3 cups chicken broth
1 cup bottled clam juice
1/4 teaspoon saffron thread
1/4 cup olive oil
1 large yellow onion, chopped
4 garlic cloves, minced
4 plum tomatoes or 4 roma tomatoes
1 cup rose wine
2 teaspoons packed minced fresh oregano leaves
2 teaspoons fresh thyme leaves
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
2 1/2 cups arborio rice or 2 1/2 cups valencia rice
1 (2 lb) live lobsters (see Note)
1/2 lb green beans, stems trimmed and cut into 1-inch pieces
1 1/2 lbs mussels, debearded and scrubbed of any sand
1 lb sea scallops

Steps:

  • *Note-if you do not want to work with a live lobster, substitute two frozen, in-shell, 12 ounce tails, thawed and split in half lengthwise.
  • Heat the broth, clam juice, and saffron in a saucepan until steaming but not simmering; decrease heat to very low, cover, and keep warm without boiling.
  • Position oven rack in the center of the oven; preheat oven to 375°.
  • Heat a 14-inch paella pan over medium heat; swirl in the olive oil, then add the onion; cook, stirring frequently, for 4 minutes, until translucent.
  • Add in the garlic; cook for 30 seconds.
  • Stir in the tomatoes; keep cooking, stirring frequently, until they begin to break down, about 3 minutes.
  • Add in the wine; bring to a simmer, scraping up any browned bits in the pan.
  • Increase heat and simmer until reduced by half, about 5 minutes.
  • Stir in the oregano, thyme, salt, and pepper.
  • Then stir in the rice and the warmed broth; bring to a simmer; decrease heat to medium, and simmer for 10 minutes.
  • Meanwhile, set the lobster on a lipped cutting board to catch any internal juices; plunge the tip of a sharp knife into its head about ½ inch behind its eye stalks, thereby piercing the brain and instantly killing it; slice the lobster in half lengthwise.
  • Stir the green beans into the simmering rice, then set the mussels around the perimeter of the pan, partially submerging them.
  • Arrange the scallops in the pan in a circle inside the mussels, partially submerging them as well; and then lay the lobster halves in the center of the pan cut side down.
  • Place in the oven; bake for 15 minutes, or until most of the liquid has been absorbed and the rice is fairly tender.
  • Transfer to a wire rack, cover tightly with foil, and set aside for 10 minutes.
  • If desired, remove the lobster meat from the shell and place on top of the paella before serving.

Chicken:
1 tablespoon sweet or smoked paprika
2 teaspoons oregano
1 (3 pound) frying chicken, cut into 10 pieces
Paella:
1/4 cup extra-virgin olive oil
2 Spanish chorizo sausages, thickly sliced
Kosher salt and freshly ground pepper
1 Spanish onion, diced
4 garlic cloves, crushed
Bunch flat-leaf parsley leaves, chopped, reserve some for garnish
1 (15-ounce) can whole tomatoes, drained and hand-crushed
4 cups short grain Spanish rice
6 cups water, warm
Generous pinch saffron threads
1 dozen littleneck clams, scrubbed
1 pound jumbo shrimp, peeled and de-veined
2 lobster tails
1/2 cup sweet peas, frozen and thawed
Lemon wedges, for serving

Steps:

  • Combine the paprika and oregano in a small bowl. Rub the spice mix all over the chicken and marinate chicken for 1 hour in the refrigerator.
  • Heat oil in a paella pan over medium-high heat. Saute the chorizo until browned, remove and reserve. Add chicken skin-side down and brown on all sides, turning with tongs. Add salt and freshly ground pepper. Remove from pan and reserve.
  • In the same pan, make a sofrito by sauteing the onions, garlic, and parsley. Cook for 2 or 3 minutes on a medium heat. Then, add tomatoes and cook until the mixture caramelizes a bit and the flavors meld. Fold in the rice and stir-fry to coat the grains. Pour in water and simmer for 10 minutes, gently moving the pan around so the rice cooks evenly and absorbs the liquid. Add chicken, chorizo, and saffron. Add the clams and shrimp, tucking them into the rice. The shrimp will take about 8 minutes to cook. Give the paella a good shake and let it simmer, without stirring, until the rice is al dente, for about 15 minutes. During the last 5 minutes of cooking, when the rice is filling the pan, add the lobster tails. When the paella is cooked and the rice looks fluffy and moist, turn the heat up for 40 seconds until you can smell the rice toast at the bottom, then it's perfect.
  • Remove from heat and rest for 5 minutes. Garnish with peas, parsley and lemon wedges.

