MOROCCAN LAMB MEATBALLS WITH HARISSA & COUSCOUS



Moroccan lamb meatballs with harissa & couscous image

All the flavours of a tagine in meatball form, with the kick of homemade harissa and a cooling dollop of yogurt

2 tsp cumin seeds
2 tbsp coriander seed
50g breadcrumbs
1 garlic clove , crushed
500g lamb mince
juice 1 lemon
1 egg , lightly beaten
20g pack mint , most leaves chopped
2-3 tbsp sunflower oil
150ml natural yogurt , to serve
300g couscous
50g butter
2 tbsp harissa - shop-bought or see below, to serve

Steps:

  • Heat a heavy-based pan over a low heat. Add the spices to the pan then toast for 2-3 mins until fragrant. Crush using a pestle and mortar. Set aside.
  • Mix the breadcrumbs with 2 tbsp water and the garlic and stir well. Add the lamb, lemon juice, crushed spices, egg most of the mint. Season well. Mix well then shape into 16 balls. Chill for a good 30 mins.
  • Heat the oil in a frying pan. Fry the balls for 6-7 mins, turning now and then, until golden brown and cooked. Keep warm. Put the couscous in a large heatproof bowl, then rub in the butter and harissa. Pour over 400ml boiling water, cover and leave for 10 mins. Fluff up and season. Shred the remaining mint, then mix through. Serve with harissa and yogurt.

Lamb meatballs combined with this savory mint yogurt sauce makes up the perfect summer meal. Grill these with our roasted garlic olive oil and enjoy a delicious dinner.

Meatballs:
1 small onion
3 cloves garlic, roughly chopped
3 tbsp roughly chopped Colavita Sun-dried Tomatoes
2 tbsp finely chopped parsley
2 tbsp finely chopped cilantro
1 tsp ground cumin
1/2 tsp ground coriander
zest of 1 orange
1 1/2 lbs ground lamb
1 large egg + 1 yolk
1/2 cup breadcrumbs
1 tsp kosher salt
1/2 tsp freshly ground black pepper
Colavita Natural Roasted Garlic Cooking Oil Blend for brushing
Yogurt Sauce:
1 cup whole milk strained yogurt
3 tbsp finely chopped mint
1-2 tbsp fresh lime juice
1 tsp ground cumin
1/2 tsp kosher salt
1/4 tsp freshly ground black pepper

Steps:

  • Yogurt Sauce:
  • In a small bowl combine the yogurt, mint, 2 tablespoons lime juice, cumin salt and pepper. Taste adjust seasoning and add more lime juice if desired. Set aside.
  • Meatballs:
  • Add the onion, garlic, sundried tomatoes, parsley, cilantro, cumin, coriander and orange zest to the bowl of a food processor. Pulse until the mixture breaks down and is fully combined. Add the lamb, eggs, bread crumbs, salt and pepper and pulse until all ingredients are fully incorporated. To test the mixture for seasoning, heat a teaspoon of oil in a small sauté pan and cook a teaspoon of the mixture. Taste and adjust seasoning if desired. Form the mixture into 1 1/2" balls and place on a baking sheet until ready to cook.
  • Preheat a grill to medium-high heat. Brush the meatballs with the Garlic Cooking Oil and in batches, place them on the grill. Grill for a total of about 8-10 minutes, turning them every couple of minutes to grill all sides.
  • Serve with the minted yogurt sauce and if you like, brush pita bread with Colavita Natural Roasted Garlic Cooking Oil Blend and grill for 2 minutes on each side.

Lamb Meatballs
1 pound ground lamb
3 tablespoons red onion, finely chopped
1 small garlic clove, minced or crushed in a garlic press
1 egg, slightly beaten
2 tablespoons breadcrumbs
1 teaspoon cumin
1 tablespoon mayonnaise
1 cup fresh mint (loosely packed and finely chopped)
3/4 teaspoon kosher salt
2 tablespoons canola oil
1 fresh lemon for squeezing and garnish, cut into quarters
Optional: 1/8 teaspoon cayenne pepper
Tzatziki Sauce
1 large cucumber
1 tablespoon extra-virgin olive oil
1 tablespoon lemon juice
1 teaspoon lemon zest
1 teaspoon kosher salt
1 tablespoon fresh mint, finely chopped
1/4 cup fresh dill, finely chopped
2 cups Greek yogurt

Steps:

  • In the bowl with the lamb, add red onion, garlic, egg, bread crumbs, cumin, mayonnaise, fresh mint, and salt. Using your hands, mix thoroughly to distribute the ingredients evenly. With a teaspoon, form the mixture into 24 meatballs. Don't level the meat off or pack the meatballs too tightly.
  • Preheat the broiler.
  • Lightly spread canola oil on a baking sheet using a paper towel. Place the meatballs two inches apart on the baking sheet, and position the baking sheet 4 inches from the heat source.
  • Broil for about 5 minutes, turning once halfway through.
  • Arrange the meatballs on a serving platter, and squeeze fresh lemon juice over the top. Sprinkle the cayenne pepper over the meatballs at the last minute. Serve at once with tzatziki.
  • Place cucumber, olive oil, lemon juice, lemon zest, salt, mint, and dill in a bowl and mix well. Add the Greek yogurt and mix well.
  • Cover with plastic wrap or place in an airtight container, and chill in the refrigerator for at least 2 to 3 hours before serving.

