Steps:
- Place the oil, onions and carrots in a large saucepan and cook until the onion is translucent.
- Add 1 1/2 cups of water and bring to the boil.
- Cook for 10 minutes.
- Add the artichokes, tomato paste, lemon juice and salt and pepper to taste.
- Cover and cook for 10 minutes more.
- Add the peas and dill, check seasoning.
- Cover and cook a further 10 minutes. The stew should have quite a bit of sauce, but not be swimming in it. If there's too much liquid, uncover pan, turn up heat slightly and boil to evaporate liquid, about 5 minutes.
- This is best served warm, nearly room-temperature.
- Serve with feta and crusty bread to mop up the juices.

- add tomatoes
- add wine
- add water to cover meat
- simmer
- covered for 1 hour
- add artichoke s cook 30 minutes more
- add herbs and lemon juice
- cook 30 more minutes uuntil lamb is tender.

- In a large oven-safe pot, heat 1/2 tbsp of olive oil over medium heat. Add the lamb in two batches and saute until lightly browned. Remove the lamb to a bowl and set aside.
- Add the remaining 1/2 tbsp of olive oil; then add the onions, garlic, and salt. Saute until the onions are soft and golden brown, about 8 minutes. Add the red wine and bring to a boil.
- Cook the wine down for 2-3 minutes. Then stir in the tomato paste and pureed tomatoes, and add back the lamb. Once the stew comes to a boil again, cover it, and transfer it to the oven.
