This lamb stew is loaded with hearty, healthy ingredients. This lamb stew recipe is simple (a one-pot meal!) The lengthy simmering time in the oven makes the tender lamb morsels and vegetables just melt in your mouth.

4 oz bacon ((4 strips, chopped into 1/4" strips))
2 lbs boneless leg of lamb or lamb shoulder (trimmed of excess fat, cut into 1 1/2" pieces)
1/2 Tbsp sea salt for the lamb plus 1 tsp for stew
1 tsp black pepper for lamb plus 1/2 tsp for stew
1/4 cup all-purpose flour or gluten free flour*
1 large yellow onion (diced)
4 garlic cloves (minced)
1 1/2 cups good red wine (*)
1 lb button mushrooms (thickly sliced)
4 cups low sodium beef broth or stock
1 Tbsp tomato paste
2 bay leaves
1/2 tsp dried thyme
1 1/2 lbs small yellow potatoes (halved or quartered into 1" pieces)
4 medium carrots (10 oz, peeled and cut into 1/2" thick pieces)
1/4 cup parsley (finely chopped for garnish)

Steps:

  • In a 5Qt dutch oven, saute chopped bacon over medium heat until browned and fat released. With a slotted spoon, transfer bacon to a large plate.
  • While bacon cooks, season lamb pieces with 1/2 Tbsp salt and 1 tsp pepper. Sprinkle with 1/4 cup flour and toss to coat. Cook lamb in 2 batches in hot bacon grease over medium heat until browned (3-4 min per side) then transfer to the plate with bacon.
  • Add diced onion and sauté 2 min. Add garlic and cook another minute, stirring constantly. Add 1 1/2 cups wine, scraping the bottom to deglaze. Add sliced mushrooms, bring to simmer then cook uncovered 10 min. Preheat Oven to 325˚F.
  • Return bacon and lamb to pot and add 4 cups broth, 1 Tbsp tomato paste, 1 tsp salt, 1/2 tsp pepper, 1/2 tsp dried thyme and 2 bay leaves. Stir in potatoes and carrots, making sure potatoes are mostly submerged in liquid. Bring to a boil then COVER and carefully transfer to preheated oven at 325˚F for 1 hr and 45 min. When done, potatoes and lamb will be very tender.**

A few years back, Lima, Peru was named the culinary capital of the western hemisphere. With such deceptively simple yet delirious delicious food, one can see why. This is my take on a traditional lamb stew called 'seco cordero.' Pisco is a Peruvian spirit made from grapes similar to but not exactly like grappa. You can substitute grappa or leave it out entirely. Goes well with white rice; excellent day-of or reheated the next. This could also be made in a slow cooker.

1 tablespoon olive oil
½ red onion, coarsely chopped
1 aji amarillo pepper, seeded and coarsely chopped
4 cloves garlic
½ teaspoon ground cumin
salt and ground black pepper to taste
1 bunch cilantro, coarsely chopped
1 (10.5 ounce) can beef broth
1 cup Riesling wine
1 tablespoon olive oil
2 lamb shanks
1 extra-large baking potato, cut into large chunks
1 (1.5 fluid ounce) jigger Peruvian pisco liquor
½ cup frozen peas

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Heat 1 tablespoon olive oil in a large oven-safe pot or Dutch oven over medium heat. Cook and stir red onion, aji pepper, garlic, cumin, salt, and black pepper in hot oil until onion begins to brown, about 10 minutes; transfer cooked onion mixture to a blender and add cilantro, beef broth, and Riesling wine. Blend the mixture into a smooth sauce, 1 to 2 minutes.
  • Heat 1 more tablespoon olive oil in same pot over medium heat; brown lamb shanks on all sides in hot oil, about 2 minutes per side. Pour cilantro sauce over lamb shanks and cover with lid.
  • Bake in the preheated oven for 2 hours. Add potato chunks to the pot. Pour pisco over lamb and vegetables. Continue baking until lamb is very tender and sauce is slightly thickened, about 1 more hour. Remove from oven and sprinkle peas over the lamb; cover pot to let peas heat through, about 10 minutes. Let lamb shanks cool 15 minutes before serving.

