Succulent braised lamb shanks slow cooked in a red wine, tomato, and fresh basil sauce. Serve with mushroom risotto and grilled zucchini.

2 large white onions, chopped
4 lamb shanks
2 cups dry red wine
1 cup balsamic vinegar
⅓ cup olive oil
4 cloves garlic, pressed
2 lemons, quartered
2 (14.5 ounce) cans diced tomatoes
1 bunch fresh basil, chopped
1 tablespoon kosher salt
1 tablespoon cracked black pepper

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place the onions in a layer in the bottom of a Dutch oven or medium roasting pan with a lid. Arrange the lamb shanks on top of the onions. Pour the wine, balsamic vinegar and olive oil over the lamb. Place a clove of pressed garlic next to each shank, and a quarter of a lemon on each side. Pour the tomatoes over everything, then season with salt, pepper and basil.
  • Cover and place in the preheated oven. Cook for 3 hours. Use juices from the pan to make a nice flavorful gravy.

2 tablespoons extra-virgin olive oil
2 medium onions, halved and thinly sliced
Coarse salt and ground pepper
5 garlic cloves, smashed and peeled
5 large tomatoes (about 4 1/2 pounds total), coarsely chopped, or 2 cans (28 ounces each) plus 1 can (15 ounces) whole peeled tomatoes
4 lamb shanks (about 4 pounds total)

Steps:

  • Preheat oven to 350 degrees. In a large Dutch oven or heavy pot, heat oil over medium-high. Add onions and season with salt and pepper. Cook, stirring occasionally, until softened, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Add tomatoes (if using canned, break them up) and cook until they break down, 6 to 8 minutes.
  • Place lamb shanks in pot in a single layer so each shank is covered by sauce. Bring to a boil, cover, then place pot in oven. Cook until meat is very tender and falling off bones, about 3 1/2 hours. Skim fat from cooking liquid and season lamb with salt and pepper. Serve lamb with sauce.

4 (12 ounce) lamb shanks, trimmed
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
4 garlic cloves, minced
3/4 cup dry red wine
2 (14 1/2 ounce) cans diced tomatoes with basil oregano and garlic
1/4 cup fresh parsley, chopped

Steps:

  • Heat a large Dutch oven over medium-high heat. Coat the pan with cooking spray. Sprinkle the lamb with salt and pepper. Add lamb to the pan; cook 4 minutes on each side or until browned. Remove from the pan.
  • Add garlic to the pan; saute 15 seconds. Add the wine to the pan; cook 2 minutes, scraping the pan to loosen browned bits. Stir in tomatoes; cook 2 minutes. Return the lamb to the pan. Cover the pan, reduce heat, and simmer for 1 hour. Turn the lamb over; simmer 1 hour or until the meat is done and very tender.
  • Place the lamb on a plate; cover loosely with foil. Skim the fat from the surface of the sauce. Bring to a boil; cook 10 minutes or until thickened.
  • Return the lamb to the pan; cook 4 minutes or until the lamb is thoroughly heated. Stir in chopped parsley.

RED WINE BRAISED LAMB SHANKS

An easy lamb shank recipe that slow cooks lamb shanks in a red wine and tomato sauce.

3 lamb shanks (2.5 lbs)
2 tsp salt
1 1/2 tsp pepper
3 Tablespoons olive oil
1 cup chopped onion (1 medium onion)
1 cup carrot (2 medium-large carrots)
1 cup celery (2 stalks celery)
5 cloves minced garlic
3 cups red wine
3 cups chicken broth
4 bay leaves
7 stems fresh thyme
2 stems fresh rosemary
28 oz crushed tomatoes
2 Tablespoons tomato paste

Steps:

  • Season the lamb shanks with the salt and pepper. In a large dutch oven, or other heavy bottomed pot, over medium high heat, add 3 Tablespoons olive oil. Brown the shanks by cooking them on one side for 7 min, flipping and cook for them another 7 min on the other side.
  • Remove the lamb shanks from pot and set them aside.
  • Add the carrots, onions, celery to the pot you just browned the lamb in. Cook for 6 minutes, stirring frequently to break up any pieces remaining of lamb from the browning and so that the vegetables do not stick. Add the garlic and cook for another 2 minutes.
  • Add the red wine and broth, bay leaves, thyme, rosemary, tomatoes, tomato paste, stir to combine into the pot. Carefully lower shanks back into pot. The liquid should either cover the shanks entirely or cover them almost entirely. If you need more liquid, add equal parts chicken broth and red wine until they are covered.
  • Bring everything to a boil, reduce the heat to a simmer, cover, and simmer for 2.5 hours. To cook in the oven, cover the pot and bake at 350 F for 2.5 hours.
  • After cooking, remove shanks from pot. Strain the vegetables out of the sauce, discard the vegetabls, and return the sauce to pan. Crank the heat back up to medium high and cook uncovered to reduce the red wine sauce until it thickens to your liking, stirring occasionally. For me this was about 30 minutes but I'd start checking around 15 minutes.
  • Serve over mashed potatoes, rice, or pasta, with a generous helping of sauce poured over.

3 kg lamb shanks, french cut (about 8 of them)
2 tablespoons olive oil
50 g butter
6 garlic cloves, sliced
1/4 cup plain flour
2 cups beef stock
1/2 cup red wine
1 (425 g) can tomato puree or 1 (425 g) can chopped tomatoes, and puree yourself
1 bunch green onion (scallions spring onions)
1 cup shredded fresh basil
3 medium tomatoes, peeled and chopped

Steps:

  • Heat the oil in a pan and cook the shanks in batches until browned; transfer to a baking dish.
  • Heat the butter in a pan and add the garlic and flour, cook stirring until the flour is lightly browned.
  • Remove from the heat and gradually stir in the stock, wine and tomato puree, simmer uncovered for about 20 minutes until the sauce is slightly thickened.
  • Pour the sauce over the shanks and bake covered in a moderately slow oven for 1-1/2 hours at 160dC 325D F.
  • Add the onion, basil and tomatoes and bake covered for about a further 20 minutes or until the mixture boils.

6 lamb shanks
2 onions, finely chopped
4 carrots, finely chopped
4 garlic cloves, finely sliced
2 tins, chopped tomatoes
1 tin tomato puree
750dl / 3 cups lamb stock
3tsp sugar
½ tsp dried mint
1tsp dried parsley
salt & pepper to taste
500g / 3-4 cups polenta, cooked according to package instructions
2tbsn butter/margarine
handful of parmesan/ pecorino

Steps:

  • preheat the oven to 200°c.
  • In a large casserole pot/ dutch oven, brown the shanks in a bit of oil. Remove from pot and set aside.
  • In the same pot, add a bit more oil and fry the onions and carrots until the onions are soft and translucent. Add the garlic and sautè for another minute.
  • Add the chopped tomatoes, tomato puree and lamb shanks back into the pot.
  • Combine the lamb stock with the sugar and herbs and pour into the pot.
  • Cover and place into a pre-heated oven.
  • Allow the lamb shanks to braise for an hour at 200°c then turn the oven down to 160°c and allow to braise for another hour or two until the meat comes off the bone easily.
  • Stir the butter and cheese into the polenta (this is optional) and serve with the lamb shanks.
