1 pound lamb shoulder or stew meat, cut into 1-inch pieces
salt and pepper
2 cloves fresh garlic, pressed
1/4 cup extra virgin olive oil
1 large onion, coarsely chopped
1 cup 1/2-inch pieces peeled carrots
1 can garbanzo beans (chickpeas), drained (15 ounces)
1/2 cup chicken broth
1/2 cup tomato sauce
2 tbsp. fresh lemon juice
10 ounces bag spinach, stems removed and chopped

Steps:

  • Sprinkle lamb with salt, pepper, and garlic. Heat oil in heavy large pot over medium-high heat. Add lamb and sauté until brown, about 10 minutes.
  • Add onion and carrots and sauté until beginning to brown, about 5 minutes. Add garbanzo beans, broth, tomato sauce, and lemon juice and bring to simmer.
  • Reduce heat to medium-low, cover pot and simmer gently until lamb is tender, about 1 hour.
  • Add spinach to stew. Cover and cook until spinach wilts, stirring often, about 5 minutes. Season with salt and pepper.

1 teaspoon ground cumin
1/2 teaspoon ground cardamom
1/2 teaspoon ground coriander
1/4 teaspoon turmeric
1/4 teaspoon freshly ground pepper, plus more to taste

1/4 cup plus 2 tablespoons all-purpose flour
1 pound lamb stewing meat, trimmed and cut into 1-inch cubes
5 teaspoons vegetable oil
1 small onion, peeled and thinly sliced
2 large cloves garlic, peeled and minced
3 cups chicken broth, homemade or low-sodium canned
1 small butternut squash, peeled, seeds and fibers scooped out, cut into 3/4-inch cubes
1 19-ounce can chickpeas, drained and rinsed
1 tablespoon chopped fresh cilantro

Steps:

  • Combine the spices and salt in a bowl. In a large bowl, stir together 1/4 cup flour and 1 1/2 teaspoons of the spice mixture, add the lamb and coat well. Heat 3 teaspoons of oil in a large pot. Add lamb a few pieces at a time; don't overcrowd. Turn the pieces until lamb is browned on all sides, about 5 minutes per batch; add a teaspoon of oil as needed between batches.
  • Remove the lamb and set aside. Add the remaining teaspoon of oil and the onion to the pot. Cook for 2 minutes. Stir in the garlic and cook for 15 seconds. Stir in the lamb and remaining spice mixture. Stir in the chicken broth and bring to a boil, then reduce to a slow simmer. Cover and cook until the lamb is tender, about 1 hour. Stir in the squash and chickpeas and cook, covered, for 10 minutes.
  • Stir 3 tablespoons of the cooking liquid into 2 tablespoons of flour to make a smooth paste. Stir the paste into the stew and cook until the broth thickens and the squash is tender, about 10 minutes longer. Add salt and pepper to taste. Divide among 4 bowls, garnish with cilantro and serve.

1/4 cup dry red wine or 1 tablespoon red wine vinegar
1 small onion, chopped

ONION SAUCE:
2 tablespoons finely chopped green onions
1 teaspoon butter
1 cup balsamic vinegar

1/2 cup loosely packed fresh mint leaves, chopped
1 tablespoon sugar
1 large sweet onion, cut into quarters
Olive oil
Salt and pepper to taste
SPINACH:
1/4 cup finely chopped green onions
3 garlic cloves, minced
3 tablespoons olive oil
3 tablespoons butter
12 cups fresh baby spinach
Salt and pepper to taste

Steps:

  • In a large resealable plastic bag, combine the first 10 ingredients; add lamb chops. Seal bag and turn to coat; refrigerate for 8 hours or overnight., In a saucepan. saute green onions in butter until tender. Add vinegar and wine or broth and grape juice; bring to a boil. Add mint and sugar. Reduce heat; simmer, uncovered, for 30 minutes or until sauce is reduced to 3/4 cup. Strain; discard mint. Set sauce aside., Thread onion wedges onto metal or soaked wooden skewers. Brush with salt and pepper. Discard marinade from lamb. Grill chops, covered, over medium-hot heat for 5-6 minutes on each side or until meat reaches desired doneness (for medium, a thermometer should read 160°; well done, 170°). Grill onion skewers for 2-3 minutes or until tender., In a large skillet, saute green onions and garlic in oil and butter until tender. Add the spinach, salt and pepper; saute for 2-3 minutes or until spinach just begins to wilt and is heated through. Place on a serving platter. Remove onion from skewers; place onion and lamb chops over spinach.

North African spices with a basic meat stew recipe from Cook's Illustrated The Best Recipe (aka The Kitchen Bible). I made this for a holiday party to break in my new cast iron dutch oven and everyone loved it. I needed a hotter oven after 2 hours and the lamb wasn't tender yet, but I moved it to the stovetop (covered) and simmered it for another 40 minutes or so and it became wonderfully tender, yet not stringy or dry. I got nothing but raves (and very few leftovers!) on this one! Notes: I used 1.5 cans each of diced tomatoes and chick peas. I browned the lamb in three batches instead of two to keep from overcrowding my 5 qt. dutch oven. Kept warm all afternoon by simmering on the stove on low. I used fresh ginger (about 1 Tbl) and no parsley or cilantro. Could have probably used a bit of salt at the end.

