CURRIED SPLIT PEA SOUP



Curried Split Pea Soup image

2 tablespoons unsalted butter
1 cup chopped onion
Kosher salt and freshly ground black pepper
1 tablespoon minced fresh garlic
12 ounces dried green or yellow split peas, picked over and rinsed
5 cups chicken broth
1 tablespoon curry powder

Steps:

  • Place the butter into a large (4 to 6-quart) saucepan over medium-low heat. Once melted, add the onion and a generous pinch of salt and sweat for 2 to 3 minutes. Add the garlic and continue to sweat for an additional 1 to 2 minutes, making certain not to allow onions or garlic to brown.
  • Add the peas, chicken broth and curry powder. Increase heat to high and bring to a boil. Reduce heat to low, cover and cook at a simmer until the peas are tender and not holding their shape any longer, approximately 45 to 50 minutes. Taste and adjust seasoning as needed. Using care and a stick blender, puree the soup until the desired consistency. Watch out for hot splatters.

KOHLRABI AND PEA SOUP WITH DILL

Aromatic, thick vegetable soup ideal for hot summer days. Seasonal kohlrabi and peas from my garden. Serve at room temperature.

1 tablespoon olive oil
½ large onion, chopped
1 pound peas
½ pound kohlrabi, peeled and cut into small dice
1 bunch fresh dill, chopped
½ tablespoon seasoning blend (such as Vegeta®)
water to cover

Steps:

  • Heat oil in a saucepan over medium heat. Add onion and cook until wilted, about 3 minutes. Add peas and kohlrabi; stir to combine. Add dill and seasoning blend; stir to combine.
  • Add water to cover vegetables and bring to a boil. Reduce heat and cover halfway with a lid. Cook until peas and kohlrabi are soft, about 20 minutes more. Cool to room temperature before serving.

An unusual combination of ingredients but I thought this made an extra-special split pea soup. Peas soak overnight.

1 lb dried yellow split peas or 1 lb split peas, rinsed,drained,and picked over
4 cups water
2 tablespoons vegetable oil (more if needed)
1 1/2 lbs boneless lamb shoulder, cut into 2-inch cubes
1 teaspoon salt
1/4 teaspoon black pepper
1 large onion, chopped
2 medium carrots, cut into 1/2 inch slices
2 medium celery ribs, cut into 1/2 inch slices
2 2/3 cups condensed chicken broth, canned or homemade
2 teaspoons chopped fresh dill

Steps:

  • In a large mixing bowl, add the split peas and water; let set overnight.
  • Pour peas and water into a saucepan; bring to boiling over high heat; cook for 5 minutes.
  • Transfer to a 4 quart slow-cooker.
  • In a large non-stick skillet, heat vegetable oil over medium-high heat.
  • Cook lamb until browned on all sides; transfer meat with a slotted spoon to slow-cooker.
  • Season with salt and pepper.
  • Add more oil to skillet if necessary.
  • Add onions, carrots, and celery; lower heat and saute, stirring frequently, until onion is softened drain and transfer vegetables to slow cooker.
  • Add chicken broth to slow cooker.
  • Cover and cook on LOW for 7-8 hours or until the peas are tender.
  • Add in fresh dill and stir; check seasonings to taste; add salt/pepper if needed.

Steps:

  • Sort peas, discarding any debris. Rinse peas; drain, and set aside. In a 5 to 6 quart pan over high heat, combine celery, onion, lamb, garlic, bay leaf, and ½ cup water. Cover and simmer rapidly for 10 minutes. Uncover, turn heat to high, and stir often until browned bits stick in pan. Deglaze by adding ⅓ cup water and stirring to scrape browned bits free. Stir often until liquid evaporates and browned bits form again. Repeat deglazing step several more times until vegetables are a rich brown, about 30 minutes total. To pan, add split peas and 7 cups chicken broth; bring to a boil on high heat. Cover and simmer until peas mash easily, about 1 hour. Discard bay leaf. (You can chill soup at this step, and continue the next day). Transfer 3 cups soup (but no meat) to a blender or food processor. Whirl until smoothly pureed. Return to pan. For thinner soup, add more broth. Stir on high heat until hot.

1 tbsp olive or rapeseed oil
1 onion, halved and sliced
2 carrots, diced (170g)
3 large celery sticks, chopped
125g lean lamb leg steak, all visible fat trimmed away, cut into pea-sized pieces
1 tsp ground turmeric
1 tsp cumin
1 tsp coriander
400g can green lentils
210g can chickpeas
2 tbsp tomato purée
2 tsp vegetable bouillon powder
½ small bunch of parsley, chopped, plus few whole leaves

Steps:

  • Heat the oil in a deep, non-stick saucepan. Add the onion, carrots and celery, and cook over a high heat, stirring every now and then, until starting to soften. Stir in the lamb and spices, then cook for 5-7 mins to brown the meat.
  • Tip in the cans of lentils and chickpeas, along with their liquid, then stir in the tomato purée and bouillon with 1 litre of hot water from the kettle. Bring to the boil, then cover and simmer for 30 mins until the veg is tender. Stir through the chopped parsley, then scatter over a few whole leaves to serve.

1/2 stick (1/4 cup) unsalted butter
1 lb boneless lamb shoulder or beef chuck, cut into 1/2-inch cubes
1 large onion, finely chopped
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cinnamon
1/4 teaspoon freshly grated nutmeg
2 whole cloves
1/4 teaspoon turmeric
2 tablespoons fresh lime juice
2 1/2 cups water
1/4 cup yellow split peas (1 1/2 oz)
1 large russet (baking) potato
2 to 2 1/2 cups vegetable oil for frying

Steps:

  • Heat butter in a 2- to 3-quart heavy saucepan over moderate heat until foam subsides, then cook meat, onion, salt, pepper, and spices, uncovered, stirring occasionally, until meat is no longer pink, about 10 minutes. Add lime juice and water and simmer, covered, stirring occasionally, 30 minutes.
  • Add split peas and simmer, covered, until peas are falling apart and meat is tender, 40 to 45 minutes. Keep warm, partially covered.
  • Peel potato and cut into 1/4-inch dice. Heat 1/2 inch oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then fry potato in 2 batches, stirring occasionally, until crisp and golden brown, about 7 minutes. Transfer potato with a slotted spoon to paper towels to drain and season with salt.
  • Fold fried potato into stew just before serving, or serve it on top.

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add leek and bay leaf. Sauté until leek wilts, about 3 minutes. Add split peas and stir to coat. Add 5 1/4 cups broth; bring to boil. Reduce heat to medium-low. Cover and simmer until split peas are just tender, about 35 minutes. Remove from heat. Transfer 1 cup soup solids, bay leaf, and remaining 1/2 cup broth to blender. Add petite peas and 4 tablespoons dill. Puree until smooth. Return puree to soup. Season to taste with salt and pepper. Ladle into bowls. Sprinkle with remaining 1 tablespoon dill.
