Steps:
- Thaw the pastry sheet at room temperature for 40 minutes or until it's easy to handle. Stir the lamb, green onions, mint and garlic in a medium bowl. Season with the black pepper.
- Unfold the pastry sheet on a lightly floured surface. Roll the pastry sheet into a 12 x 10-inch rectangle. Cut the rectangle crosswise into 3 (10 x 4-inch) strips. Brush the pastry strips with the egg.
- Spoon 1/3 of the lamb mixture lengthwise down the center of each pastry strip. Fold the long sides of each pastry over the filling, overlapping slightly, and press to seal. Place the pastry rolls seam-side down on a baking sheet. Cover and refrigerate for 30 minutes or until the pastry rolls are firm.
- Heat the oven to 425 degrees F. Line a baking sheet with parchment paper. Cut each pastry roll crosswise into 8 pieces. Place the pieces onto the prepared baking sheet. Brush the pieces with the egg.
- Bake for 20 minutes or until the pastries are golden. Serve with the yogurt for dipping.
LAMB SAUSAGE IN PUFF PASTRY

Steps:
- Preheat the oven to 400 degrees F.
- Bake the sausage on a baking sheet for 20 minutes. Turn the sausage and bake it 5 to 10 minutes more, until it's fully cooked. Cool to room temperature.
- Unfold the puff pastry on a lightly floured board. Cut each piece in half lengthwise and brush the top sides with mustard. Divide the sausage into 4 equal pieces. Starting at the long end of the pastry, place 1 piece of the sausage on top of the mustard and roll it up tightly, overlapping the end by 1/2 inch and sealing the pastry by brushing the edge with water. Cut off the excess pastry. Roll the other 3 pieces of sausage in puff pastry. Place the 4 rolls, seam side down, on a baking sheet lined with parchment paper. Brush with the egg wash. Lightly score each roll diagonally to make 7 equal pieces. Bake for 20 to 25 minutes, until browned. Slice and serve immediately with mustard.

- Prosciutto and Parmesan Pinwheels. Some reviewers preferred these savory bites with honey mustard instead of Dijon. Feel free to customize them any way you want by changing out the meats and cheeses to create new flavor combos.
- Crispy Cheese Twists. These are the super-crispy, crunchy twisty snacks you sneaked from your parents' cocktail parties. To guarantee non-stick baking, line your baking sheet with parchment paper.
- Pistachio Twists. This pastry twist is studded with pistachios instead of cheese. ALH went a step further and brushed the twists with melted butter and honey just before they came out of the oven.
- Raspberry Walnut Baked Brie. If you have a little more time to play around with this, you can make individual Brie cups instead of one big Brie, the way Erica did.
- Feta Cheese Foldovers. Home cook Mallinda says: "This is an appetizer that looks more difficult to make than it is. It's really very easy to put together and the pastries have a nice taste."

- Place the lamb, shallots, garlic, mint, parsley, salt, pepper, cumin and coriander in a bowl. Combine thoroughly - using your hands works the best.
- Unfold the pastry sheet onto a lightly floured flat surface and roll out gently to smooth the creases and stretch the sheet to a 10 x 12-inch rectangle. Slice the pastry into 3 strips (10 x 4-inch) and brush with beaten egg.
- Place 1/3 of the lamb mixture lengthwise down the middle of each strip of pastry. Fold the long side of the pastry over the filling as tightly as possible and press to seal. Place each roll, seam side down on a piece of plastic wrap. Wrap tightly and refrigerate for at least 1 hour.
- Preheat the oven to 425°F and line a baking sheet with parchment. Unwrap the pastry rolls and, using a sharp knife, slice them into 8 pieces each. Arrange in a single layer on the prepared baking sheet and brush each piece with beaten egg. Bake for 20 minutes, or until golden brown.
