LIZZY217'S LAMB GYROS

LIZZY217's Lamb Gyros image

This is my take on the Greek gyros sandwiches you can find at many counter-service restaurants.

Provided by LIZZY217

Categories     World Cuisine Recipes     European     Greek

Time 13h40m

Yield 4

Number Of Ingredients 23

¼ cup vegetable oil
2 tablespoons lemon juice
2 tablespoons brandy
1 clove garlic, crushed
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon dried marjoram
⅛ teaspoon ground dried thyme
⅛ teaspoon ground dried rosemary
⅛ teaspoon dried oregano
1 pound boneless lamb shoulder, cut into 1-inch cubes
1 cup plain yogurt
½ cucumber, shredded
1 clove garlic, minced
1 tablespoon lemon juice
1 teaspoon salt
¼ teaspoon ground black pepper
(10 inch) bamboo skewers, soaked in water for 20 minutes
8 pocket bread rounds
1 tomato, sliced
½ red onion, thinly sliced
1 cup shredded lettuce
½ cup crumbled feta cheese

Steps:

  • Whisk together the vegetable oil, 2 tablespoons lemon juice, brandy, crushed garlic, 1 teaspoon salt, 1/2 teaspoon black pepper, marjoram, thyme, rosemary, and oregano in a bowl, and pour into a resealable plastic bag. Add the cubed lamb, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator 12 to 24 hours.
  • Once the meat has finished marinating, remove from the refrigerator, and allow to stand at room temperature for 1 hour. While the meat is warming up, prepare the tzatziki sauce by whisking together the yogurt and cucumber in a mixing bowl along with 1 clove of minced garlic, 1 tablespoon lemon juice, 1 teaspoon salt, and 1/4 teaspoon pepper. Wrap the sauce with plastic wrap, and refrigerate until ready to use.
  • Preheat the oven's broiler and set the oven rack about 4 inches from the heat source. Remove the lamb cubes from the marinade, and squeeze off excess. Discard the remaining marinade. Spray a broiling pan with cooking spray, thread the meat onto the skewers, and place the skewers onto the prepared pan.
  • Broil under the preheated broiler to your desired degree of doneness, turning every few minutes so the meat cooks evenly. It should take about 10 minutes to cook the meat to medium-well.
  • To assemble the sandwiches, cook each pocket bread in a microwave on high until hot, 20 to 30 seconds each. Split each piece in half, and open up the pockets. Divide the tomato and onion slices among the pocket bread halves. Stuff with shredded lettuce, then fill with the broiled lamb. Sprinkle with crumbled feta cheese, and top with the tzatziki sauce to serve.

GYRO-STYLE LAMB BURGERS WITH TZATZIKI AND GRILLED ONIONS

Gyro-Style Lamb Burgers with Tzatziki and Grilled Onions image

Provided by Michael Symon : Food Network

Categories     main-dish

Time 20m

Yield 4 servings

Number Of Ingredients 16

1 1/2 pounds ground lamb
2 teaspoons ground coriander
3 tablespoons finely chopped fresh mint
Kosher salt and freshly ground black pepper
Olive oil, for the skillets
1 large red onion, peeled and sliced into 4 thick slices
8 ounces Greek yogurt
1 clove garlic, minced
Zest of 1/2 lemon
1/4 cup minced cucumber
1 1/2 tablespoons finely chopped fresh dill
1 tablespoon finely chopped fresh mint
Kosher salt and freshly ground black pepper
4 small soft pitas, toasted if desired
Chopped tomato, for serving
Chopped romaine lettuce, for serving

Steps:

  • Prepare a grill for medium-high heat. If using a charcoal grill, build the hot coals evenly over the bottom. Heat 2 flat cast-iron skillets over direct heat.
  • For the burgers and onions: Combine the lamb, coriander and mint in a large bowl. Form the meat mixture into 4 equal thin half-moon shaped patties. Season the patties with salt and pepper on both sides. Add a splash of oil to the cast-irons. Cook the patties 3 to 5 minutes, allowing the meat to get a nice crust. Flip and cook for an additional 2 to 3 minutes. Remove the burgers from the heat and let rest 2 to 3 minutes before assembling the burgers.
  • Meanwhile, drizzle the onions with oil and season with salt and pepper. Grill, flipping once, until softened and charred, about 5 minutes.
  • For the tzatziki: Add the yogurt, garlic, lemon zest, cucumber, dill and mint to a large bowl and mix to combine. Season with salt and pepper.
  • To serve: Spread some tzatziki over each pita, add a patty to one half of each pita, top with some grilled onion and add some chopped tomato and lettuce. Fold the other half of each pita over. Serve!

  • Divide ground lamb equally into 4 portions weighing roughly 5 ½ ounces each. To make slider-sized patties, weigh each to 3 ½ ounces each. Flatten into uniform rounds, then use your thumb or finger to make a small indentation right on top in the center of each patty (see note below).
  • Combine all sauce ingredients in a large bowl, then whisk to combine. Refrigerate until needed.
  • Preheat a grill, cast iron skillet, or griddle over medium-high heat. Coat with nonstick oil spray (if grilling) or a couple tablespoons olive oil (if cooking indoors). Cook each burger patty for 5 minutes per side, or until an internal temperature of 150 F is reached (for medium). Allow burgers to rest 2-3 minutes before serving on buns with herbed yogurt sauce and additional toppings.

  • You know when you hear chefs talking about “mise en place,” or the process of prepping all your ingredients? Well, that’s what you’re about to do. Cut 1 lemon into wedges and slice off white strip at the point of each wedge, also cutting out seeds (discard white part and seeds). Set wedges aside. Separate leaves of 1 romaine heart and wash/dry if necessary. Tear any large leaves into pieces. Strip oregano leaves from stems; discard stems. Set aside 1 Tbsp. oregano leaves. Finely chop the rest and transfer to a large bowl. Cut 1 cup cherry tomatoes in half.
  • Finely grate 2 garlic cloves into bowl with chopped oregano. Add 1 tsp. salt, several dashes of hot sauce, and 1 Tbsp. cold water.
  • Add 1 lb. lamb and use 1 clean hand to knead mixture, simultaneously rotating bowl with your other hand, to incorporate. Knead until a light film forms on side of bowl and mixture holds together in a single mass and is very firm (it will spring back when pressed), about 1 minute.
  • Heat 3 Tbsp. oil in a large skillet, preferably cast iron, over medium-high until oil is shimmering. Carefully add lamb mixture and press into a single flat layer with a flexible spatula (a fish spatula works great for this). → Real Talk: A fish spatula is the only spatula you need.

  • Prep. Prepare the tzatziki yogurt sauce according to the recipe found here. You can do this the night before and that will help pull flavor out of the herbs. Also thinly slice the onion.
  • Fire up. Prepare your grill for hot direct heat. If your gas grill has a sear burner or infrared burner, this is what it is for. The burgers can also be cooked easily on a hibachi.
  • Prep again. Form the meat into patties about 4 to 6 ounces each, 1/4 to 1/2" thick and shaped like a football so they will fit neatly into pita halves. Coat them with the oil, and then with the spices. That may seem like a lot of spices, but we want to form a nice crust.
  • Cook. Put the burgers on the grill, close the lid, and stand there. Sing Mary Had a Little Lamb four times or about four minutes, then check the underside. You want it dark, but not black. Cook the burger until it hits a safe temp of 160°F. Toss the pitas on the grill for 30 to 60 seconds on each side, enough to warm them.