¼ cup vegetable oil
4 teaspoons lemon juice
3 cloves garlic, minced
1 teaspoon cumin

Steps:

  • Return cooked lamb to skillet. Mix in beer and cilantro. Season with bay leaf, salt, and pepper. Cover skillet and simmer over low heat for about 1 hour. Add potatoes, cover, and cook over low heat until potatoes are tender, about 30 minutes, adding water or broth if there is not enough liquid in the skillet.

3 to 4 pounds leg of lamb cut into 1-inch cubes
2 to 3 tablespoons all-purpose flour for dredging
2 tablespoons butter
1 tablespoon vegetable oil
8 ounces fresh mushrooms, sliced
2 cloves garlic, smashed & minced
2 cups water
1 cup​ chicken broth, homemade or low-sodium
1 teaspoon salt, or to taste
1/2 teaspoon thyme, crushed
1/4 teaspoon pepper
4 medium potatoes, red, new, or round white, quartered
12 to 16 ounces fresh or frozen small white onions or pearl onions, peeled
1 cup frozen peas, optional
1 cup milk
1/3 cup flour

Steps:

  • Toss the lamb cubes with a few tablespoons of flour; shake off excess.
  • Melt the butter with the vegetable oil in a large Dutch oven or stockpot over medium heat. Add the floured lamb cubes and cook until browned on all sides, stirring and turning frequently.
  • Remove the meat and add the mushrooms to the drippings. Cook until the mushrooms are golden brown and tender, stirring frequently. Add the garlic and cook for 1 minute longer.
  • Add the lamb cubes back to the pot along with the water, broth, 1 teaspoon of salt, thyme, and pepper; cover and simmer for 1 hour. Skim off any fat on the surface.
  • Add the potatoes and onion; cover and simmer until vegetables are tender, about 15 to 20 minutes.
  • Add peas, if using, and simmer for 5 more minutes.
  • Combine the milk and 1/3 cup of flour in a cup or small bowl; whisk until smooth. Add the mixture to the simmering stew and cook for about 1 to 2 minutes longer, or until thickened.
  • Taste and adjust seasonings with more salt and pepper, as needed.

A warm and hearty stew with and Indian twist. A great alternative to beef stew - this is made with flavorful lamb and potatoes with a rich tomato-based sauce.

¼ cup Vegetable Oil
2 pounds Superior Farmer's Mark Ellensburg Lamb Stew Meat, patted dry
Kosher Salt and Ground Pepper
1 small Sweet Onion, chopped
4 cloves Garlic, minced
2 Tbsp. Grated Ginger
2 Tbsp. Tomato Paste
2 tsp Garam Masala
2 tsp Ground Cumin
2 tsp Ground Turmeric
3 - 3 ½ cups Low Sodium Chicken Broth
1 can (8 ounces) Tomato Sauce
½ cup Heavy Cream
1 pound Tri-Color Baby Potatoes, sliced in half
¼ cup Cilantro, minced
4-6 slices Naan Bread for Serving

Steps:

  • Heat vegetable oil in your Dutch oven over medium high heat. While the oil is heating up, season the Superior Farmer's Mark Ellensburg Lamb Stew Meat liberally with salt and pepper.
  • Place lamb in the oil to fry until golden brown on all sides, about 8-10 minutes. If the lamb is sticking to the pan, do not fret. It will naturally release on its own when it is browned. You do not want to pull away the browning off the lamb and leave it behind in the pan!
  • Once all the lamb is browned, remove it from the pan and set it aside on a plate.
  • Lower the temperature on the pan, to medium-low. Without cleaning the pot, add in the onion, garlic, and ginger stirring occasionally, until onion is very soft and golden brown.
  • Stir in the tomato paste, masala, cumin, turmeric, and stir constantly for 2-3 minutes. Whisk in the chicken broth, tomato sauce, and the heavy cream to the pan.
  • Add the lamb back to the pan, and reduce heat so the stew is simmering. Cover the pan, leaving just a crack for the stew to vent, and simmer for about one hour.
  • Once the hour is up, add in the baby potatoes. Continue to simmer the mixture for another 30 minutes, or until the potatoes are fork tender.
  • If the sauce is too thick, add in a little additional chicken stock until it reaches your desired consistency. It should be thick, and not watery, however.
  • Remove the pan from the stove and serve with a drizzle of added heavy cream or yogurt, minced cilantro and naan bread on the side.

