Larabar Copycat (Raw Food) image

These are very fun and versatile raw food bars. The cashews can be replaced with any nuts, any dried fruits, coconut, oats, or any combination thereof for endless variations. Just try to maintain the 1:3 ratio and you'll be fine. Originally seen at Bunnyfoot Mostly Vegan blog.

1 cup dates
3 cups cashews

Steps:

  • Add dates to food processor and pulse until smooth.
  • Chop cashews.
  • Smoosh dates and cashews together until cashews are evently distributed.
  • Form dough into into a rope.
  • Lay a cutting board over the dough rope and press until bar shaped.

6 strawberries, large, fresh, sliced
6 figs, fresh, sliced
2 tablespoons agave nectar
2 tablespoons balsamic vinegar
2 tablespoons mint, fresh, chopped

Steps:

  • In a large bowl, toss together all ingredients until fruits are well coated!
  • Chill or serve at room temperature & enjoy!

  • Soak: Pick the flavor you're going to make. It's best if you soak the dates (and if your recipe has them, the raisins) in hot water for 30 minutes before using.
  • Blitz: Add all the ingredients to a food processor (if making Cookie Dough bars, do not add chocolate chips yet). Blitz until the ingredients are finely broken down and evenly combined.
  • Shape: Shape dough into a rectangle. It should be about ½ inch (1½ cm) thick. For best cutting results, transfer to a plate or cutting board and freeze for 30 minutes.
  • Cut: Cut rectangle into bars. Wrap each bar in parchment or wax paper. Store in the fridge until ready to eat.
