I'm always looking for great, modifiable breakfast recipes. This one can be vegetarian, dairy free, any combo of veggies or no veggies. Plus it is super easy. My whole family enjoyed it plus a neighborhood friend.

Number Of Ingredients 4

1 bag(s) crispy crowns (flat tater tots)
12 - eggs
2 cup(s) favorite omelette ingredients
8 ounce(s) cheese

Steps:

  • Preheat oven to 400 degrees.
  • Lay out crispy crowns in a single layer on the bar pan
  • Bake for 20 min. until crispy
  • While potatoes cook, mix eggs and your choice of omelet mix ins. I used bacon, spinach, and tomatoes.
  • When potatoes are crispy, take out of oven and pour egg mixture over hot potatoes. Carefully! Sprinkle with cheese.
  • Carefully return bar pan to oven and bake another 8-10 min. until eggs are set.
  • Remove from oven let rest a minute or two and slice with a pizza cutter.

  • Heat oven to 450°F. Spray bottom and sides of 15x10x1-inch pan with cooking spray. Remove pie crusts from pouches. On lightly floured surface, unroll and stack crusts one on top of the other. Roll to 17x12-inch rectangle.
  • Fit crust into pan, pressing firmly into corners and sides. Fold extra crust up and over edges of pan. Seal any tears in crust. Bake 6 minutes; remove from oven, and cool 10 minutes. Reduce oven temperature to 375°F.
  • In large bowl, beat eggs, half-and-half, salt and pepper with whisk. Sprinkle bacon, green onions and cheeses on top of pie crust. Carefully pour egg mixture over top.
  • Bake 28 to 32 minutes or until knife inserted in center comes out clean and crust is light golden brown. Let stand 5 minutes before serving.

  • Make the crust: Pulse flour, salt, and pepper in a food processor until combined, about 4 pulses. Scatter butter pieces over flour mixture; pulse in 1-second bursts until butter is the size of small peas, 9 to 10 pulses. Drizzle ice water into mixture, 1 tablespoon at a time, pulsing until mixture resembles coarse meal. Turn out onto a work surface; knead just until dough comes together. Gently roll dough around rolling pin, and unroll onto prepared pan. Press dough into corners and up sides of baking sheet. Trim excess dough to about 1/4 inch above rim of pan. Crimp edges of dough as desired. Freeze 45 minutes.
  • Preheat oven to 400°F with rack in upper third of oven. Line crust with 2 large sheets of parchment paper; top with dried beans or pie weights to cover. Bake in preheated oven until bottom is set and edges are light golden brown, 35 to 40 minutes. Remove weights and parchment. Return crust to oven; bake at 400°F until crisp and browned, 15 to 20 minutes. Gently press crust down if needed. Let cool completely.
  • Make the filling: Heat oil in a medium skillet over medium. Add sausage; cook, breaking into medium-size pieces with a wooden spoon, until just cooked through, about 6 minutes. Remove from heat.