1 teaspoon paprika powder
1 teaspoon mild curry powder
1/2 teaspoon turmeric powder (optional)
1 teaspoon coriander seed powder

1 cup (200 g) tinned tomatoes or cherry tomatoes with juice
1 cup beef stock or chicken stock

Steps:

  • Turn on the Instant Pot and press the Sauté function key. Add the onions, olive oil, and salt and cook for 3-4 minutes, stirring a few times, until softened.
  • Add the rest of the ingredients (except for the vegetables used in the second part of cooking) and stir through well. While it might seem like you need more liquid, remember that the meat will release its own juices in the cooking process.
  • Place and lock the lid, making sure the steam release handle is pointing to Sealing. Press the Manual function key, making sure it's set to High Pressure, and adjust the timing to 20 minutes. After three beeps the Instant Pot will begin to build up the pressure and start cooking. Once the cooking finishes, release the pressure naturally for 2-3 minutes before using the quick release to let off the rest of the steam. While the lamb is cooking, you can make a quick couscous or rice dish, or prepare some steamed vegetables on the side.
  • Add the vegetables and orange zest and stir through. Place and lock the lid again, and set to Manual, High pressure, for 5 minutes. Once the cooking finishes, leave the Instant Pot to release the pressure naturally for 10-12 minutes and then use the quick release method to finish it off.
  • Serve with a chosen side and fresh cilantro and scallions as a garnish. A little lime juice is also nice on the side.

2 pounds lamb meat (shoulder or leg)
1/2 cup vinegar
1 teaspoon cumin
3 cloves garlic (minced)
1/4 cup vegetable oil
1 large red onion (chopped fine)
1 aji pepper or other hot chile pepper (chopped fine)
4 tablespoons vegetable oil
1 bunch of cilantro
1 bottle of beer
1 to 2 cups chicken or beef stock
5 to 6 medium yellow potatoes

Steps:

  • Cut the meat into approximately 2-inch cubes.
  • Mix the vinegar with the garlic, cumin, 1/4 cup vegetable oil, and some salt and black pepper, and pour over the meat. Let meat marinate at room temperature for 30 minutes to an hour.
  • Puree the cilantro (stems removed) with some water in a blender or food processor until you get a smooth paste.
  • Heat 3 to 4 tablespoons oil in a large pot or skillet on high heat. Working in 2 batches, brown the meat on all sides. Remove meat to a plate.
  • Lower the heat and add the onion and aji pepper to the same skillet with the leftover marinade. Cook until soft and fragrant, about 5 minutes.
  • Add the meat back to the skillet, along with the beer, the cilantro, and 1 cup of the chicken stock. Cover and cook over low heat until the meat is tender, about an hour.
  • Peel and quarter the potatoes, and add them to the stew. Continue to cook over low heat until potatoes are tender, about 30 minutes more, adding more chicken broth if necessary.
  • Serve warm over rice.

  • Fry the onion in the same pot until golden, 10-12 minutes, adding more oil as needed. Stir regularly. Add garlic, apricot and spices and continue stirring for 1-2 minutes. Add the lemon juice. Continue stirring until the liquid has more or less evaporated, 1-2 minutes.
  • Add back the meat (with any juices), any bones (if you have them) and bay leaves. Mix well. Add enough water (or stock) to just cover the meat. Bring to the boil, turn the heat to low and leave to simmer with the lid on until the meat is tender, 1-1.5 hours.
  • Check for seasoning. Add the potatoes and continue to simmer (this time, lid off) until the potatoes and meat are tender and the liquid has reduced and thickened a little, 20-30 minutes.
