This is the first time I tried leg steaks. I found them to be a delicious and very tender cut of lamb. This is how I was told to prepare them by my mother. Mmmmm very good.

4 bone-in lamb steaks
¼ cup olive oil
4 large cloves garlic, minced
1 tablespoon chopped fresh rosemary
salt and ground black pepper to taste

Steps:

  • Place lamb steaks in a single layer in a shallow dish. Cover with olive oil, garlic, rosemary, salt, and pepper. Flip steaks to coat both sides. Let sit until steaks absorb flavors, about 30 minutes.
  • Preheat an outdoor grill for high heat and lightly oil the grate. Cook steaks until browned on the outside and slightly pink in the center, about 5 minutes per side for medium. An instant-read thermometer inserted into the center should read at least 140 degrees F (60 degrees C).

Using vinaigrette as a sauce for grilled meats is one of my favorite 'cheats' of all time. They take minutes to whisk together, there's absolutely no culinary finesse required, and the combinations of oils, vinegar, and flavorings are limitless. How about balsamic vinaigrette on some grilled skirt steak? Maybe mustard dressing on some pork chops? How could grilled chicken drizzled with Greek dressing and feta cheese not be awesome?

1 bunch fresh tarragon leaves, torn
½ bunch fresh mint leaves, torn
2 tablespoons plain yogurt
1 tablespoon olive oil
4 cloves garlic, chopped
1 teaspoon ground cumin
1 teaspoon freshly ground black pepper
4 center-cut lamb leg steaks, 1 1/2-inch thick
¼ cup olive oil
3 tablespoons sherry vinegar
2 tablespoons honey
salt and freshly ground black pepper to taste
2 tablespoons chopped fresh mint
1 tablespoon olive oil, or as needed
salt and ground black pepper to taste

Steps:

  • Whisk tarragon, 1/2 bunch mint, yogurt, 1 tablespoon olive oil, garlic, cumin, and 1 teaspoon black pepper together in a bowl; pour marinade into a resealable plastic bag. Add lamb steaks, coat with marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator, 8 hours to overnight.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Whisk 1/4 cup olive oil, sherry vinegar, honey, salt, and pepper together in a bowl. Add 2 tablespoons chopped mint and stir to combine vinaigrette.
  • Remove steaks from marinade and scrape off all herbs and garlic; discard marinade. Drizzle steaks with 1 tablespoon olive oil and season with salt and pepper.
  • Cook steaks on the preheated grill until browned on the outside and slightly pink in the center, about 6 minutes per side. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C). Transfer steaks to a plate, drizzle 1/2 of the vinaigrette over the steaks, cover the steaks with foil, and let rest for 10 minutes. Transfer steaks to individual plates and drizzle remaining vinaigrette over each.

2 thick leg of lamb steaks, boneless (8-10 oz each) or bone-in (about 14-16 oz each)
1/2 tbsp vegetable oil
salt and pepper to taste for seasoning
1 cup cup sweet/balanced dark ale with mild roasty character such as porter
2 tbsp vegetable oil
1 star anise
1 tsp yellow curry
1 tsp cumin
1 tsp garlic powder
1/2 tsp cinnamon
1 tsp salt
1/2 tsp pepper

Steps:

  • In a bowl mix all the ingredients except for the ale. Slowly add the ale and whisk until smooth.
  • Cover the lamb steaks with marinade. Use an airtight container or plastic bag. Refrigerate for 3-4 hours. Use any marinade you'd like.*
  • Heat an outdoor grill to high (or a grilling skillet or cast iron skillet over medium-high heat). Lightly oil the grate or the surface of the pan.
  • Remove the lamb steaks from the marinade and discard it. Pat them dry and season each side with salt and pepper.
  • Place on the grill surface (or grilling pan or skillet) and cook each side for 4 minutes for medium-rare (125-130 F) and 5 minutes for medium (135 F).
  • Remove from the heat and let rest (you may cover them loosely with foil) for 5 minutes before serving.

6 lamb steaks, about 2/3-inch thick
2 large garlic cloves, peeled and chopped
1/2 tablespoon dried rosemary (or 1 tablespoon fresh)
1/2 cup olive oil
Salt and pepper to taste

Steps:

