CHICKEN FRANCESE



Chicken Francese image

Thin cutlets dipped in flour and egg are tossed in a delicious lemon, wine, and butter sauce.

1 pound chicken cutlets (thin sliced)
4 large eggs (beaten)
2 large lemons (1 lemon sliced plus juice of half lemon)
1 cup low sodium chicken stock
1/2 cup dry white wine
1 cup flour
1/4 cup olive oil
4 tablespoons butter
2 tablespoons parsley
1-2 teaspoons kosher salt
1 teaspoon black pepper

Steps:

  • Prepare frying station with chicken, a bowl of flour, and a bowl with beaten eggs.
  • Heat a large pan to medium-high heat. Season chicken with salt and pepper on both sides. Dredge chicken into flour, shake off excess and dip into egg. Add a bit of butter and 1 tablespoon of olive oil to pan and fry the cutlets. Do not crowd. Work in batches. Use more oil/butter as required for subsequent batches.
  • Fry cutlets for 3 minutes per side, then place on paper towels to drain.
  • Add sliced lemons to the pan and cook for 10-15 seconds. Add in the white wine, chicken stock, and the juice of half a lemon. Turn heat to medium-high and bring sauce to boil for 3-4 minutes.
  • Turn heat to medium-low and add small butter pieces rolled in flour (2 tablespoons worth). If the sauce is too thin add a touch more flour (~1 teaspoon) and continue to cook for 1-2 more minutes. Add a nice bit of black pepper and if necessary adjust salt and/or lemon juice amount.
  • When satisfied with the sauce's taste and consistency return the chicken to the pan and gently coat with the sauce and heat through for 1-2 minutes. Add the chopped parsley on top. Enjoy!

This chicken Francese is moist and tender chicken dredged in flour and eggs to get a nice and crisp outside edge. It's added to a lemony flavored sauce that makes this recipe insanely delicious!

1/4 cup vegetable oil ((for frying))
2 chicken breasts ((sliced in half))
salt and pepper
1/4 cup flour
2 large eggs
1 teaspoon garlic powder
1/4 cup butter
2 Tablespoons flour
1/2 cup white wine
1/2 cup chicken broth
1 lemon ((for the juice))
chopped parsley ((for garnish))

Steps:

  • Heat the oil in a large skillet. Salt and pepper the chicken. In one bowl add the flour and garlic powder. In another bowl add the eggs.
  • Dredge the chicken first in the flour and then the eggs. Add it to the hot oil and fry on each side for 2-3 minutes until golden and cooked throughout. Remove and set aside on a plate. Wipe down the skillet with a paper towel.
  • Add the butter to the pan and melt. Add in the flour and whisk until it starts to thicken. Add in the white wine and bring to a boil for a minute.
  • Add the chicken broth and lemon juice. Whisk until the sauce has reduced. Return the chicken to the pan and garnish it with parsley and sliced lemons.

I posted this for the ZWT3. I have yet to make it, but it sounds like a flavorful twist to traditional grilled chicken. The Languedoc region of France features a number of Meditteranean ingredients.

4 tablespoons plain low-fat yogurt
3 tablespoons sun-dried tomato paste
1 tablespoon olive oil
1/4 cup fresh basil leaf, crushed lightly
2 garlic cloves, chopped
4 chicken quarters

Steps:

  • Combine first five ingredients (yougurt through garlic) and mix well.
  • Place the chicken quarters in a large zip-top bag or glass dish. Add the marinade and toss chicken to coat well.
  • Marinate at least 2 hours in the refrigerator (up to 8 hours), and then remove and leave covered at room temperature for 30 minutes.
  • Grill over medium heat for 30-45 minutes, turning every 5-7 minutes.