1/2 cup breadcrumbs
1/4 cup milk
1 lb ground lamb
1 cup blanched almond, toasted and ground
1/3 cup chopped onion
1/3 cup raisins, coarsely chopped
1 egg, lightly beaten
3 garlic cloves, minced
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh cilantro
1 tablespoon chopped of fresh mint
1/4 teaspoon chili pepper flakes
salt & freshly ground black pepper
2 tablespoons olive oil, plus more
olive oil, for drizzling
1 teaspoon chopped parsley
1 cup yogurt
1 cup cucumber, peeled, seeded and coarsely grated
1/4 cup mint, minced
3 tablespoons lemon zest, minced
kosher salt & freshly ground black pepper

Steps:

  • In a small bowl, soak bread crumbs in milk. In a medium bowl, combine the lamb, almonds, soaked bread crumbs, onion, raisins, egg, garlic, parsley, cilantro, and chili pepper flakes. Season lightly with salt and pepper.
  • Drizzle olive oil onto a sheet pan you will place the meatballs on and rub oil into the palm of both hands.
  • Form meat mixture into meatballs 1/2-inch in diameter. The recipe makes about 30 golf ball-sized meatballs.
  • Heat oven to 400, place meatballs on a baking sheet and cook about 12 minutes until heated through.
  • Yogurt sauce:.
  • Place the yogurt in a sieve lined with cheesecloth. Allow to drain at least two hours to overnight.
  • Toss the cucumber in 2 teaspoons salt and place in a sieve to drain for at least two hours.
  • Combine in a medium bowl, the yogurt, cucumber, mint, and the preserved lemon. Season with salt and pepper.
  • Serve warm over couscous and drizzled with yogurt sauce and, parsley and sesame seeds.

6 shallots, minced to yield about 3/4 cup
4 cloves garlic, minced
1/4 cup chopped fresh rosemary
2 tablespoons sugar
2 tablespoons cracked coriander seeds
1 1/2 tablespoons salt
1 tablespoon red chile flakes
1 (6 pound) bone-in leg of lamb
2 cups vegetable or chicken stock
Tzatziki Sauce, recipe follows
2 cups plain yogurt
Juice of 2 lemons
1 cucumber, peeled and diced
3 tablespoons chopped fresh mint
1 tablespoon minced garlic
1 tablespoon minced shallots

Steps:

  • In a large bowl, mix together the shallots, garlic, rosemary, sugar, coriander, salt, and chile flakes. Rub the mixture on the surface of the lamb. Set the lamb in a large glass baking dish; cover with plastic wrap and refrigerate overnight.
  • Preheat the oven to 375 degrees F.
  • Rinse the lamb and pat it dry. Heat a roasting pan or large ovenproof skillet over medium heat. Brown the lamb on both sides.
  • Set the lamb on a roasting rack in the pan and roast, fat side up, until it reaches an internal temperature of 140 degrees F, about 1 1/2 hours. Transfer to a platter. Set the pan over medium heat and add the stock, scraping the pan drippings to dissolve them in the broth. Simmer until reduced by half.
  • Serve the lamb with the reduced pan sauce, Tzatziki Sauce, and grilled vegetables such as eggplant, zucchini, and yellow squash tossed with red wine vinegar and olive oil.
  • Stir together all the ingredients in a medium bowl until thoroughly combined.

1/4 teaspoon cinnamon
1/4 teaspoon fresh ground black pepper
7 ounces whole-milk Greek yogurt (Fage brand, if available)
2 teaspoons finely chopped fresh cilantro
2 teaspoons finely chopped of fresh mint
1 teaspoon ground cumin
1 medium lemon, zest of, minced

Steps:

  • Heat the oven to 375°F and arrange a rack in the middle.
  • Combine all meatball ingredients in a large bowl and mix thoroughly with your hands.
  • Form into 30 balls (about 2 teaspoons each) and place on a baking sheet.
  • Bake until meatballs are no longer pink in the middle, about 15 minutes.
  • Meanwhile, combine all yogurt ingredients in a small bowl and season with salt and freshly ground black pepper. Mix well.
  • Serve with the meatballs.
  • NOTE: The meatballs can be formed up to 24 hours ahead and refrigerated; they'll just need an additional 3 to 5 minutes in the oven to cook through.
  • The yogurt dip can be made 1 day ahead, covered tightly, and refrigerated.