1 1/2 cups low sodium chicken broth or 1 1/2 cups homemade chicken stock

2 bay leaves

15 ounces chickpeas, drained and rinsed

Steps:

  • Heat oven to 250.
  • Toss lamb with salt and pepper. Heat 2 Tbls oil in dutch oven over medium high heat. Brown lamb on all sides in two batches. Set aside on plate.
  • Add onions to Dutch oven and saute until softened. Add garlic and cook an additional 30s.
  • Stir in flour and cook until lightly colored (1-2 min).
  • Add stock and deglaze pan.
  • Add tomatoes and spices and bring to simmer before adding lamb and returing to simmer.
  • Cover and place in oven until meat is almost tender (1 3/4 - 2 1/4 hours).
  • Add chickpeas and return to oven until meat is tender and chicpeas are heated through (about 15 min).
  • Can be cooled, covered and refrigerated up tp 3 days before reheating on stovetop.
  • Stir in parsley, discard bay leaves and adjust seasoning just before serving.

1 ½ pounds lamb shoulder arm chops, cubed, round bones reserved
1 teaspoon salt
½ teaspoon ground black pepper
1 onion, chopped
4 cloves garlic, minced
1 cup lentils, picked over and rinsed
2 cups chicken broth, or more as needed
1 (14 ounce) can diced tomatoes
3 carrots, peeled and sliced
½ teaspoon dried thyme
½ teaspoon dried sage
½ teaspoon dried basil
2 cups coarsely chopped fresh spinach
1 lemon, juiced and zested
½ cup ricotta salata cheese, crumbled

Steps:

  • Heat oil in a heavy pot over medium-high heat. Add the lamb cubes and bones and brown on all sides, about 3 minutes. Sprinkle with salt and pepper. Add onion and garlic and continue cooking about 2 minutes, stirring frequently.
  • Stir in the lentils, 2 cups of the chicken broth, tomatoes, carrots and the thyme, sage and basil. Bring to a boil, reduce the heat to low and simmer, covered, until the lentils are tender but not quite done, stirring occasionally. Depending on the type and freshness of the lentils, this will take from 15 to 30 minutes. If the stew seems dry, add more broth (up to one cup additional). Discard the lamb bones.
  • Add the spinach and cook 5 minutes more. Stir in the lemon zest and juice. Garnish individual servings with some of the crumbled cheese.

Sabzi is one of the traditional dishes served during Afghan Nowruz, the celebration of the new year and vernal equinox, and Durkhanai Ayubi included this recipe from her mother, Farida Ayubi, in their cookbook "Parwana: Recipes and Stories From an Afghan Kitchen." The rich green hue of this dish symbolizes the arrival of spring and new life. In the book, Ms. Ayubi uses a pressure cooker for the lamb - you can as well - but the stovetop version below doesn't take very long. Either way, the lamb becomes tender in an intensely flavorful broth of onion, garlic and chile. It then simmers in cooked spinach, fragrant with fried cilantro and garlic chives. This soul-affirming sabzi, along with its traditional accompaniment of challaw, a spiced Afghan rice dish, is a welcome way to celebrate the reawakening of nature.

1 large yellow onion, finely chopped

Steps:

  • In a large Dutch oven or similar pot, heat 1/2 cup oil over medium-high. Add the onion, garlic and chile, and cook, stirring frequently, until golden brown, 8 to 10 minutes. Push the vegetables to one side and add the lamb to the other. Cook until lightly browned on all sides, 3 to 8 minutes total. Add 2 tablespoons kosher salt (or 1 tablespoon coarse kosher salt or fine salt) and 4 cups water, then stir and bring to a gentle boil, skimming any scum that rises to the surface. Cover, reduce heat to low and cook until the lamb is tender, 1 hour and 5 minutes to 2 hours.
  • Meanwhile, in a kettle or a small saucepan, bring 1/2 cup water to a boil, and keep at a simmer.
  • In a very large skillet with a lid, heat the remaining 1/2 cup oil over medium. Add the cilantro and garlic chives, and fry, stirring occasionally, to bring out all the flavors, about 5 minutes. Transfer the mixture to a small bowl.
  • Place the same skillet over medium-high heat (no need to wash), add the chopped spinach and the just-boiled water, and cover partially. Cook, stirring occasionally, until all the liquid is gone, about 20 minutes.
  • Add the lamb, 1 cup of its cooking liquid (any remaining broth can be refrigerated or frozen for another use) and the cilantro mixture to the spinach. Stir to combine well, then reduce the heat to low and simmer, uncovered, until all the flavors mingle, about 15 minutes. Taste, season with salt if desired and serve with challaw.

  • Heat 2 tbsp oil in a skillet and saute the onions, celery leaves, spinach, and parsley for 2 minutes, stirring constantly.
  • Add these vegetables and the chickpeas to the meat and mix together thoroughly.
  • Bring to a boil, then lower heat and simmer another 20 minutes, or until meat is tender, adding water as necessary to keep up with consistency.
  • Serve with steamed basmati rice.
