 teaspoons instant chicken broth
1/3 teaspoon pepper
1 teaspoon salt
1 dash nutmeg

Steps:

  • Preheat oven to 350.
  • Cook noodles in salted, boiling water until just tender. Drain and place in large bowl of cold water and drain on paper towels.
  • Cook ground meat in microwave until done. Mix cooked meat and breading mix from meatloaf mixture until well blended.
  • Spread meat mixture in thin layer on noodles and roll up jelly roll fashion (don't roll too tightly).
  • Spread all of sauce over bottom of 9/13 baking dish and arrange roll ups, seam side down on sauce.
  • Cover with foil and bake 30 minutes at 350*.
  • Meanwhile, scald milk and bayleaf (I use microwave). Let stand 5 minutes and remove leaf.
  • Melt butter in medium sauce pan, stir in flour, and cook stirring constantly with wooded spoon until mixture bubbles.
  • Stir in scalded milk, instant chicken broth, salt, pepper and nutmeg.
  • Continue cooking and stirring until sauce thickens and bubbles (about 3 minutes), and remove from stove.
  • After rollups have baked 30 minutes, remove foil and spoon bechamel sauce over top and sprinkle with parmesan cheese.
  • Bake 10 minutes more or until bubbly hot and sauce is golden.
  • It's not nearly as hard to make as it sounds, and the results are wonderful! All you need to round out the meal is a salad, and garlic bread if desired.