1 1/2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
Kosher salt
Extra-virgin olive oil
8 ounces Spanish chorizo, sliced thinly on the bias
2 1/2 cups thinly sliced Spanish onion (about 1 large onion)
2 tablespoons minced garlic (about 4 cloves)
2 cups unsalted chicken stock
1/3 cup bottled clam juice
One 14-ounce can chopped fire-roasted tomatoes
1 1/2 cups frozen peas
1 1/2 teaspoons sweet Spanish paprika
1/2 teaspoon saffron threads
Canola oil spray
2 1/2 cups bomba rice or other short-grain white rice such as Arborio
12 ounces jumbo shrimp (21/25 count), peeled and deveined, tails intact
1 pound littleneck clams
8 ounces Prince Edward Island mussels
1/4 cup pimiento-stuffed manzanilla olives, finely chopped
2 tablespoons chopped fresh parsley

Steps:

  • Preheat the oven to 400 degrees F.
  • Season the chicken with 1 teaspoon salt. Heat 1 tablespoon olive oil in a 10-inch skillet over medium-high heat. Sear the chicken on all sides until almost cooked through and beginning to brown, 5 minutes. Stir in the chorizo; cook until it releases its oil and begins to brown, another 5 minutes. Stir in the onions and garlic; cook just until the garlic is toasted and the onions are slightly softened, 2 minutes more. Stir in the chicken stock, clam juice and fire-roasted tomatoes. Add the peas, paprika, saffron and 1 tablespoon salt. Increase the heat to medium and slowly bring the liquid to a boil.
  • Meanwhile, lightly spray a baking sheet with canola oil. Spread the rice evenly onto the tray and lightly spray with more canola oil. Toast the rice in the oven until light golden brown in spots, 10 minutes.
  • At this point, the chicken mixture should be boiling. Ladle it evenly over the rice and return the baking sheet to the oven. Cover the paella by inverting another baking sheet and placing it on top. Bake until the liquid is completely absorbed and the rice is cooked through, about 20 minutes. Carefully remove the top baking sheet, and then remove the paella from the oven. Preheat the broiler.
  • Sprinkle the shrimp with 1/2 teaspoon salt. Combine the shrimp with the clams and mussels in a large bowl.
  • Arrange the shrimp, clams and mussels on the paella with the shell openings facing up. Lightly drizzle with 1 tablespoon olive oil. Broil--keeping a close eye--until the shrimp are cooked through, the clams and mussels have opened, and the rice is crispy, 2 to 3 minutes for a top broiler or 5 to 6 minutes for a bottom broiler. Sprinkle immediately with the olives and parsley.

1 lb boneless skinless chicken, cubed
1 lb kielbasa, cubed
1 medium onion, diced
1 tablespoon bottled garlic
1 tomatoes, diced
1 bell pepper, diced (any color preference)
1/2 cup frozen peas
3 cups chicken stock
2 cups long-grain rice
1 tablespoon olive oil
1 teaspoon turmeric
1 bay leaf
salt & pepper

Steps:

  • Preheat oven to 350.
  • Salt & pepper chicken.
  • In a large, oven proof skillet with a lid, heat oil and saute chicken till brown, but not cooked through.
  • Remove chicken from skillet.
  • Return skillet to heat and add kielbasa, onion, and bell pepper.
  • Saute till kielbasa is brown, and onion & bell pepper are soft.
  • Add diced tomato and return chicken to skillet.
  • Stir in chicken stock, rice, turmeric and bay leaf.
  • Bring to a boil.
  • Sprinkle peas over the top.
  • Cover the skillet and place in the oven.
  • Cook till liquid is absorbed and rice is cooked, approx 25 minutes.
