SPAGHETTI WITH CLAMS



Spaghetti with Clams image

1 pound dried spaghetti
1/2 cup extra-virgin olive oil
2 shallots, thinly sliced
5 to 7 cloves garlic, finely chopped
2 1/2 pounds Manila clams, scrubbed clean
1/2 cup fresh parsley, chopped
1/2 cup dry white wine
2 tablespoons unsalted butter, diced into small cubes
Sea salt and freshly ground black pepper
1 lemon, zested, for garnish

Steps:

  • In a large pot, bring to a boil 6 quarts of salted water. Add pasta, stirring constantly in the beginning to prevent it from sticking together. Cook until al dente, about 8 minutes.
  • Meanwhile, heat the olive oil in a large saute pan. When almost smoking, add shallots and garlic and saute until soft and translucent, about 3 to 4 minutes, being careful not to burn the garlic. Add the clams and wine. Cover and simmer for 6 to 8 minutes or until most clams have opened.
  • Add 2 tablespoons chopped parsley. Whisk in butter to thicken sauce slightly.
  • Drain pasta in a colander. Do not rinse pasta with water - this will remove the pasta's natural starches. Place pasta into the clam saute pan and mix thoroughly. Check seasoning.
  • Pour pasta into large serving bowl. Zest lemon over the dish, being carefull not to zest the white part of the lemon, which is bitter. Garnish with remaining parsley. Serve immediately.

1/2 cup extra-virgin olive oil
6 oz thinly sliced pancetta, cut into thin strips
1 garlic clove, thinly sliced
2 lb Mahogany clams or New Zealand cockles, scrubbed
1 cup bottled clam juice
1/3 cup dry white wine
4 small dried hot chiles (1-inch) or 1 teaspoon dried hot red pepper flakes
14 oz dried thin linguine
1/4 cup chopped fresh parsley

Steps:

  • Heat 3 tablespoons oil in a deep 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté pancetta, stirring occasionally, until golden, about 6 minutes. Add garlic and sauté, stirring, until golden, about 30 seconds.
  • Stir in clams, clam juice, wine, and chiles and boil, covered, until clams open, about 4 to 5 minutes (discard any clams that do not open after 6 minutes). If using whole chiles, remove with a slotted spoon and discard.
  • While clams are cooking, cook pasta in a 6-quart pot of well-salted boiling water until al dente. Drain in a colander, then add to clams and simmer, stirring, 30 seconds.
  • Toss pasta with parsley and drizzle with remaining 5 tablespoons oil.

Mussels over pasta with light, yet creamy white wine sauce made with garlic, butter, fresh basil, Parmesan cheese, and cream. Tossed with linguine and simmered until creamy.

2 pounds mussels, rinsed
1 pound linguine or spaghetti
3/4 cup white wine
1 shallot, finely chopped
3 tablespoons butter
1/4 cup fresh basil, finely chopped
3 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon crushed red pepper flakes
3/4 cup heavy cream
1/2 cup grated Parmesan cheese

Steps:

  • Rinse the mussels and remove beards if necessary, discard any that do not fully close when rinsing (these are dead).
  • Bring a large pot of water to a boil, add a pinch of salt, and cook linguine until al dente.
  • Meanwhile, heat butter and oil in a large covered saucepan on medium-high heat. Cook garlic and shallots until fragrant, about 1 minute. Add wine, basil, and red pepper flakes to the pan. Cover and simmer mussels in the white wine sauce until fully cooked and shells open up, about 5 minutes. Stir mussels to coat in the sauce.
  • When linguine is finished, strain and stir into the mussels and white wine sauce. Now add cream and Parmesan cheese. Simmer for 5-7 minutes, covered, stirring occasionally until the sauce slightly thickens. Serve topped with a pinch of fresh basil, more Parmesan cheese, and 6-7 mussels.

Langoustine's are similar to little mini lobster bites. Often they are bought pre-cooked but some you need to cook. Trader Joe's sells them and they are delicious! I came up with this recipe to enjoy them since very few langoustine recipes exist on the internet. You can sub shrimp in the recipe if you'd prefer.

2 tablespoons olive oil, extra virgin
1 lb langoustine (or shrimp)
4 large garlic cloves, minces (I add more!)
1 pint grape tomatoes, halved (or quartered roma's)
2 tablespoons capers, drained
1/2 teaspoon crushed red pepper flakes
1/2 cup dry sherry
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons unsalted butter
1 lb thin spaghetti (or angel hair)
1/2 cup fresh flat-leaf parsley, chopped

Steps:

  • Bring a 6- to 8-quart pot of salted water to a boil.
  • Meanwhile, heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté langoustine tails, turning over once, until just cooked through, about 4 minutes, and transfer with a slotted spoon to a large bowl.
  • Add garlic to oil remaining in skillet along with red pepper flakes, sherry, salt, and pepper and cook over high heat, stirring occasionally, 1 minute. Add butter to skillet, stirring until melted, then stir in tomatoes, capers and langoustines. Saute for a minute or two. Remove skillet from heat.
  • Cook pasta in boiling water until just tender, about 3 minutes. Reserve 1 cup pasta-cooking water, then drain pasta in a colander. Toss pasta well with shrimp mixture and parsley in large bowl, adding some of reserved cooking water if necessary to keep moist.

This is an easy starter that combines two of my favorite ingredients- artichoke hearts, and clams! If you can't find Spanish preserved artichoke hearts, substitute canned quartered artichoke hearts. Posted for ZWT5

2 tablespoons extra virgin olive oil
2 garlic cloves, minced
20 artichoke hearts (preserved in a jar)
1 cup fish stock (or clam juice)
1 tablespoon flour
2 tablespoons dry white wine
24 small clams

Steps:

  • Heat the olive oil in a large frying pan.
  • Add the garlic and lightly brown, but be careful not to burn!
  • Add the flour, and whisk to combine.
  • Mix in the wine and stock.
  • Add the clams, cover and cook until the clams open,.
  • Add the artichoke hearts, and continue to cook until they are heated through.
  • Serve immediately.

1 sm. onion, minced
1 tsp. Durkee oregano
1 tsp. basil
1/2 tsp. hot red pepper
3 tbsp. fresh parsley, chopped
1 pkg. linguine
3 (7 oz.) cans minced clams with juice
1 pkg. langostinos, thawed and drained
1 (8 oz.) can artichoke hearts
Fresh grated pepper
Fresh grated Romano and Parmesan cheese

Steps:

  • Heat butter and oil together. Saute onion and garlic until soft and straw colored. Add clams with juice, langostinos, artichoke hearts (drained and quartered). Stir in oregano, basil, hot red pepper, parsley and pepper. Simmer for 20-30 minutes, until sauce thickens slightly. Serve over linguine. Sprinkle grated cheese on top.