  • Ask your butcher to cut lamb steaks from a leg of lamb. Many butchers don't sell pre-cut lamb steaks. However, your butcher will be happy to cut them for you from a whole leg of lamb. One leg of lamb will typically yield six steaks, each large enough for one serving size. Ask for steaks cut about 2/3-inch thick. This allows for a quick cooking time and tender results. If your butcher doesn't have a leg of lamb, this method can also be used to cook lamb chops.
  • Mix your marinade. Peel and chop the garlic into fine pieces. Mix the garlic, rosemary, olive oil, and a pinch of salt and pepper in a shallow baking dish or another nonreactive dish. This marinade will penetrate the steaks for a tender result. If you're in the mood for a different flavor combination, try one of these: Yogurt mint marinade: mix 1/2 cup whole milk yogurt, 2 cloves minced garlic, 2 tablespoons olive oil, 1/4 cup chopped mint, and salt and pepper to taste. Tandoori-spiced marinade: mix 1/2 cup whole milk yogurt, 1/4 cup lime juice, 2 minced garlic cloves, 1 teaspoon minced ginger, 1 teaspoon sweet paprika, 1 teaspoon coriander, 1 teaspoon cumin,1 teaspoon turmeric, 1/2 teaspoon dry mustard, 1/2 teaspoon cayenne pepper, 1/4 teaspoon cinnamon and 1 teaspoon salt. Barbecue marinade: Mix 1/2 cup soy sauce, 1/4 cup malt vinegar, 1/4 cup olive oil, 1/2 cup brown sugar, 2 tablespoons tomato sauce and 1/2 teaspoon salt. Mustard marinade: Mix 1/4 cup olive oil, 1/4 cup lemon juice, 2 cloves minced garlic, 1 tablespoon soy sauce, 2 tablespoons Dijon mustard, and salt and pepper to taste.
  • Lay the steaks in the marinade. Make sure the steaks get completely coated with the mixture on all sides. Add extra olive oil if necessary. When you're finished, cover the dish with plastic wrap.
  • Refrigerate for at least eight hours. You can start the recipe in the morning and refrigerate during the day, or do it the night before and let the steaks marinate overnight. Turn the steaks halfway through to make sure both sides get completely marinated.

Pan seared lamb steaks - gluten free so delicious

4 lamb leg steaks (washed and dried)
Cooked quinoa and mixed salad (For serving)
1 1/2 cups of warm water plus 1/2 tbsp of tapioca starch
3 scallion (chopped)
1 small onion (chopped)
2 sweet pink lady apples
2 tbsp coconut sugar
2 tbsp of water
1 tbsp of dairy free butter
3 garlic cloves
1 tsp himalayan pink salt
1 inch of fresh ginger (peeled)
1 bay leaf
6 sprigs of thyme
1/2 tsp of sage
1/2 tsp of marjoram
2 tbsp of coconut aminos
2 tbsp of coconut oil (melted)

Steps:

  • Place the pink salt, garlic, ginger, bay leaf, sage, marjoram, coconut aminos and coconut oil in a coffee grinder or food processor.
  • Pick the leave off 4 sprigs of thyme and add with the rest of the ingredients. Discard the stem and put the remaining 2 sprigs to the side.
  • Pulse the ingredients into a wet rub. Scoop out and proceed to massage the rub into the steak so it is completely coated.
  • Allow the meat to marinate overnight or 1-2 hours if your prefer to hasten the preparation.
  • On medium heat, melt an additional 2 tbsp of coconut oil in a large frying pan or skillet.
  • Sautee the scallion and onions until translucent and soft
  • Scrap off the rub from the steak (Reserve the excess rub) and pan sear each side of the meat until a crust is formed. This should take 3-4 minutes per side.
  • Once the meat is seared, stir in the tapioca starch into the 1 1/2 cup of warm water with the excess rub and pour it onto the pan.
  • Increase the heat to high to a rolling boil before reducing to low.
  • Add the additional sprigs of thyme to the pan, cover the pan and simmer for 20-25minutes.
  • During this time the sauce til begin to thicken, check periodically to ensure the liquid doesn't recede too quickly. You should be left with enough sauce to cover the meat with.
  • As the meat simmers away, prepare the topping by peeling and cutting the apples into small cubes. If the apples are turning brown during this process then simply let the chopped apples sit in salt water (drain off afterwards).
  • Once the apples are chopped, on low/medium heat, melt the dairy free butter in a small pan then add the coconut sugar to the pan and swirl in the butter to create a dark liquid sugar.
  • Add the apple pieces to the pan and coat so each side is exposed to the liquid sugar. Continue to stir and turn the apple until they darken.
  • Pour in the 2 tbsp of water then cover the pan and leave to steam for 5 minutes. Keep an eye on the pan so the apples don't burn. Replenish with a splash of water if needed during this time.
  • Serve the lamb steak with quinoa (or sweet potatoes if paleo) and salad

275g (10oz) new potatoes, thickly sliced
1tbsp oil
4 lamb leg steaks
1 red onion, chopped
2 garlic cloves, crushed
450ml (3/4pt) lamb stock
1tbsp) Worcestershire sauce
2tsp dried mixed herbs
10 cherry tomatoes, halved
Fresh oregano or thyme leaves to garnish

Steps:

  • Preheat the oven to 190°C/375°F/gas 5. Parboil the potatoes in lightly salted water for 2-3 mins. Drain well.
  • Heat the oil in a large frying pan and fry the lamb steaks over a high heat for 1-2 mins on each side until browned. Transfer to a shallow ovenproof dish.
  • Add the onion and garlic to the pan and fry for 5 mins. Stir in the stock and Worcestershire sauce and bring to the boil. Pour over the lamb steaks and add the potatoes. Sprinkle with dried herbs, season with salt and freshly ground black pepper, and cook for 30 mins.
  • Add the cherry tomatoes and return to the oven for a further 10-15 mins. Served garnished with fresh oregano or thyme leaves.
